DOUBLE CHOCOLATE HOLIDAY BISCOTTI

For me, the combination of chocolate and citrus during the holidays is a given. I packed that combo into these decadent biscotti that are perfect for dipping in an afternoon coffee or evening vin santo.

Double Chocolate Holiday Biscotti image

Steps:

  • Preheat the oven to 350 degrees F. Line a rimmed baking sheet with parchment paper, dust with 1/4 cup flour and set aside.
  • In a medium bowl, combine the sugar, butter, orange marmalade, orange zest and salt. Using a handheld mixer, beat on medium speed until the mixture is smooth, light and fluffy, about 2 minutes. Beat in the eggs one at a time. Add the remaining 2 cups of flour, cocoa powder and baking powder and beat until just blended. Using a rubber spatula, stir in the chocolate chips.
  • On the prepared pan, form the dough into a 3-by-13-inch log. (Using a small offset spatula or dusting your hands with flour will help keep the dough from sticking to your hands.) Bake until the log is firm to the touch, cracked on top and looks dry, about 35 minutes. Cool for 30 minutes on the tray.
  • Place the log on a cutting board and using a serrated knife, cut the log on a diagonal into 1/2-inch slices. Arrange the biscotti cut-side down on the tray. Bake until they are a dry and fragrant, an additional 20 to 25 minutes. Transfer the biscotti to a cooling rack and cool completely.

Dark-Chocolate Cranberry Biscotti image

Steps:

  • Heat oven to 350°F. Line cookie sheet with parchment paper; spray paper lightly with cooking spray.
  • In large bowl, stir together flour, sugar and baking powder. Stir in chocolate chips and dried cranberries.
  • In medium bowl, beat water, vanilla, egg and egg white with whisk until well blended. Pour wet ingredients into dry ingredients; stir until all dry ingredients are moistened. (Dough will be crumbly.)
  • Onto floured surface, carefully turn out crumbly dough; knead until a solid dough forms. Shape dough into 16-inch log; place on cookie sheet. Flatten log until about 1/2 inch thick.
  • Bake 25 minutes. Transfer biscotti loaf to cooling rack; cool 10 minutes.
  • Cut loaf diagonally into 1-inch slices. Return slices, cut side down, to cookie sheet.
  • Reduce oven temperature to 325°F; bake 10 minutes. Turn slices; bake 10 minutes longer. Place slices on cooling rack; cool completely, about 20 minutes. (Biscotti will harden as they cool.)

Steps:

  • In a large bowl, cream butter and sugar until light and fluffy. Add eggs, one at a time, beating well after each addition. Beat in vanilla. Combine flour and baking powder; gradually add to creamed mixture and mix well. Stir in cranberries and vanilla chips. Divide dough into three portions. , On ungreased baking sheets, shape each portion into a 10-in. x 2-in. rectangle. Bake at 350° for 20-25 minutes or until lightly browned. Steps:

  • In a large mixing bowl, cream butter and sugar with an electric mixer until light and fluffy. Gradually beat in cocoa and baking powder. Beat for 2 minutes. Beat in the eggs one at a time. Stir in flour by hand. Mix in white chocolate and chocolate chips. Cover dough, and chill for about 10 minutes.
  • Preheat oven to 375 degrees F (190 degrees C). Divide dough into two parts, and roll each part into a 9 inch long log. Place logs on lightly greased cookie sheet, about 4 inches apart. Flatten slightly.
  • Bake for 20 to 25 minutes, or until toothpick inserted in center comes out clean. Cool on cookie sheet for 5 minutes, then carefully transfer to a wire rack to cool for one hour.
  • Cut each loaf into 1/2 inch wide diagonal slices. Place slices on an ungreased cookie sheet, and bake at 325 degrees F ( 165 degrees C) for 9 minutes. Turn cookies over, and bake for 7 to 9 minutes. Cool completely, then store in an airtight container.

Steps:

  • Preheat oven to 350°F. Line heavy large baking sheet with parchment paper. Combine 2 1/2 cups flour, 1 teaspoon baking powder and 1/2 teaspoon salt in medium bowl; whisk to blend. Using electric mixer, beat sugar, butter, 2 eggs and almond extract in large bowl until well blended. Mix in flour mixture, then dried cranberries. Divide dough in half. Steps:

  • Preheat oven to 350 degrees. Line a 12- by 17-inch baking sheet with parchment paper or nonstick liner. Sift together the flour, cocoa, salt and baking soda; set aside.
  • Using a heavy-duty electric mixer, cream together the brown sugar, granulated sugar and butter for 3 to 5 minutes at medium speed. Add vanilla extract and espresso. Mix for 10 seconds. Add eggs one at a time, mixing for 10 seconds at medium-low speed after each addition. Add sifted flour mixture and mix at low speed until dough comes together, 1 to 2 minutes. Add chocolate chips and mix just until chips are evenly incorporated, 15 to 20 seconds.

  • Preheat oven to 325 degrees. Using a sharp serrated knife, cut logs into 1/4-inch to 1/2-inch slices. Cranberry Chocolate Chip Biscotti image

Steps:

  • Preheat the oven to 325°F. Line a baking sheet with parchment paper.
  • Whisk together the flour mix, xanthan gum, baking powder, and salt. Set aside.
  • In a small bowl, whisk together 5 tablespoons of the orange juice with the cornstarch. Set aside.
  • In the bowl of a stand mixer fitted with the paddle attachment, combine 1 cup of the sugar with the remaining 1/2 cup orange juice, mixing on medium speed for about 20 seconds. Add the canola oil and vanilla and mix for about 1 minute. Add the cornstarch mixture, and mix until combined, about 20 seconds.
  • Add the flour mixture in two batches, mixing on low speed. Fold in the cranberries and chocolate chips using either a wooden spoon or a rubber spatula.
  • Dust the parchment paper with a little flour mix, and transfer the dough to the lined baking sheet using a rubber spatula. Sprinkle a little more fl our mix onto the dough, flour your hands, and divide the dough in half. Shape the dough into two mounded logs on the baking sheet. The dough will be sticky, so make sure your hands are really well floured. The logs should be 8 inches long by 4 inches wide by 1 inch high.
  • Using a pastry brush, brush the tops of the logs liberally with the rice milk. Then sprinkle the tops with the remaining 2 tablespoons sugar.
  • Bake in the center of the oven for 35 minutes.
  • Remove the baking sheet from the oven and reduce the temperature to 300°F. Let cool for 20 minutes, then lift the logs off the parchment paper (if they stick, use a frosting spatula to gently loosen them by sliding it gently under the bottom). Slice each log diagonally into 12 slices. I cut each log in half first, then into quarters, and then each quarter into 3 slices. I use a sharp serrated knife to do this.
  • Return the slices to the baking sheet. Bake for 20 minutes, remove from the oven, flip the cookies, and bake for 20 minutes more, or until lightly golden. Remove from the oven and transfer the biscotti to a cooling rack. They will become extra crisp once they cool.
