MARIA'S TACO XPRESS POLLO GUISADO

I got this from Guy Fieri's cookbook, Diners, Drive-Ins and Dives. Maria's Taco Xpress is a South Austin institution and it's fast food, Texas style. The locals rave about the food. Guy says the pollo guisado is a little bit sweet, spicy, tender, and crazy good!

Steps:

  • Put the chicken in a saucepan with salted water to just cover. Bring to a simmer and cook until just cooked through, about 25 minutes. Let cool, then shred the chicken.
  • Place the tomatoes, chipotle sauce, cumin, garlic powder, 3/4 teaspoons pepper, 3/4 teaspoons salt, and 1 cup water in a blender. Puree until smooth.
  • Heat the oil in a saucepan over medium heat. Add the onion, and cook until the onion is golden brown, about 7-10 minutes.
  • Add the chipotle mixture and bring to a simmer. Add the chicken and simmer unil the sauce thickens and the chicken is tender, about 15 minutes. Season with salt and pepper to taste.
  • Serve the pollo guisado in crisp taco shells with shredded lettuce, diced tomato and shredded Cheddar cheese. Enjoy!

  • Optional ingredients: homemade tomato sauce, bell peppers, mushrooms, or your favorite cheese.
  • For the hoagies:.
  • Preheat frying pan over medium-high heat. Cut the hoagie rolls horizontally to open up and make a pocket. Add the olive oil to the pan and stir in the onions. Put the steak on top of onions and add 1/2 ozs of the butter. Cover the pan for 21/2 minutes. The meat should have a cooked appearance on top and rare underneath. Using a fork and spatula separate steak from the onions. When the meat is cooked add the salt, remaining butter, and provolone. Cover to the pan to melt the cheese. Divide the steak mixture among the hoagie rolls and serve. If you like, you can add the optional ingredients to the steak mixture serving.

Steps:

  • Bring the vinegar to a boil in a mdeium saucepan. As soon as the vinegar starts to boil, add the Uncle Lou's Corruption and stir to dissolve completely. remove from the heat and stir in the hot sauce and honey. Put nto sealable containers and remember to shake well before using. Store for up to 1 month.

2 cups vinegar, red wine
1/3 cup seasoning, Uncle Lou's Corruption (available online)

Paul's Crafty Mac N Cheese With Pancetta image

Steps:

  • Preheat oven to 375 degrees F.
  • Bring a large pot of water to a boil and cook ziti until al dente. Strain and rinse in cool water.
  • In a saute pan over medium-high heat, cook pancetta until it is crispy and the fat has rendered.
  • In the same pan, add all of the cheeses and the cream and whisk until blended. Season with salt and pepper, to taste.
  • Slowly add the cooked ziti to the cheese mixture, stirring gently.
  • Transfer the ziti and cheese mixture to a large baking dish or cast iron skillet. Top off with more cheese and bake for 24 to 30 minutes.

  • Preheat oven to 400°F.
  • Cook pasta in salted boiling water til andante.
  • Heat the olive oil in large skillet over med-high heat.
  • Add garlic and onion and saute for 3 minutes or until the onion is soft.
  • Add the chicken to the skillet and cook until the chicken is done.
  • Add the artichokes, salt & pepper & white wine.
  • Toss and coat everything.

Pannekoeken (Apple Pie Pancake/German) image

Steps:

  • Preheat the oven to 400 degrees F.
  • Add the cinnamon, nutmeg and apples to a pan. Saute the apples over medium-low heat until slightly soft, 3 to 5 minutes.
  • Meanwhile, prepare the batter. Mix the milk, vanilla and eggs in a bowl. Add the flour, granulated sugar and salt and whisk lightly (some lumps are ok but not too many).
  • Increase the heat under the apples to medium and add the brown sugar and butter. Cook until a syrup forms, about 3 minutes, then add the batter all at once to the center of the pan. Swirl the apple syrup mix through the batter, using a heatproof spatula, to form ribbons (you do not want to fully combine the apple-sugar syrup into the batter). Cook until small bubbles form around the edge.
  • Finish cooking the pannekoeken in the oven, 12 minutes. To serve, invert a 12-inch plate over the pan and flip the pan to turn out the pannekoeken. Sprinkle with powdered sugar, top with whipped cream and enjoy!

Cap'n Crunch French Toast image

Steps:

  • Pour Cap'n Crunch into a gallon-size ziplock bag and crush to a course meal -- make sure there are a few good size pieces in the mix. Pour into a 9x13 pan in order to dredge properly.
  • Combine eggs, sugar, cream, vanilla, and spices in a large bowl. It will have the consistency of custard.
  • Soak each slice of Texas Toast in wet ingredients, 30 seconds each side. Be sure the edges are moist, too.
  • Dredge in Cap'n Crunch, lightly press onto each side, and around the crust. Place on parchment paper until all slices are coated.
  • Heat 2 tbs. butter in large skillet, then gently place slices in pan; two at a time.
  • Cook three minutes per side. Place on parchment covered baking pan in a warm oven.

  • Heat the olive oil in a large saute pan over medium heat.
  • When hot, add mushrooms and saute until softened, about 3-5 minutes.
  • Add grappa - ignite to burn off alcohol.
  • Once alcohol has burned off, add heavy cream and orange and lemon zest.
