CHI CHI DANGO MOCHI

Soft and chewy Japanese dessert. A tradition of boy's or girl's day. Great for a snack for picnics or parties. This recipe is easy to make, but do not try cheating and double it. The directions should be followed exactly.

Chi Chi Dango Mochi image

Steps:

  • Preheat oven to 350 degrees F (175 degrees C). Grease a 9x13 inch pan. Whisk together the rice flour, sugar and baking powder; set aside.
  • In a medium bowl, mix together the water, vanilla, coconut milk and red food coloring. Blend in the rice flour mixture. Pour into the prepared pan.
  • Cover the pan with foil and bake for 1 hour. Allow to cool completely.
  • Turn the pan of mochi out onto a clean surface that has been dusted with potato starch. Cut into bite size pieces using a plastic knife. The mochi does not stick as much to plastic knives.

  • 1. Blend 1 cup pineapple orange juice and cream of coconut in blender. Add to punch bowl with remaining pineapple orange juice
  • 2. Stir in vodka (I used 100 proof vodka) just before serving.
  • 3. Add 7-up and ice (I used frozen balloons. They don't dilute the punch). Garnish with orange slices.
  • 4. This punch is fantastic. Everyone loved it and it all went.

6 cups pineapple orange juice, chilled (dole)
1 can cream of coconut, coco lopez, 15 oz
3 cups vodka
1 quart 7-up
cracked ice
1 orange, thinly sliced

Sweet Chili Chip-Crusted Chicken Fingers with Sriracha Ranch Dipping Sauce image

Steps:

  • For the sriracha ranch dipping sauce: In a medium bowl, whisk together the mayonnaise, buttermilk, sour creamcilantro, parsley, scallions, sriracha, sugar and lime zest and juice until smooth. Season with salt and pepper.
  • For the chicken: Crumble the chips into a food processor and process until finely ground. (You should have about 3 cups crumbs.) Spread the crumbs in a large shallow bowl.
  • Beat the eggs and sriracha in a second shallow bowl, and combine the flour, 1/2 teaspoon salt and some pepper in a third shallow bowl.
  • Sprinkle the chicken strips with some salt and pepper.
  • Heat about 1 inch vegetable oil in a large cast-iron skillet until a few crumbs sizzle on contact (350 to 360 degrees F).
  • Dredge the chicken in the flour, then the egg, then the crumbs. Fry, in batches, until crisp and golden, about 4 minutes per batch. Drain on paper towels.
  • Sprinkle with salt and serve warm with the sriracha ranch dipping sauce and crudites.

Steps:

  • In a medium saucepan, combine fennel seed, cardamom, cloves, cinnamon stick, ginger root, peppercorns and water. Boil for 5 minutes. Remove from the heat and steep for 10 minutes. Add the tea, bring to a boil, reduce the heat, and simmer 5 minutes.
  • Strain mixture, discard spices and return the tea to the saucepan. Stir in the brown sugar and milk. Serve immediately.

Steps:

  • Bring 4 cups water and the almond milk to a boil. Remove from the heat and add the tea bags. Let steep for 10 minutes. While the mixture is still warm, stir in the spiced rum and agave.
  • While the tea is steeping, whip the cream to soft peaks.
  • Remove the tea bags and ladle the spiked chai into serving cups. Top with a dollop of whipped cream and a dusting of ground cinnamon.

Peruvian Chicha Morada Drink image

Steps:

  • Bring the water to a boil with the corn, cinnamon sticks, and cloves in a large pot. Reduce heat to medium-low; simmer 40 minutes. Remove from the heat and strain through a mesh strainer to remove the corn and spices. Stir the lemon juice and sugar into the chicha until the sugar has dissolved. Refrigerate until cold.
  • Stir in the chopped pineapple and apple before serving over ice.
