Caramelized Onion, Green Bean, and Cherry Tomato Tian image

Steps:

  • Preheat oven to 400 degrees.
  • Cook beans in boiling water 3 minutes.
  • Drain and rinse under cold water, set aside.
  • Heat nonstick fry pan coated with veggie spray over medium high heat.
  • Add onion and next 4 ingredients (onion through pepper), saute 8 minutes or until lightly browned, stirring frequently.
  • Stir in vinegar, basil and oregano, cook 2 minutes.
  • Remove from heat.
  • Arrange beans in a 11 x 7 inch baking dish coated with veggie spray.
  • Top with onion mixture.
  • Arrange tomatoes on top of onion mixture and sprinkle with cheese.
  • Bake at 400 degrees for 35 minutes or until the cheese is lightly browned.

Steps:

  • Cook green beans in boiling water.
  • Drain.
  • (This can be done ahead.).
  • Cut onions into thin slices, and cut each slice in half.
  • Cook onions in a nonstick skillet over medium-high heat, stirring occasionally until onions are golden brown.
  • (Original recipe says do not stir onions first 5-10 minutes.) Reduce heat to medium; stir in butter and brown sugar.
  • Add green beans; cook 5 minutes or until thoroughly heated.
  • Toss with vinegar.

  • In a large skillet, cook bacon over medium heat until crisp, stirring occasionally. Using a slotted spoon, remove bacon to paper towels, reserving 2 tablespoons drippings in pan., In drippings, saute onions over medium heat until softened. Steps:

  • Place beans and water in a large saucepan. Cover, and bring to a boil. Set heat to low, and simmer until tender, about 10 minutes. Drain off water, and set aside.
  • Melt butter in a skillet over medium heat. Stir in sugar, garlic salt, pepper and basil. Add tomatoes, and cook stirring gently just until soft. Pour the tomato mixture over the green beans, and toss gently to blend.

This recipe came from a Woman's World magazine. It is very good and has a very pretty presentation. (**Updating to say that I made this recipe with canned cut green beans. I simply drained them and heated them in a little broth for about 3-5 minutes and added them to the recipe instead of fresh green beans. They were very good this way...a nice way to dress up canned green beans.)

Steps:

  • In skillet, melt 1 Tbsp butter over medium heat. Add onion; cook, stirring occasionally, until starting to brown, 7-10 minutes. Add sugar, salt, and Cajun seasoning. Reduce heat to medium-low; cook, stirring often, until onion is soft and golden brown, 5 minutes.
  • Meanwhile, bring a large pot of salted water to a boil. Add green beans; cook until tender, 4-5 minutes. (Next time, I will cook longer as mine were not as done as I would have liked them.) Drain well, then add to onion with remaining 1 Tbsp butter. Cook, stirring, until heated through, 1 minute.
