Steps:

  • Heat butter in a medium saucepan over medium-high heat. Cook ginger and cinnamon until ginger becomes fragrant, 1 to 2 minutes. Carefully add amaretto and cook until liquid thickens and reduces by half, about 1 minute. Add cranberries, cherries, sugar and 1/2 cup water. Cover and bring to a boil. Reduce heat to low and simmer until cranberries break apart and sauce thickens, 20 to 25 minutes. Remove from heat and cool to room temperature. Transfer to an airtight container and refrigerate for up to 1 week.

1 piece ginger (about 1 inch), peeled
1/2 teaspoon cinnamon
1/4 cup amaretto

CHERRY-CRANBERRY SAUCE (FOR BEGINNERS)

I know that all of you great cooks will scoff at this recipe, lol, but my little granddaughter wanted to make something for Thanksgiving and everything seemed to be already taken care of except the cranberry sauce. Since it was late and we did not have any fresh or frozen cranberries, we decided to use what I had in my pantry. Of course, its nothing like the fresh, cooked sauce, but it will do, in a pinch. She was so proud that she got to stir it up all by herself. I have made it this way before (at the last minute) and everyone seemed to like it.

  • Pour it into your favorite serving dish and place in the refrigerator for @ 4 hours or until set.

  • Wash the cranberries, apple and orange. Peel and finely dice the apple. Zest the orange with microplane zester/standing grater zester. Cut orange in half to juice.
  • Place the cranberries, frozen cherries, diced apple, orange zest, cinnamon sticks and honey in saucepan. Squeeze/juice the orange halves over the fruit, any pulp that falls into the saucepan is fine.
  • Cover the saucepan and bring to a boil. Once it's boiling, remove the lid and reduce the heat to a simmer and simmer for about 30-35 minutes or until the sauce has thickened. [Note: Sauce will thicken more when cooled/refrigerated.]
  • If you prefer a chunkier cranberry sauce, remove the cinnamon sticks and leave as is. If you prefer a smoother sauce, remove the cinnamon sticks and add contents to a food processor - pulse to combine until smooth {or use an immersion blender}.

  • Stir together all ingredients in a heavy-bottomed pot (using 1/3 cup brandy). Bring to a boil, reduce heat, and simmer, stirring often, until cranberries burst and sauce has a slightly-thickened, jammy consistency, 10 minutes.
  • Remove from heat. If you prefer a stronger brandy flavor, stir in an additional 1 tablespoon before transferring cranberry sauce to a bowl. Cover and refrigerate until well-chilled. Sauce will thicken as it cools.
  • Store sauce, covered, in the refrigerator for up to 5 days or in the freezer for up to 2 months. When chilled, I like to return the sauce to room temperature before serving.
