CUCUMBER SANDWICHES

- In a large bowl, combine cream cheese and dressing mix. Spread on 1 side of each slice of bread. Peel cucumbers if desired; thinly slice and place on 6 slices of bread. Top with remaining bread. Serve immediately.

- In a medium bowl, mix together the cream cheese, mayonnaise and Italian dressing mix. Refrigerate for at least 6 hours, or preferably overnight.
- Spread the cream cheese blend onto slices of French bread. Top with a cucumber slice, and sprinkle with dill. You can make as many or few as you like. the cream cheese mixture keeps for about a week in the refrigerator so you can make them over and over again!

- 1. Cut the cucumber length-wise, from tip to tip. Scoop out the inside of the cucumber to make room for your sandwich fillers. Add meat, veggies, and other sandwich makings to the inside of the cucumber. Place one half of the cucumber on the other half. Enjoy!!
EASY CUCUMBER PARTY SANDWICHES
These easy, beautiful, yummy sandwiches are perfect for brunches, tea parties or spring and summer lunches. Can be prepared ahead of time and assembled just before serving. This is an easy appetizer to prepare the day before, except for the assembly. The cream cheese mixture is actually better after about 8 hours. Feel free to experiment with the dressing; we prefer the buttermilk dressing but ranch or Italian works great, too. Also, cocktail bread can be substituted for the hand-cut bread, which will save 10 to 15 minutes.

Quintessentially English high tea sandwiches - just how Oscar Wilde's Lady Bracknell would have had them served. Cucumber sandwiches are one of England's most traditional tea sandwiches, thinly sliced cucumber on good buttered bread. The crusts are always removed. I found this recipe on an English website and have posted it for the 2005 Zaar World Tour. The ingredients and directions have made concessions to what is now available - such as seedless cucumbers. A delicious really low fat sandwich!

- Peel the cucumber, cut in half lengthways, and slice crossways as thinly as possible.
- In a small bowl, combine the butter and orange zest and stir until the mixture is creamy and the ingredients are well-blended.
- Spread each slice of white bread with the butter mixture, arrange several slices of cucumber on each slice and top with the whole-wheat bread, and cut each sandwich into 4 triangles.
- To serve: Arrange the sandwiches on a platter, alternating white and brown sides of the sandwiches and garnish with mint sprigs and orange slices.
- On cucumbers: Of course traditionally the cucumber is peeled, but to modern tastes, many cucumbers available - such as Lebanese or continental, just those names alone would be enough to have Lady Bracknell turning in her grave! - really don't need peeling.

- Trim the ends of the cucumber and scrape off the skin and cut the cucumber into thin slices. Arrange the cucumber slices on 4 of the slices of bread. Sprinkle with salt and pepper. Cover with the remaining slices of bread.
- Cut away the crusts of each sandwich. Cut each sandwich lengthwise in half.
