GROUND BEEF CHILI WITH BEANS
A delicious mix of ground beef, chorizo, beans, and vegetables in a hearty tomato base. I entered it in a chili cook-off and it won!

Steps:
- Pour tomatoes into a large stockpot over medium heat.
- Heat a large skillet over medium-high heat. Cook and stir ground beef in the hot skillet until browned and crumbly, 5 to 7 minutes. Drain and discard grease. Transfer beef to the stockpot.
- Cook and stir chorizo in the same hot skillet over medium-high heat until browned and crumbly, 5 to 7 minutes. Drain and discard grease. Transfer chorizo to the stockpot.
- Heat oil in the same skillet over medium-high heat. Saute onions and garlic until very well cooked and translucent, 7 to 10 minutes. Add cumin and chili powder and cook for about 3 minutes more. Transfer onions to the stockpot with lime juice, salt, and black pepper. Stir black beans, pinto beans, and kidney beans into the pot.
- Heat the skillet over medium-high heat and lightly saute bell peppers, about 5 minutes. Add to the stockpot.
- Add corn to the stockpot and season with additional salt and pepper. Add hot sauce to taste and simmer for 30 minutes more. Sprinkle cilantro on top and serve.

BEST DARN BEANS EVER
This is my version of a family recipe. You can't go wrong when you serve these beans at a potluck, barbecue, family gathering etc. These are a great accompaniment to burgers and hot dogs. My family even loves these during the holidays with spiral ham and potato salad and or macaroni salad. The secret to this recipe is following the directions and using brand names mentioned. All who try these beans rave about them and typically ask for the recipe.

- Place bacon in a Dutch oven over medium-high heat. Saute, turning occasionally, until slightly crispy, 5 to 6 minutes. Drain bacon slices on paper towels; reserve 3 tablespoons bacon grease and discard the rest.
- Add a 1/4 cup of water to the pan and bring to a boil, scraping up all browned bits until water has evaporated. Add the reserved bacon grease, along with the green onions. Saute until softened, 3 to 4 minutes. Stir in brown sugar, about 1/4 cup at a time, cooking until sugar begins to brown, about 5 minutes.
- Stir chili sauce into the pot and cook for 2 to 3 minutes. Pour in pork and beans, kidney beans, and lima beans; stir until beans are well coated in the sauce.
- Return bacon to the pot and stir well to combine. Cover and reduce heat to low. Simmer, stirring occasionally to prevent burning, until flavors combine, 1 1/2 to 2 hours.

BEST DAMN CHILI
After years of adjustments I have found a recipe for all to enjoy. Previous ones were either too hot or too mild, this one even was to the liking of my finance who hates chili.

- Heat oil in a large pot over medium heat; cook and stir onion, bell pepper, Anaheim pepper, jalapeno peppers, and garlic in the hot oil until softened.
- Meanwhile, heat a large skillet over medium-high heat. Cook and stir beef in the hot skillet until browned and crumbly, 5 to 7 minutes; add Worcestershire sauce and garlic powder. Crumble bouillon cubes over beef and add beer. Continue to cook , scraping any browned bits from the bottom of the skillet, until liquid is hot, about 3 minutes. Stir beef mixture into pepper mixture.
- Stir crushed tomatoes, diced tomatoes, tomato paste, and wine to the beef mixture. Season with chili powder, 2 tablespoons cumin, brown sugar, pepper sauce, basil, paprika, salt, oregano, and black pepper. Bring to a boil and reduce heat to medium-low. Cover and simmer until meat and vegetables are very tender and flavors have developed in the chili, about 90 minutes, stirring occasionally.
- Mix kidney beans into beef and vegetables. Continue to simmer until beans are hot, about 30 minutes more.
- Blend sour cream, cilantro, and remaining 1/2 teaspoon cumin in a food processor until smooth. Serve sour cream mixture with chili.

CHILI, PLAIN AND SIMPLE BUT DARN GOOD
This is plain and simple but makes a wonderful chili, you may add in other ingredients if desired, my family likes this topped with cheddar cheese and sour cream then served with recipe#105726 --- I strongly suggest to make this 1-3 days ahead the flavors will intensify and ripen, you will really notice a difference in flavor if made ahead --- all amounts may be adjusted to taste.

- In a large pot brown the ground beef with onion and green bell pepper until no longer pink; drain all fat.
- Add in garlic, oregano and chili flakes; cook stirring until browned (about 12-15 minutes, for the best flavor the meat must be slightly browned).Add in chili powder and cumin; cook stirring for 2 minutes.
- Add in stewed tomatoes, tomato sauce and seasoned salt; bring to a boil over medium heat stirring.
- Reduce heat to low and cook uncovered for 1-1/2 hours stirring occasionally.

RICH BROOKS' DAMN GOOD CHILI
This is my dad's "famous" chili. It is so meaty and yummy. It does not have any beans in it - like traditional Texas chili. The recipe can be cut in half for smaller families - or make the whole batch and freeze the unused portion or use leftovers for chili-cheese dip. I hope you enjoy it as much as I do!

- Chop the onions, peppers, celery stalk, jalapeno, and mince the garlic clove.
- Heat the vegetable oil on med-high heat and saute the onions, peppers, celery stalk, jalapeno, and garlic until they are soft and onions are translucent.
- Add the beef and continue cooking until the beef is no longer pink, adding salt and pepper to taste.
- When finished cooking, spoon any excess oil from beef mixture and transfer the beef mixture to a soup/chili pot.
- In a separate bowl, mix the chili powder, cumin, garlic salt, hot sauce, salt and pepper, and the beer. Let it sit for a few minutes.
- Add the chili powder mixture from the bowl to the beef mixture in the soup pot.
- Next add the water, stewed tomatoes, tomato sauce, tomato paste, diced green chilies, and bay leaf to the pot.
- Cover and cook on low heat for 3 hours, stirring occasionally.
- I serve it with shredded cheese and a dollop of sour cream. It's also good with Fritos, crackers, or as just plain chili!

DARN GOOD HOMEMADE CHILI
Good flavorful homemade chili. The Hubs can eat chili everyday if I would make it. I'm not much of a chili fan, but I ate 2 bowls of this chili.

- 1. In large soup pot, brown ground chuck, stirring to break meat up, add chopped onion and garlic while meat is browning. Once meat has browned, add spices, green chilies, tomato paste and beans; mix well until paste is incorporated. Add stewed tomatoes, diced tomatoes, tomato sauce and V8 juice; mix well. Let simmer over low heat with lid ajar until desired thickness is achieved. Stir occasionally so the chili doesn't stick to bottom of pan.
- 2. I let simmer for 3-4 hrs while I'm on justapinch, mixing it up with my JAP friends. The longer it simmers the better it will taste.

- Serve with a dollop of sour cream and some shredded Cheddar cheese along with cornbread. See recipe below.
- Note: Chili is often best reheated the following day after the ingredients have had time to thoroughly blend. Great make-ahead meal.
