Creamy Corn And Onion Dip Recipes
CREAMY CORN AND CHILE DIP

Steps:
- Cut the kernels from the corn. Cut 2 thin rounds of the Fresno chile and reserve them for garnish. Seed the remaining chile, if desired, then finely chop it.
- Heat the butter in a medium skillet over medium heat. Add the scallion whites and garlic and cook, stirring occasionally, until softened, about 2 minutes Add the corn and cook, stirring occasionally, until crisp tender, about 6 minutes. Add the heavy cream and chopped chili and simmer, stirring occasionally, until thickened, about 2 minutes. Stir in the cream cheese until melted, then remove from the heat and season with salt to taste. Transfer to a serving bowl and top with the scallion greens and the chile slices. Serve hot or at room temperature with tortilla chips for dipping.
CREAMY ONION DIP
This easy dip made with pantry staples is creamy and oniony with just the right amount of cool tang to balance a crisp, salty chip. Just like the creamy party dip I grew up eating, but no powder packed with weird ingredients required. Be careful, you may eat an entire bag of chips with this dip! Serve with classic or wavy chips or cut veggies.

- Combine sour cream, chives, onion powder, salt, garlic powder, and pepper in medium bowl; mix until well combined. Refrigerate for at least 30 minutes (or up to one week) before serving.

- Preheat oven to 400 degrees. In a medium sized saucepan add the olive oil, onion, red pepper, and jalapeño. Cook over medium high heat until tender.
- In a medium sized bowl add pepper mixture, corn, cream cheese, sour cream, 1 cup cheese, chili powder, garlic, paprika, salt and pepper. Stir until combined.
- Spread in a 2 quart casserole dish or small skillet. Sprinkle remaining 1 cup cheese. Bake for 15-20 minutes or until hot and bubbly golden brown. Garnish with green onions if desired.
