An easy, make ahead and freeze sweet hors d'oeurve for a buffet table or quick sweet snack. Good for brunch or coffee break too.

Steps:
- Trim bread crusts and, using a rolling pin, flatten crustless bread slices.
- Cream together cream cheese, egg yolks, white sugar.
- Spread cream cheese mixture thinly on bread.
- Roll up.
- Dip each roll in melted margarine, then in brown sugar/cinnamon mixture.
- Freeze on cookie sheet.
- Store in ziploc bags.
- To bake, take desired number of blintzes from freezer.
- Do not thaw.
- Put on cookie sheet.
- Bake at 350 degrees 15-20 minutes.
BLINTZES
Steps:
- With a whisk, beat eggs and milk together and add the salt. Gradually, a tablespoonful at a time, whisk in flour and beat until smooth. Heat a 6inch skillet and butter it lightly. Pour in enough batter to make a thin pancake. (If batter is too thick, add water to thin) Pour out excess back into the batter and don't worry if a "tab" forms on the side of the pan.
- Cook the blintz on one side only until the top blisters and it looks dry around the edges. Turn the blintz upside down onto a clean towel. Rebutter the skillet if need be, every 2 or 3 blintzes, and proceed until all the batter has been used up.
- Make assorted fillings, roll up and fry, or bake or freeze for another day.
CHEESE BLINTZES II
Delicious and easy recipe for cheese crepes. It sounds fancy and does take time but the process is easy and the taste is delicious. Serve with sour cream.

- Place the milk, whole eggs, salt, and flour into a blender. Blend until smooth. Refrigerate at least 20 minutes. Meanwhile, make the filling by beating together the cottage cheese, egg yolk, melted butter, sugar, lemon juice, and vanilla extract in a bowl with an electric mixer until smooth.
- Preheat an oven to 425 degrees F (220 degrees C). Lightly grease a baking sheet.
- Melt some of the 2 tablespoons of butter in a skillet over medium-high heat. Pour in about 2 tablespoons of the batter and tilt the pan to completely coat with the batter. Cook until golden on the bottom, and no longer wet on the top, about 2 minutes per crepe. Repeat with remaining batter.
- Place 1 to 2 tablespoons of the filling near one edge of a crepe. Fold this side up towards the center, then fold the sides in. Fold the top over the filling, and place seam-side-down onto the prepared baking sheet. Repeat with the remaining crepes and filling.
- Bake in the preheated oven 10 minutes, then sprinkle with cinnamon sugar, and continue baking until lightly golden, about 5 minutes more.

CINNAMON BLINTZES TO FREEZE
I triple this recipe, individually wrap the blintzes in waxed paper, and store them in the freezer. Defrost 2-3 for a great, special breakfast (or anytime of day!). You can microwave them, but they are best when cooked in a pan with some butter until they are golden brown. A little prep work now yields a rewarding meal later! Crepe recipe from Joy of Cooking... The amount of filling depends on how big your pan was and how many crepes broke during the process (one of my favorite childhood memories was hoping my mom broke a lot!)

Steps:
- Sift together flour, salt, baking powder, and powdered sugar.
- In a separate bowl, whisk the eggs. Add the milk, water, and vanilla.
- Make a well in the dry ingredients and add the liquid ingredients. Stir until combined. Ignore the lumps- they will take care of themselves.
- Refrigerate for 2-3 hours or overnight.
- Stir out any remaining lumps.
- Spray a 5-7 inch skillet with nonstick cooking spray. Heat (but not so that crepe will brown) Pour in a thin layer of batter until the bottom of the skillet is covered. When crepe stars to bubble, use fingers to flip over. Cook for another minute or so then cool on a clean dish towel.
- Store cooled crepes between 6x6-inch squares of waxed paper.
- Mix cottage cheese, cinnamon, and sugar to taste.
- Fill crepes. Roll up, folding in the edges (like a burrito). Wrap in wax paper. Freeze.

- Preheat the oven to 350 degrees. Butter a 9 by 13-inch baking dish or coat it with nonstick cooking spray.
- In a blender or a food processor (fitted with a steel blade), combine all batter ingredients. Process until very smooth, scraping down the sides of the container once or twice. Measure out 1 1/2 cups of the batter, and pour it into the bottom of the prepared baking dish. Bake at 350 degrees forabout 10 minutes, or until it is set.
- Meanwhile, combine all the filling ingredients in a large bowl, and mix them well. When the bottom layer has set, remove it from the oven and spread the filling over it, smoothing the top. Give the remaining batter a brief stir to resuspend the ingredients; then very slowly pour it over the cheese filling so the filling is completely covered. Carefully return the casserole to the 350 degree oven, and bake an additional 35 to 40 minutes, or until the top is puffed and set.
- Let the casserole rest for about 10 minutes before cutting it into squares. Serve with your choice of accompaniments.

- 1. Beat egg with salt and liquid (water or milk) until smooth.
- 2. Add flour gradually until the consistency of heavy cream. You do not need a mixer. A whisk will work as well.
- 3. Add more liquid or flour as necessary. The batter will thicken as it sits.
- 4. Spoon 1/3 cup of batter into a greased, preheated crepe or crepe size fry pan.
- 5. Tilt pan until entire bottom is covered with a thin, even layer.
- 6. When the blintz is browned underneath and dry on top (1 to 4 minutes), turn out onto waxed paper (browned side up).
- 7. Cover with waxed paper and continue to stack blintzes and paper until all of the batter's used.
- 8. Mix filling ingredients.
- 9. Spoon some of the mixture into each blintz.
- 10. Roll up once.
- 11. Fold in ends.
- 12. Continue rolling into a cigar shape (like a Chinese egg roll shape). Chill until ready to cook.
- 13. To cook, heat a large skillet to medium-low and melt 2 teaspoons butter.
- 14. Fry blintzes, turning occasionally.
- 15. Add more butter as necessary.
- 16. Serve with warm applesauce, sour cream (as is the tradition). Can easily increase quantities if you are cooking for a crowd.
CHEESE BLINTZES
Mom's cheese blintzes...a party favorite! These blintzes can be made ahead and frozen in an airtight container. Do not thaw them before baking!

- Preheat oven to 350 degrees F (175 degrees C). Spray a cookie sheet generously with non-stick cooking spray.
- Trim crusts from bread and roll the slices flat.
- In a small bowl combine sugar and cinnamon to make a mixture.

- Preheat the oven to 375 degrees F (190 degrees C). Lightly coat an 8- or 9-inch square baking pan with cooking spray.
