BLUE RIBBON BURGERS
Steps:
- 1. Mix meat, worcestershire sauce and seasonings.
- 2. Shape the mixture into 12 thin patties, each about 4-inches in diameter.
- 3. Mix the cream cheese and the blue cheese.
- 4. Top each of 6 patties with the cheese mixture, spreading to within 1/2 inch of the edge; press the mushrooms into the cheese.
- 5. Cover each patty with one of the remaining patties, sealing the edges firmly.
- 6. Broil or grill the patties 4-inches from the heat, turning once, until the desired doneness is reached and cheese is melted, about 10 to 15 minutes.

BAKED TACO BURGERS SLIDERS
I grew up eating taco burgers at a local fast food restaurant. They no longer make the burger so I decided to make my own but wanted a smaller slider version. A "funeral sandwich" recipe was my inspiration in developing this slider.

Steps:
- In a Dutch oven boil ground beef, in enough water to cover, until no longer pink. Break beef up into very small pieces as it is cooking. Drain and discard water.
- Return ground beef to pan and add the diced onion, taco seasoning mix, and 2 c. water. Mix thoroughly then simmer until all liquid is absorbed.
- Grease a large cookie sheet. Split all the rolls in half and spread a thin layer of taco sauce on each half. Lay the bottom halves on the cookie sheet.
- Layer the tops of the bottom halves in the following order: 1 tablespoon of grated cheddar, 2 tablespoons of taco meat, 1 tablespoon of grated cheddar, top bun.
- Once all 24 rolls are assembled, brush the top of each roll with the melted butter.
- Cover the rolls with aluminum foil. Bake in 350 degree oven for 10 minutes. Remove the foil and bake another 10 minutes.
QUESADILLA BURGERS
The concept of using quesadillas as a bun is genius. They add a cheesy crunch to the delicious burger. The meat itself is moist and full of taco flavor. The fresh pico on top is a burst of flavor while the ooey gooey pepper jack cheese is perfection. These are definitely decadent... and delicious!

Steps:
- 1. Mix up all ingredients for Pico De Gallo and set aside.
- 2. Mix up all ingredients for burgers and set aside.
- 3. Butter one side of each tortilla. Place butter side down in a pan on low heat. Sprinkle a layer of the shredded cheese on the tortilla and the place another tortilla butter face up on top. Brown the tortilla and melt the cheese on one side, then flip and brown the other side (like a grilled cheese). Make 8 quesadillas.
- 4. Divide burger into 4 balls (1/2 pound burgers). Press out burgers about 6-7 inches to allow for shrinking and press a thumbprint into the center of the burger.
- 5. Fry or grill burgers to your desired temp.
- 6. Place 2 slices of pepper jack cheese on each burger and let melt. Place a heaping pile of Pico De Gallo on burger and place burgers in between quesadillas. Enjoy!

- Prepare the lettuce and tomato. If making the chipotle mayonnaise prepare it by mixing mayonnaise with chopped up chipotle peppers or letting the peppers sit in the mayonnaise. (It just depends how much chipotle flavor you want.) Refrigerate until you need it. Prepare the onionstrings ahead of time if making it homemade.
- Season each hamburger patty with Red Robin Seasoning or salt and pepper. Grill until cooked through or cook on stove top. Once cooked through baste with A-1 sauce. Add bleu cheese crumbles to the patty and continue to keep on heat for about 2 minutes or until the cheese is slightly melted. Toast the buns.
- To assemble: Spread chipotle mayonnaise on both sides of the buns. On the bottom bun place a handful of onion strings, burger patty (with the bleu cheese crumbles on top) tomato, lettuce and bun.
