DOUBLE FUDGE CAKE WITH CHOCOLATE BUTTERCREAM FROSTING

Double Fudge Cake with Chocolate Buttercream Frosting image

Steps:

  • Preheat the oven to 350 degrees. Butter and flour a 12 by 18 by 1 1/2-inch sheet pan and set aside.
  • In a medium bowl, sift together the flour, cocoa, baking soda, and salt.
  • In the bowl of an electric mixer fitted with a paddle attachment, cream the butter and sugars on high speed until light, approximately 5 minutes. Add the eggs, one at a time, and the vanilla and mix well. Combine the buttermilk, sour cream, and coffee. On low speed, add the flour mixture and the buttermilk mixture alternately in thirds, beginning with the buttermilk mixture and ending with the flour mixture. Mix the batter only until blended.
  • Pour the batter into the prepared pan and smooth the top with a spatula. Bake in the center of the oven for 25 to 30 minutes, or until a toothpick comes out clean. Cool to room temperature before frosting.
  • Place the chocolate chips and heavy cream in a bowl set over a pot of simmering water, stirring occasionally, until the chips are completely melted. Off the heat, add the corn syrup and vanilla and allow the chocolate mixture to cool to room temperature. In the bowl of an electric mixer fitted with the whisk attachment, whisk the chocolate mixture and softened butter on medium speed for a few minutes, until it's thickened.
  • Spread the frosting evenly on the cake. Have the children decorate the cake with M&M's.

1/2 pound (2 sticks) unsalted butter, at room temperature
1 cup granulated sugar
1 cup light brown sugar, packed
3 extra-large eggs, at room temperature

1 1/2 cups buttermilk, at room temperature
3/4 cup sour cream, at room temperature
3 tablespoons brewed coffee
24 ounces semisweet chocolate chips
1 1/2 cups heavy cream
2 tablespoons light corn syrup
1/2 teaspoon pure vanilla extract
4 tablespoons (1/2 stick) unsalted butter, at room temperature

CHOCOLATE PRALINE LAYER CAKE

This is a wonderful cake we often have at special occasions. It is a Pillsbury bake off winner from many years ago.

Chocolate Praline Layer Cake image

Steps:

  • Heat oven to 325 degrees.
  • In a heavy saucepan, combine butter, 1/4 cup whipping cream and brown sugar.
  • Cook over low heat just until butter is melted, stirring occasionally.
  • Pour into two 9-inch round cake pans; sprinkle evenly with chopped pecans.
  • In a large bowl, combine remaining cake ingredients at low speed until moistened; beat 2 minutes at high speed.
  • Carefully spoon batter over pecan mixture around edges of pan; spoon remaining batter in center of pans.
  • Bake at 325 degrees for 35 to 45 minutes, or until done.
  • Cool 5 minutes; remove from pans and cool completely.
  • In a small bowl, beat 1 1/4 cup whipping cream until soft peaks form.
  • Blend in powdered sugar and vanilla; beat until stiff peaks form.
  • To assemble cake, place 1 layer on serving plate, praline side up.
  • Spread with half of whipped cream.
  • Top with second layer, praline side up; spread top with remaining whipped cream.
  • Garnish with pecan halves and chocolate curls if desired.
  • Store in refrigerator.

Easy Praline Pecan Fudge image

Steps:

  • Spray bottom and sides of 8-inch square pan with cooking spray. In 3-quart saucepan, cook brown sugar, 3/4 cup butter and the milk over medium heat about 2 minutes, stirring constantly, until butter is melted and sugar is dissolved. Heat to full rolling boil; boil and stir 1 minute. Remove from heat.
  • Add powdered sugar and bourbon. Beat with electric mixer on low speed 1 minute. On medium speed, beat 10 minutes or until mixture begins to hold its shape and is warm to the touch. Quickly stir in pecans.
  • Spread in pan. Refrigerate 2 hours or until firm. Cut into 8 rows by 8 rows. Store tightly covered at room temperature.

  • Preheat the oven to 350 degrees F. Line an 8×2-inch round cake pan with a Silpat silicone baking liner. Set aside.
  • In a bowl, whisk the flour, cocoa powder, baking soda, and salt. In a large bowl, combine the melted butter and brown sugar with a rubber spatula. Add the eggs and vanilla, stirring until well blended. All at once, add the flour mixture and stir just until all the flour is moistened. Pour the hot water over the batter and stir just until it’s incorporated and the batter is smooth. Scrape the batter into the prepared pan.
  • Bake at 350 degrees F. until a toothpick inserted in the center comes out clean, about 35 to 40 minutes. Let cool in the pan on a baking rack for 10 minutes. Run a thin knife around the edge and invert the cake. Turn it over again onto the rack and let cool completely.
  • Once the cake is cool, make the ganache: Put the chocolate in a medium heatproof bowl, metal or glass. In a small saucepan, bring the cream to a boil. Pour the hot cream over the chocolate and whisk gently until the chocolate is completely melted and smooth.
