Steps:
- Cut the avocado in half and remove the pit. Place the halves face up on a muffin tin so they won't tip over.
- Pour the beaten egg into each hole (one egg fills two halves). Sprinkle with grated cheese, garlic powder, salt, and pepper.
- Bake at 375° F for 15 to 20 minutes or until desired egg hardness.

- Preheat oven to 425 degrees F (220 degrees C).
- Crack the eggs into a bowl, being careful to keep the yolks intact.
- Arrange avocado halves in a baking dish, resting them along the edge so avocado won't tip over. Gently spoon 1 egg yolk into the avocado hole. Continue spooning egg white into the hole until full. Repeat with remaining egg yolk, egg white, and avocado. Season each filled avocado with chives, parsley, sea salt, and pepper.
- Gently place baking dish in the preheated oven and bake until eggs are cooked, about 15 minutes. Sprinkle bacon over avocado.

- Next time you make an egg-in-a-hole, consider using avocado instead of bread: Cut an avocado in half, remove the pit and scoop out about 1 tablespoon of flesh from each half. - With a biscuit cutter or the rim of a glass, press a hole in the center of the slice of bread.
- Heat a skillet over medium-low heat and melt in the butter. When the butter is all spread out, place the slice of bread in the skillet and crack the egg straight into the center of the hole.
- Cook until the egg sets a bit on the bottom, 30 to 45 seconds. Sprinkle the egg with salt and pepper. After about a minute, flip it over with a spatula and salt and pepper the other side.

- In a small bowl, mash avocado; stir in salt, pepper and, if desired, pepper flakes. , Using a paring knife or round cutter, enlarge center hole to at least 1-1/2-in. in width. Spread butter on cut side of bagel. Place bagel, butter sides down, in a skillet over medium heat. Cook until golden brown, 1-2 minutes; remove to plate. I saw a picture of this and can't wait for my avocado trees to produce this year. This may become a regular breakfast. Here in Florida the avocados are large and buttery. One avocado will yield 2 thick slices. If you use the Haas grenades, you, likely will need 2 avocados.

- Heat a non-stick skillet to medium low heat.
- Lightly spray with oil.
- Slice an avocado with the skin ON lengthwise, forming 1 or 2 thick slice in the middle.
- You will have some leftover avocado pieces - so, Make some bonus guacamole if you want! Guacamole for Breakfast? Why NOT?.
- Remove the seed and use a small cookie cutter to make a hole in the center of your thick slice big enough for your egg.
- Place the avocado slice in the pan. Crack your egg into the center of the hole.
- Cover and cook for a minute or two, until the egg is as you like it.
- Season with salt and pepper and serve.
- Alternatively you can leave the skin on the avocado and place the egg(s) in the hole and bake at 350°F This takes much longer, about 30+ minutes. However, if you were feeding a crowd would be easier.
