PEANUT BUTTER AND JELLY TART

The classic nutty-sweet combo of peanut butter and jelly has escaped the confines of the sandwich and landed in a tart. With the help of a skewer, it becomes artfully (yet easily) swirled. It's versatile, too: Swap in almost any type of jelly -- we like raspberry and strawberry as much as the typical grape. Whatever you choose, it's a nostalgic treat for all ages.

Peanut Butter and Jelly Tart image

Steps:

  • Preheat oven to 350 degrees. Pulse butter, sugar, and salt in a food processor until smooth, scraping bowl down once. Add flour and pulse just until mixture forms large clumps. Turn out onto very lightly floured parchment. Knead once or twice, then shape into a flat rectangle.
  • Lay a sheet of plastic wrap on top of dough and roll out to a 13-by-6-inch rectangle. Transfer to a baking sheet. Fold edges in to create a 1/2-inch border; crimp so border is raised slightly less than 1/2 inch (final size of dough should be 12 by 5 inches). Prick all over with a fork. Freeze 20 minutes.
  • Bake crust 15 minutes. Remove from oven; flatten center with the bottom of a measuring cup. Bake until pale golden, about 12 minutes more.
  • Remove crust from oven and spread with peanut butter. Drizzle with jelly, then swirl it with a skewer. Bake until jelly just begins to bubble, 6 to 7 minutes. Let cool on a wire rack 15 minutes. Cut into wedges; let cool completely.

Steps:

  • 1. For the crust, chop peanuts in food processor and reserve 1/4 cup for garnish. Add brown sugar and flour to food processor and process in long bursts.
  • 2. Place mixture in a large bowl. Stir in graham cracker crumbs, cinnamon, and salt. Add melted butter and incorporate well. Mix first with a fork, then with hands, rubbing everything together completely to form evenly dampened crumbs (if necessary, add 1 tsp. water to the mixture to assist in pressing the crust into place).
  • 3. Spread the crumb mixture evenly and loosely into a lightly buttered 9-1/2-inch tart pan with a removable bottom. Press the crust into the bottom and up the sides. Refrigerate crust for 10 to 15 minutes.
  • 4. Place crust on center oven rack in a preheated 350-degree oven and bake for 7 to 10 minutes, until lightly browned. Let cool on wire rack.
  • 5. For the ganache, in a small saucepan, bring heavy cream, butter, corn syrup and salt to a simmer, making sure butter is completely melted.
  • 6. Place chocolate in a heat-proof mixing bowl and pour hot cream mixture over chocolate. Allow it to sit, untouched, for about 5 minutes. Add vanilla, and whisk until ganache is smooth.
  • 7. Immediately pour ganache into cooled graham cracker crust, carefully tilting crust to coat the bottom and sides evenly.
  • 8. Cool to room temperature; refrigerate crust for at least an hour.
  • 9. For the peanut butter filling, combine cream cheese, peanut butter, sugar, milk, honey and salt with an electric mixer until well mixed.
  • 10. Spoon peanut butter filling over the ganache layer and smooth with an offset spatula; chill in refrigerator for at least 30 minutes.
  • 11. Spoon the jelly onto peanut butter layer and spread evenly (jelly may need to be warmed slightly in order to spread easily).
  • 12. Sprinkle tart with reserved chopped peanuts. If desired, garnish with fruit matching jelly used, such as raspberries or strawberries.
  • 13. Chill at least 1 hour. Carefully remove tart from pan before serving.

GRAHAM CRACKER CRUST:
1 c coarsely chopped dry-roasted peanuts
2 Tbsp firmly packed light brown sugar
2 Tbsp all purpose flour
1 c plus 2 tbsp. graham cracker crumbs
1/4 tsp ground cinnamon

1/4 c unsalted butter, melted
GANACHE:
1/2 c heavy whipping cream
2 Tbsp unsalted butter
1 Tbsp corn syrup
8 oz semisweet or bittersweet chocolate, finely chopped

8 oz cream cheese, room temperature
2/3 c chunky peanut butter (not the natural type)

  • For crust:
  • Preheat oven to 325°F. Butter 9-inch-diameter tart pan with removable bottom. Mix cookie crumbs and butter in medium bowl until moist clumps form. Press mixture onto bottom and up sides of prepared tart pan. Bake until set, about 10 minutes. Cool completely.
  • For filling:
  • Using electric mixer, beat cream cheese and peanut butter in large bowl until smooth. Using clean dry beaters, beat cream, powdered sugar, and vanilla to soft peaks in another large bowl. Whisk half of whipped cream mixture into peanut butter mixture. Fold in remaining whipped cream mixture. Transfer 3 tablespoons filling to small bowl and reserve. Spread remaining filling in crust.
  • Melt chocolate in top of double boiler set over simmering water. Whisk in reserved 3 tablespoons filling. Immediately transfer chocolate mixture to pastry bag fitted with 1/8-inch plain tip. Pipe chocolate mixture in spiral atop filling. Using small sharp knife, begin at center and draw tip of knife toward edge of tart. Move knife over 2 inches; begin at edge and draw tip of knife toward center. Repeat to form web pattern. Chill until cold. (Can be made 2 days ahead. Keep chilled.) Cut tart into wedges and serve cold.

Steps:

  • Make tart shell:
  • Put oven rack in middle position and preheat oven to 350°F. Blend graham crackers, peanuts, and allspice in a food processor until nuts are coarsely ground. Transfer to a bowl, then add butter, stirring until crumbs are thoroughly moistened. Firmly press crumbs evenly over bottom and up sides of tart pan.
  • Bake shell until firm, about 10 minutes. Cool completely in pan on a rack.
  • Make filling:
  • Beat together cream cheese, peanut butter, and butter in a bowl with an electric mixer at medium-high speed until fluffy, about 1 minute. Add brown sugar and beat until incorporated. Beat cream with vanilla in another bowl until it holds soft peaks, then fold into peanut butter mixture gently but thoroughly.
  • Assemble tart:
  • Spread 1/3 cup jam onto bottom of tart shell with offset spatula. Spread peanut butter mixture on top with cleaned offset spatula. Chill tart, loosely covered with plastic wrap, until firm, at least 3 hours.
  • Just before serving, stir grapes with remaining 1/2 cup jam with a rubber spatula until coated. Spoon over tart.

For tart shell
12 (5- by 3-inch) graham crackers, coarsely crumbled
1 cup salted roasted peanuts (2 1/2 oz)

We've taken everything we love about a bakewell tart and added an American twist with peanut butter and jam or 'jelly' as they call it stateside!

Steps:

  • First, make the pastry. Tip the flour, cocoa, butter and a pinch of salt into a food processor and blitz until the mixture resembles fine breadcrumbs. Add the egg yolk, icing sugar and 2 tbsp cold water and blitz again until just starting to clump together. Tip onto your work surface (don't worry about washing the bowl), knead briefly into a smooth ball of dough, then flatten into a thick disc shape, wrap in cling film and chill for 30 mins.
  • Add the remaining ingredients - except for the jam and the peanuts to serve - to the food processor and blitz until smooth and creamy. Heat the oven to 180C/160C fan/gas 4.
  • Remove the pastry from the fridge and roll out to the thickness of a £1 coin. Lift the pastry into a 22cm fluted tart tin and press it into the corners, taking care not to rip it. Trim the excess pastry with scissors, leaving an overhang of about 1cm. Line with baking parchment and baking beans, and bake for 15 mins.
  • Remove the parchment and beans and return to the oven for 5 mins more, until it looks biscuity. Remove from the oven and use a small serrated knife to trim the pastry to the height of the tin. Discard (or nibble on) the off-cuts.
  • Spoon the jam onto the base of the tart and spread to the edges. Top with the peanut mixture, spreading to the edges to cover the jam. Bake for 45 mins until the sponge is cooked and a skewer inserted into the centre comes out clean. Cool in the tin for 15 mins, then transfer to a wire rack to cool completely.
  • Mash the remaining icing sugar and jam together to make a smooth icing and drizzle on top. Roughly chop the remaining peanuts and scatter over. Will keep in an airtight container for three days.

Steps:

  • To make the crust: Lightly butter a 10-inch pie plate. On a lightly floured board, roll out the half of the pate brisee to a 1/8-inch thickness (unused dough can be wrapped and plastic and stored in the refrigerator or freezer). Place the dough in the pie plate, and press it into the bottom edges and along the sides. Trim the dough using scissors or a sharp paring knife. Crimp or decorate the edges of the crust if desired. Chill crust for 30 minutes.
  • Preheat the oven to 375 degrees. Carefully line the pie plate with parchment paper, gently pressing the parchment into the edges of the crust; weigh down parchment with dried beans or pie weights. Bake until edges of pastry begin to turn golden, about 15 minutes. Carefully remove pie weights and parchment paper. Continue to bake until crust is golden brown, 15 to 20 minutes more. Transfer the crust to a wire rack to cool completely.
  • To make the filling: Prepare an ice-water bath. In the top of a double boiler or in a heat-proof bowl set over simmering water, melt chocolate; set aside. Place 1/4 cup cold water in a small bowl, and sprinkle gelatin over it; set aside to soften.
  • In a medium bowl, whisk together 4 egg yolks, 1/4 cup sugar, and the cornstarch; set aside. In a medium saucepan, combine milk and 1/4 cup sugar. Bring just to a boil. Add about one-quarter of the hot-milk mixture to the egg mixture, whisking constantly, until combined. Return egg-milk mixture to saucepan, and bring to a boil. Remove from heat when mixture has boiled and thickened, 3 to 4 minutes.
  • Measure out 1 cup of custard, and transfer to a medium bowl. Add the melted chocolate and vanilla to it, stirring until the chocolate is melted. Transfer the bowl to the ice-water bath to cool completely. When cool, spread evenly in the bottom of the pie crust. Transfer pie crust to refrigerator until set, about 5 minutes. Add softened gelatin to remaining custard. Transfer pan to the ice-water bath to cool until just beginning to set.
  • In the bowl of an electric mixer fitted with the whisk attachment, beat egg whites with salt and cream of tartar until soft peaks form. With machine running, gradually add remaining 1/2 cup sugar, and beat until stiff glossy peaks form. Stir 1/3 of whipped egg whites into custard to lighten. Gently but thoroughly fold in remaining whites and rum. Spread over chocolate layer. Refrigerate pie for at least 3 hours and up to overnight.
  • Whip cream until stiff peaks form. Spread over custard or pipe on top with a pastry bag fitted with a star tip. Sprinkle chocolate shavings on top. Chill until ready to serve.
