CHERRY MASH BARS
These ultra sweet bars are always a year-round request, even though I usually only make them at Christmas time. They are very easy to make, and quick! If cherry chips aren't available in your area, butterscotch chips can be substituted.

Steps:
- Line an 8x8 or 9x9 inch square pan with waxed paper.
- In a medium saucepan, combine butter, sugar, salt and half and half. Heat until boiling, stirring occasionally. Boil for 5 minutes, stirring enough to keep from scorching. Remove from heat and stir in the marshmallows, and cherry chips. Press the mixture into the prepared pan.
- In the microwave or in a metal bowl over a pan of simmering water, melt chocolate chips, and peanut butter together stirring frequently until smooth. Spread over the mixture in the pan. Refrigerate for 2 hours before cutting into squares.

Steps:
- In a large saucepan over medium heat, stir together sugar, milk, marshmallows, butter, and salt. Simmer for about 5 minutes or until mixture reaches soft ball stage, 240 degrees F (115 degrees C). Turn off heat. Add cherry chips and vanilla; stir until melted.
- Pour mixture into a well-greased 9x13 inch pan, and let cool until firm.
- In a microwave, or in a saucepan over low heat, melt chocolate chips and peanut butter. Pour over cherry mixture and spread evenly. Allow to cool completely before cutting.

CHERRY MASH CANDY
These taste like the real thing for those of us who don't have access to St. Joseph, MO's famous yummy candies. Rich cherry nougat surrounded by chocolate and chopped peanuts.

Steps:
- 1. Mix all ingredients with mixer til well-blended. Roll into desired size balls. I suggest small ones since this is a very rich candy and the chocolate coat will add some size, also. Chill thoroughly
- 2. Melt chocolate chips with parafin. Stir til well-blended. Mix in peanuts.
- 3. Dip chilled cherry balls into mixture, reheating chocolate if it begins to harden. Chill thoroughly til set. Enjoy!

- 1. Boil sugar, marshmallow cream and milk for 5 minutes; Stirring constantly. Remove from heat and add cherry chips. Stir until melted. Pour into heavily buttered 13x9 pan. let stand until firm. Melt chocolate chips and peanut butter over low heat. Add nuts. Mix well and spread over cherry layer. Let set until firm. cut into squares.

This recipe makes delicious little fudge squares that would be excellent on a holiday cookie tray. They are SWEET but really flavorful. Perfect as small squares. If you like Chocolate and Cherries this recipe is for you. The candy bar was originally called Cherry Chase, and then Cherry Chaser, before becoming known as Cherry Mash. It can be found throughout the Midwest in most grocery and convenience stores and mass-merchandise outlets. I made them with pecans b/c I did not have peanuts and they were still delicious. I found the cherry chips at our Super Walmart next to the chocolate chips.

- Combine sugar, butter or margarine, salt and half and half in saucepan. Boil on high heat for about 5 minutes, stirring occasionally. Stir in marshmallows and cherry chips.
- Spread in 8 or 9" square pan which has been lined with parchment or wax paper.
- Melt chocolate with peanut butter in a small pan over low heat, stirring occasionally.
- Stir in peanuts. Spread evenly over cherry layer.
- Let set in refrigerator. Cut into 1" squares with warm sharp knife (hold under hot water and then dry before cutting).

Steps:
- 1. Combine butter or margarine, sugar, milk, salt and marshmallows in saucepan. Bring to a boil then boil for 5 minutes.
- 2. Remove from heat and stir in cherry chips and vanilla. * Pour into a buttered 9 x 13 baking dish and chill for 2 hours.
- 3. In a double boiler, melt chocolate chips. Add peanut butter and crushed peanuts. Stir until well blended. Spread evenly over the cherry layer. Chill until firm enough to cut into bite size pieces.
- 4. * I line the 9 x 13 baking dish with aluminum foil (butter the foil) so that I could lift the candy out of pan when set, that way it would be easier to cut into squares.
- 5. Lot and Lots of you have asked what is a "Cherry Chip"....yes, it's just like buying a bag of Chocolate, Butterscotch, Peanutbutter...etc. Chips. I use Log House premium quality CHERRY flavored Baking Morsels. There is a photo above by Karla showing the cherry chips in a bag...=;D
- 6. NOTE: If you want your candy squares thick like this pic, then make it in a 8x9-inch pan (instead of a 9x13...you get more pieces using the larger pan, but the squares won't be as thick).

- 8. Kim's photo's above, without putting in the crushed NUTS...made a beautiful "fudge". She also has a photo above when she remade it and put the nuts in...beautiful.
- 9. and...WHEN I USE SPLENDA, to make this candy, I USE Hershey's Sugar-Free Chocolate Chips.
- 10. ADDING A NOTE FROM CARY BOWERS: For those of us that can't find the Cherry Chips in the local grocery store. Trust me I went to every one here in my area. There is a way you can still make this awesome candy with out them. I went to my local Walmart store in the isle with spices and extracts look for Watkins Cherry extract. I used the white chocolate chips and then added four capfulls' of the extract and red food coloring if that is important to you. You can also add the flavoring to taste. I will post a picture of it when I am done. The Cherry part is chilling now then on to the top ;) This has been a fave of my husband and I have loved this since we were kids. Glad I found a good recipe. Thank you ************************************ P.S. This candy is like those Cherry A Lets or Cherry Mash candy bars of the 50s and 60s. Its fast and easy to make. I get my cherry chips at Walmart. Enjoy!

Ah, cherry and chocolate. Just seems to go together so many different ways. This is from the back of a Gurley's (TM) Sweet Cherry Chips. Going on the Christmas cookie tray!
