BUN CHAO GIO - VIETNAMESE NOODLES WITH SPRING ROLLS

This is a very popular Vietnamese fast-food-style dish but unlike Western fast-food it's slightly more healthy... (esp. if you skip the spring rolls and use bbq meat instead) If you don't want to cook spring rolls, you can use Thai fish cakes, grilled pork/beef/chicken, prawns or tofu. Pretty much any protein at all. Or you can just eat the noodles and salad on their own. In my photo I have used home made fish cakes instead of spring rolls, but I think spring rolls makes the tastiest version of this recipe. You will have a lot of extra spring rolls! You can freeze them without cooking them for later if you want.

Bun Chao Gio - Vietnamese Noodles With Spring Rolls image

Steps:

  • Soak the mushrooms in boiling water til soft.
  • Soak 20 g of the rice vermicelli in boiling water til soft.
  • Put in a food processor: softened rice vermicelli, softened mushrooms, pork mince, garlic, spring onions, carrot, egg, salt, pepper and hoi sin sauce and blend quickly (not til it's a paste).
  • Cut spring roll pastry (if in large sheets) into squares, about 10 - 15 cm on each side.
  • For each square, turn so point is downwards.
  • Place spoon of mixture just below centre of square and shape into a little log (not all the way to the edges though).
  • Take bottom point and fold over mixture, tucking in on opposite side.
  • Roll upwards one full roll.
  • Fold each side point into middle.
  • Finish rolling around top point and glue shut with egg white.
  • Heat vegetable oil to high, test it's hot enough by dropping in a small piece of pastry - if it bubbles it's ready.
  • Cook spring rolls in oil til golden brown.
  • Place cooked spring rolls on kitchen towel to drain oil.
  • Put lettuce, sprouts, cucumber, chopped herbs in a large single-size serving bowl.
  • Heat up a litre of water to boiling.
  • Cook remaining rice vermicelli (will only take a couple minutes).
  • Drain vermicelli in a colander, rinse with lukewarm water.
  • Place rice vermicelli over greens in bowl.
  • Sprinkle peanuts and fried shallots over the top.
  • Slice spring rolls into bite size pieces and place on top.
  • Combine sugar-water, fish sauce, chopped red chili and lime juice in a bowl and then pour over noodle dish.

10 sheets spring roll wrappers (for fried spring rolls)
200 g ground pork
100 g dried rice vermicelli
2 spring onions
1 tablespoon hoisin sauce
1/3 cup dried shiitake mushroom
2 garlic cloves
1 carrot, chopped roughly
1 egg
1 egg white
1 pinch salt
1 teaspoon ground black pepper
vegetable oil, 2 cups for frying
1 cup baby cos lettuce
1/4 cup chopped coriander
1/4 cup chopped mint
1/4 cup crushed peanuts
1/3 cup chopped cucumber
1/4 cup fried shallots (bought already cooked in a packet in Asian aisle)
1 small red chili pepper
1 tablespoon fish sauce
1 lime, juice of
1 teaspoon sugar, dissolved in
1 tablespoon boiling water
1 cup bean sprouts

Cha gio When Noi came to America in 1975, banh trang - Vietnamese rice flour wrappers - weren't available, so the use of wheat wrappers from Singapore and China became widespread throughout the immigrant community. While it's easier to get banh trang these days, Noi still uses the wheat wrappers for this recipe.

Steps:

  • Make dipping sauce:
  • Stir together sugar and water until sugar is dissolved. Stir in remaining sauce ingredients, then chill, covered, at least 2 hours.
  • Prepare filling:
  • Put noodles in a large bowl and cover with hot water by several inches. Soak, pulling noodles apart and stirring occasionally, 10 minutes. Drain noodles and cut into 2- to 3-inch pieces (you should have about 3 cups), then transfer to another large bowl.
  • Put mushrooms in a bowl and cover with hot water by several inches. Soak 15 minutes. Drain and rinse mushrooms thoroughly, then drain again. Trim off and discard any hard parts from mushrooms. Finely chop mushrooms. (You should have about 2 cups.) Add to noodles.
  • Pulse shallot and garlic in a food processor until finely chopped, then add to noodles along with carrots, pork, fish sauce, sugar, pepper, and salt. Pulse shrimp in processor until coarsely ground. (Do not overprocess or it will become pasty.) Add shrimp to noodle mixture. Mix with your hands until well combined. Chill filling, covered with plastic wrap, until cold.
  • Assemble rolls:
  • Line 2 trays with wax paper.
  • Transfer one fourth of filling to a small bowl and keep remainder chilled, covered. Place 1 wrapper on a work surface, keeping remaining wrappers covered with a clean kitchen towel (to prevent them from drying out). Cut wrapper diagonally in half to form 2 triangles. With long side of 1 triangle nearest you, put 2 tablespoons filling along middle of long edge of triangle, and shape filling into a thin 5-inch log. Fold left and right corners of wrapper over filling, overlapping slightly and aligning bottom edges. (Wrapper will resemble an open envelope.) Dab top corner with yolk, then roll up wrapper away from you into a long thin roll, making sure ends stay tucked inside. Place on a tray, seam side down. Repeat with remaining triangle. Make more rolls in same manner with remaining wrappers and filling, keeping trays of rolls chilled, loosely covered, until ready to fry.
  • Heat 1 1/2 inches of oil in a 5- to 6-quart pot over moderately high heat until it registers 365°F on thermometer. Fry rolls in batches of 5 or 6, keeping rolls apart during first minute of frying to prevent sticking, until golden brown and cooked through, 4 to 5 minutes. (Return oil to 365°F between batches.) Transfer as fried to a colander lined with paper towels and drain rolls upright 2 to 3 minutes. To eat, wrap hot or warm rolls in lettuce leaves and tuck in mint and cilantro leaves. Serve with dipping sauce.

5 1/2 tablespoons sugar
3/4 cup warm water
1/4 cup plus 1 tablespoon Asian fish sauce (preferably from Phu Quoc)
2 tablespoons rice vinegar (not seasoned)
2 teaspoons fresh lime juice (optional)
2 garlic cloves, minced
2 fresh Thai chiles (2 to 3 inches; preferably red; including seeds), thinly sliced crosswise
For spring rolls
7 1/2 oz very thin bean thread noodles (in small skeins, also known as cellophane or mung bean noodles*)
2 oz dried wood ear mushrooms
1 medium shallot
2 garlic cloves
2 cups grated carrots (4 to 5 carrots)
1 lb ground pork shoulder
1/4 cup Asian fish sauce (preferably from Phu Quoc)
1/4 cup plus 1 teaspoon sugar
2 1/2 teaspoons black pepper
2 teaspoons salt
1 lb shrimp in shell, peeled and deveined
25 (8-inch) square frozen spring roll pastry wrappers made with wheat flour, thawed
1 large egg yolk, lightly beaten
About 6 cups vegetable oil

AUTHENTIC VIETNAMESE SPRING ROLLS (NEM RAN HAY CHA GIO)

This is a recipe I learned while traveling through Vietnam. The ingredients are relatively simple and easy to find in any grocery store. I've cooked this a number of times since getting back and it's always been a hit. They taste great with dipping sauce.

Authentic Vietnamese Spring Rolls (Nem Ran Hay Cha Gio) image

Steps:

  • Soak rice noodles in cold water until soft, about 20 minutes. Drain well; cut into 2-inch long pieces.
  • Combine the noodle pieces, chicken, shrimp, eggs, carrot, wood fungus mushrooms, and green onions in a large bowl. Sprinkle in sugar, salt, and black pepper; stir filling mixture well.
  • Soak 1 rice paper wrapper in a shallow bowl of warm water to soften, about 15 seconds. Remove from water and place on a damp cloth laid out on a flat surface.
  • Place 1 tablespoon of filling mixture into the center of the softened rice paper. Fold the bottom edge into the center, covering the filling. Fold in opposing edges and roll up tightly. Repeat with remaining rice paper wrappers, soaking and filling each one individually.
  • Heat oil in a work or large skillet over medium heat.
  • Fry the spring rolls in batches of 3 or 4 until crisp and golden brown on both sides, about 5 minutes. Drain on paper towels.
