OVER-THE-TOP BLUEBERRY BREAD PUDDING

This delicious southern blueberry bread pudding boasts out-of-this-world flavor and eye appeal. You just may want to skip the main course and go straight to dessert. It's a favorite for our summer celebrations. -Marilyn Haynes, Sylacauga, Alabama

Over-the-Top Blueberry Bread Pudding image

Steps:

  • Preheat oven to 350°. In a large bowl, combine eggs, cream, sugar and vanilla. Stir in blueberries and baking chips. Stir in bread cubes; let stand until bread is softened, about 15 minutes., Transfer to a greased 13x9-in. baking dish. Bake, uncovered, until a knife inserted in the center comes out clean, 50-60 minutes. Let stand 5 minutes before serving., For sauce, place baking chips in a small bowl. In a small saucepan, bring cream just to a boil. Pour over baking chips; whisk until smooth. Serve with bread pudding.

Vanilla Brioche Bread Pudding image

Steps:

  • Preheat the oven to 350 degrees F. Space two racks evenly in the oven.
  • Cut five 3/4-inch-thick slices of brioche and place them in one layer on a sheet pan. Trim some of the crusts from the remaining brioche and cut in 1-inch dice. Spread out on a second sheet pan. Put both pans in the oven for 5 minutes to lightly toast the bread.
  • Meanwhile, for the custard, whisk together the whole eggs, yolks, half-and-half, milk, granulated sugar, vanilla and vanilla seeds in a large bowl and set aside. Line a 3-quart baking dish with the whole slices of brioche, cutting them to fit in one layer. Distribute the diced brioche on top. Pour on the custard and press lightly so all the bread is soaked with custard. Set aside for 10 minutes.
  • Place the dish in a roasting pan large enough to allow the baking dish to sit flat. Pour about 1 inch of the hottest tap water into the roasting pan, being sure not to get any water into the custard. Cover the roasting pan tightly with aluminum foil, tenting the foil so it doesn't touch the pudding. Cut a few holes in the foil to allow steam to escape. Bake for 45 minutes. Uncover and bake for 45 to 50 minutes, until the custard is set and a knife inserted in the middle comes out clean. Dust with confectioners' sugar and serve warm with the melted ice cream.

3 extra-large whole eggs
8 extra-large egg yolks
4 cups half-and-half
1 cup whole milk
1 1/4 cups granulated sugar

Blueberry Brioche Pudding image

Steps:

  • Heat oven to 325 degrees. Lightly butter 4 (8-oz) custard cups or ramekins. Slice brioche crosswise into 1/2 inch thick slices. Lightly butter each slice with remaining softened butter.
  • Divide brioche slices among custard cups, arranging them randomly upright and horizontal. Scatter 1/4 cup blueberries between and around brioche slices in each cup.
  • In a medium-size bowl, beat together milk, eggs, 1/4 cup sugar, orange rind, and vanilla until well blended. Divide egg mixture evenly among custard cups, pouring it over brioche slices and berries. (tops of brioche will not be covered by egg mixture). Sprinkle remaining tablespoon sugar over each pudding.
  • Place puddings in a 13 x 9 inch baking pan; pour hot water into pan to come halfway up sides of custard cups. Bake 35-40 minutes or until the brioche slices are toasted and each pudding is set around edges but slightly soft in center. Cool until warm before serving.

Brioche and Berry Bread Pudding with Lemon Fondant image

Steps:

  • Butter and sugar 6 (6-ounce) ramekins.
  • In a medium bowl, whisk together the eggs, milk, cream, vanilla extract, lemon zest, and sugar. Combine well with a whisk - then let it settle so there are no air bubbles on the surface otherwise these will cause lumps in your anglaise.
  • Preheat the oven to 350 degrees F.
  • Tear the brioche up into large pieces using your hands, add to the custard mixture and toss to combine. Equally divide the berries among the ramekins and top with the bread mixture. Gently press down so they are packed evenly. Sprinkle with more sugar, then refrigerate for 10 to 15 minutes to let soak.
  • Bake for 25 minutes in the center of the oven. The pudding is ready when it has puffed up and the custard is set. The top should be a nice golden color. Remove and allow to cool slightly.
  • Make the fondant. In a mixing bowl combine sifted powdered sugar, water, lemon zest and juice.
  • Once the pudding has cooled slightly, invert onto an individual serving plate. Drizzle the lemon fondant over warm bread pudding and serve with extra fresh berries.

Fresh Blueberry Brioche image

Steps:

  • Place fresh blueberries on a plate and freeze in a single layer. (Do not use frozen blueberries, as they are too watery.)
  • Slightly warm milk and pour into bowl of a stand mixer fitted with dough hook attachment. Add yeast and whisk by hand to combine. Add all-purpose flour, bread flour, 2 1/2 tbsp sugar, salt, eggs, and egg yolk to bowl. Mix on low speed until dough comes together, 1-2 minutes.
  • Increase mixer speed to medium-low and work dough for 6 minutes. Pause every minute to push dough back down and off the hook until it pulls off the bowl sides and looks like a strong bread dough.
  • Reduce mixer speed to low and slowly add butter, a little at a time, over the course of 2 minutes (pausing after 1 minute to scrape down bowl and hook). When butter begins to blend in, increase mixer speed to medium-high to fully incorporate butter and bring the dough back together, 5-6 minutes longer.
  • Place dough on a lightly floured work surface and press into a 16" x 10" rectangle with a short side nearest you; distribute blueberries and 2 tbsp sugar along the top edge and gently roll down, toward you, into a log.
  • Place on a greased baking sheet, wrap in plastic, and refrigerate for at least 1 hour, or preferably overnight.
  • Grease a 9" x 5" loaf pan. Reshape dough by pressing it into a 12" x 6" rectangle with a short side nearest you. Sprinkle with remaining 2 tbsp sugar and tightly roll down toward you.
  • Place into greased loaf pan, loosely wrap in plastic, and allow to rise in a warm place until more than doubled in size, about 3 hours.
  • Preheat oven to 350°. Carefully brush dough with Egg Wash, making sure egg doesn't pool around the edges. Liberally sprinkle with sugar. Bake until golden, 40-45 minutes. Allow to cool for about 15 minutes in the pan. Then transfer to a cooling rack.

  • Heat the oven to 190°C/170°C fan/ gas 5. Cut the end crust off the brioche loaf, then slice 7 x 7-8mm- thick slices from the brioche (about 200g in total). Cut off and discard the crusts (or save for breadcrumbs). Spread the slices with the butter and lemon curd, then quarter diagonally into 4 triangles.
  • Lay half the brioche triangles over the base of a 1.5 litre x 6cm deep ovenproof dish. Sprinkle over half the blueberries, then cover with the rest of the triangles, spread-side up, overlapping if necessary. Scatter over the rest of the blueberries.
  • Whisk the milk, cream, eggs, sugar, lemon zest and juice together in a bowl. Pour it over the top of the brioche and leave to soak for 5 minutes, pushing the top layer down into the liquid now and then so it soaks up the eggy mixture.
  • Put the dish into a small deep roasting tin and pour enough just-boiled water into the tin to come halfway up the sides of the dish. Bake for 30 minutes until puffed and golden. Remove from the oven and the tin. Rest for 2 minutes, then serve warm, dusted with icing sugar, with a little extra cream if you wish.
