CHIPOTLE CHILI-SPIKED MOCHA SLUSH
This is a jazzed up version of a cold mocha. From Smoothies and Summer Drinks. Cooking time is time spent in the freezer.

Steps:
- In 2-cup glass measure stir together hot chocolate mix, coffee crystals, chili powder and ground cinnamon.
- Stir in hot water until combined.
- Pour into ice cube tray. Freeze until firm.
- In blender container combine chocolate ice cubes, ice cream and half-and-half. Cover and blend until smooth.
- Pour into glasses.
- Serve immediately topped with whipped cream and cinnamon, if desired.

CHIPOTLE BEEF CHILI WITH LIME CREMA

Steps:
- Heat heavy large pot over high heat. Add beef; sauté until cooked through, breaking up meat with spoon, about 8 minutes. Transfer to large bowl. Add onions and garlic to same pot. Sauté until onions are tender, 8 minutes. Add chili powder. Sauté until fragrant, 3 minutes. Add beef, broth, tomatoes, stout and chilies. Cover partially; simmer until chili is thick, stirring often, about 1 hour 10 minutes.
- Gradually stir cornmeal into chili. Stir in beans. Simmer until heated through. Season generously with salt and pepper. (Can be made 1 day ahead. Cover and chill. Rewarm over medium heat.)
- Whisk sour cream, lime juice and lime peel in small bowl. Season with salt.
- Spoon chili into bowls. Spoon lime crema atop chili. Serve with chips.
STARBUCKS MOCHA SLUSH

Steps:
- Fill ice cube trays with half of the brewed coffee and place in the freezer.
- In a bowl, combine the remaining brewed coffee, cocoa powder and milk and stir to dissolve the cocoa. Cover and chill.
- When the coffee ice cubes have frozen, transfer them to a kitchen towel and, using a mallet, crush the cubes.
- Fill 4 glasses with the crushed coffee ice and divide the coffee-cocoa mixture evenly among them.
- Dust the top with cocoa powder and serve.
