EASY DOUBLE STUFFED BAKED TATORS...
This is a spin on baked potatoe.. but you can use it as an appetizer or a side dish for steaks. The best part about it is.. you dont have the hassel of using a fork and the mess of scooping the fillings into your baked potatoe. Instead you can just use your hands like finger foods.

Steps:
- 1. First you put the potatoes to boil.. cook it till its slighty soft enough for you to scoop out the middle, carefuly not to break the skin.. cause you will use the potatoes skins as bowls to hold the mashed tators after your dont mixing in the ingredients in a BOWL.
- 2. Next, after you scooped out the potatoes from its skin, you have put it in a bowl. Add in the butter and mix in well.. to the texture you like.. I personally like mines on the chunky side.. and then you add in your sour cream and bacon bits and green onions. Also salt and pepper to taste.
- 3. After you are dont incorporating it, you will then scoop it into the potatoe bowls that you saved.. after you are done doing that.. you will then put those little half tators in a baking pan, Next, Sprinkle the shredded cheese that you havent used yet on to the top of the half tators.. then cover the pan with aluminum foil.. and bake for the remaining 15 min.. make sure it doesnt burn.
- 4. After thats done.. I personally like to dallop some sour cream or butter to the top and some freshly crushed black pepper. Enjoy.. this will definately serve 5 ppl. :)
ULTIMATE TWICE BAKED POTATOES
I made these up years ago and have been making them ever since. They are always a big hit. These potatoes make a wonderful side dish for any meal and are terrific heated up the next day for lunch.

- Preheat oven to 350 degrees F (175 degrees C).
- Bake potatoes in preheated oven for 1 hour.
- Meanwhile, place bacon in a large, deep skillet. Cook over medium high heat until evenly brown. Drain, crumble and set aside.
- When potatoes are done allow them to cool for 10 minutes. Slice potatoes in half lengthwise and scoop the flesh into a large bowl; save skins. To the potato flesh add sour cream, milk, butter, salt, pepper, 1/2 cup cheese and 1/2 the green onions. Mix with a hand mixer until well blended and creamy. Spoon the mixture into the potato skins. Top each with remaining cheese, green onions and bacon.
- Bake for another 15 minutes.

A baked version of the favorite twice baked taters everyone loves. I also add in chopped onion and a bit of diced garlic sometimes, too. Great with ribs, chicken, or beef dishes.

- Place potatoes into a large pot and cover with salted water; bring to a boil. Reduce heat to medium-low and simmer until tender, 20 to 25 minutes. Drain and transfer to a large bowl.
- Preheat oven to 350 degrees F (175 degrees C).
- Mash potatoes with 1/4 cup butter until butter is melted. Beat sour cream and cream cheese into potato mixture until smooth; mix in 2 cups Cheddar-Monterey Jack cheese. Spread potato mixture into a 9x13-inch baking dish; sprinkle with remaining 1 cup Cheddar-Monterey Jack cheese, 2 tablespoons butter pieces, and bacon bits.
- Bake in the preheated oven until bubbling, cheese is melted, and edges are crisp, 20 to 25 minutes.

Steps:
- Preheat oven to 425*.
- Pierce potatoes several times with a fork.
- Bake potatoes until tender, about 1 hour.
- Place potatoes on a wire rack and cool slightly.
- In a large skillet, heat oil over medium heat.
- Add red onion; saute until tender, about 3 minutes.
- Add mushrooms and cook, stirring, for 5 minutes.
- Add garlic, lemon juice, dill, salt and pepper.
- Cook for 2 minutes.
- Using a sharp knife, slice potatoes in half lengthwise.
- Using a small spoon, scoop out potato pulp, leaving a small amount attached to the skin to form a shell.
- In a large bowl, combine potato pulp, mushroom mixture, sour cream and parmesan.
- Mix well.
- Spoon potato mixture evenly into shells.
- Place potatoes on a baking sheet.
- Bake until heated through, about 20 minutes.
- Serve immediately.
