- In a medium-size mixing bowl, combine Mexican-style corn, green chilis, green onions, sour cream, jalapeno pepper, mayonnaise, and cheddar cheese. Mix well. Cover and refrigerate until ready to serve.

EASY CORN DIP

- Preheat the oven to 375 degrees F.
- Stir together the cream cheese, sour cream and mayonnaise in a large bowl until combined. Add the corn, chiles, jalapenos, salsa, salt, pepper and half the grated cheese, then stir.
- Spread the mixture into a 9-by-13-inch casserole dish and sprinkle the top with the remaining cheese. Bake until bubbly and golden, about 20 minutes.
- Top with the cilantro and serve warm with the corn chips on the side.

- In large bowl or electric mixer, beat sour cream, mayonnaise, cheese, chiles and spices on medium speed until well blended.
- Stir in corn, bacon and cilantro until well combined.

- 2. Chill before serving. Even better the next day
- 3. Serve with Frito scoops or your favorite corn chip.
- 4. NOTES: The southwestern steam crisp corn or chipotle white corn or any combination of the steam crisp flavors may be used. The same for the Rotel tomatoes, if you want more heat use the hotter flavored ones. Cheese is the same. You can use regular cheddar shredded cheese or the co-jack. I would use the finely shredded, but you can use the regular shredded size also.
MEXICAN CORN DIP
For tasty make-ahead dip try this recipe. It goes fast at office parties or any gathering. Mildly spicy, it's easy to alter if you want it to have more of a kick. Make sure your corn chips are large enough to scoop up a hearty helping.

CORNED BEEF AND SWISS DIP
Warm and delicious corned beef dip. Serve with crackers or toast the hunks of bread taken from the center of the Italian loaf. You can also bypass the bread altogether and bake in a 9x13 covered pan. I have also cooked this in a slow cooker on Low for 3 hours.

- Preheat oven to 350 degrees F (175 degrees C).
- Heat vegetable oil in a skillet over medium heat. Cook and stir onion until tender, 5 to 7 minutes.
- Transfer onion to a large mixing bowl.
- Stir corned beef, cream cheese, mayonnaise, sour cream, Swiss cheese, and garlic powder into onion. Mix until thoroughly combined.
- Slice a piece of bread from the top of the Italian bread and hollow the center of the loaf, creating a long bread bowl. Leave at least 1/2 inch of bread on the sides. Reserve bread chunks from center of loaf for dipping if desired.
- Spoon the corned beef mixture into the bread bowl.
- Wrap the filled bread bowl in aluminum foil and place on a baking sheet.
- Bake in preheated oven until the dip is fully cooked and bubbling, 1 to 1 1/2 hours.
