Steps:

  • Preheat the oven to 425 degrees F (220 degrees C). Line a large baking sheet with parchment paper.
  • Combine flour, baking powder, baking soda, salt, cinnamon, cloves, allspice, and ginger in a large bowl. Mix butter into the flour mixture with your hands until it resembles coarse bread crumbs.
  • Combine pumpkin, brown sugar, cream, and egg in a medium bowl with a whisk. Fold into flour mixture with a large spoon until the dry bits at the bottom of the bowl have been incorporated.
  • Pat the mixture into a ball with your hands and turn out onto a lightly floured surface. Continue to shape into a ball; gently press down and out, forming the dough into a flattened circle, about 1 to 1 1/2 inches thick. If the edges start to crack, just place the palm of your hand against the edge and gently press the dough back in.
  • Dust a large, sharp knife with flour and cut the dough into 6 triangles. Slide the knife under each to help you lift and transfer them to the prepared baking sheet.
  • Bake in the preheated oven until scones begin to turn light brown in color, 12 to 16 minutes. Place on a wire rack to cool.
  • While scones are cooling, mix confectioners' sugar, milk, cinnamon, nutmeg, allspice, ginger, and cloves for glaze together in a small bowl. Drizzle over scones while they are still warm.

Steps:

  • For Crust:
  • Mix first 3 ingredients in large bowl. Add shortening; cut in using pastry blender or 2 knives until mixture resembles coarse meal with a few pea-size pieces. Mix in enough ice water by tablespoonfuls to form moist clumps. Gather dough. Divide into 2 pieces, 1 slightly larger than the other. Flatten each into disk. Wrap each disk in plastic; chill at least 1 hour. (Can be made 1 day ahead. Keep refrigerated. Let dough soften slightly at room temperature before rolling out.)
  • For Filling:
  • Toss apples and lemon juice in large bowl. Melt butter in heavy large pot over medium heat. Add apples and brown sugar; cook until apples are just tender, stirring occasionally, about 15 minutes. Using slotted spoon, return apples to same bowl. Boil juices in pot until thick, about 15 minutes. Pour juices over apples; cool completely. Mix in flour and five-spice powder.
  • Position rack in lowest third of oven; preheat to 375°F. Place baking sheet on rack. Roll out larger dough disk on floured surface to 12-inch round. Transfer to 9-inch glass pie dish; trim overhang to 1 inch, if necessary. Spoon filling into crust. Roll out smaller dough disk to 10-inch round. Drape over filling. Press top and bottom edges of dough together; crimp decoratively. Cut small hole in center of crust. Brush crust with cream. Sprinkle with 1/2 teaspoon sugar.
  • Place pie on baking sheet in oven; bake until crust is golden brown and filling bubbles thickly, about 1 hour 5 minutes. Transfer pie to rack and cool. Serve slightly warm or at room temperature.

2 tablespoons sugar
3/4 teaspoon salt

Steps:

  • Preheat the oven to 400°F. Using a food processor if you have one, whiz together the flour, baking powder, salt, butter, and sugar until the mixture resembles fine bread crumbs. (Otherwise, sift the flour, salt, and baking powder into a mixing bowl, rub in the butter with your fingers, then stir in the sugar.)
  • In a separate bowl, beat together the egg, vanilla, and cream, then add to the flour mixture and bring together with your hands to form a soft dough.
  • Turn the dough out onto a floured surface and knead very briefly, for 10 seconds or so, to make it a little smoother. Now, using a little more flour, pat or gently roll out to a thickness of about 1 1/2 inches.
  • Using a 2 1/2-inch biscuit cutter (or a larger one, if you like), cut out about 8 disks of dough - pressing the cutter straight down, rather than twisting it, as this gives the scones a better chance of rising straight up.
  • Lay the disks on a lightly greased baking sheet, brush the tops with milk, and bake for about 15 minutes, or a little longer if the scones are large. To check that they are cooked, insert a wooden toothpick into the middle; it should come out clean.
  • Transfer to a wire rack to cool for a few minutes, then serve warm.

2 1/4 cups plus 2 tablespoons (10.6 ounces/300g) all-purpose white flour, plus extra for dusting
2 teaspoons (0.28 ounce/8g) baking powder
A good pinch of salt
1/3 cup (2.6 ounces/75g) unsalted butter, at cool room temperature (neither fridge-cold nor soft), cut into cubes
3 1/2 tablespoons (1.8 ounces/50g) superfine sugar
1 medium free-range egg
1 teaspoon pure vanilla extract
1/2 cup heavy cream
A little milk, for brushing

CHINESE FIVE-SPICE STEAK WITH ORANGES AND SESAME BROCCOLINI

Steps:

  • Finely grate 2 tsp. orange zest from 1 orange into a small bowl. Cut all oranges in half; set aside.
  • Add five-spice powder, brown sugar, and 2 tsp. kosher salt to bowl with zest and stir to combine. Rub steak all over with spice mixture.
  • Heat vegetable oil in a large heavy skillet (preferably cast iron) over high. Cook steak, turning often, until browned on all sides and an instant-read thermometer inserted into the center registers 130˚F for medium-rare, 15-20 minutes total. After steak has cooked for about 5 minutes, nestle orange halves cut side down around steak and cook until well browned, about 5 minutes. Transfer oranges to a plate. Transfer steak to a cutting board and let rest 10 minutes before slicing.
  • Arrange broccolini in an even layer in same skillet and heat over high. Cook, undisturbed, until well charred, about 3 minutes. Toss and continue to cook until tender and slightly charred all over, about 3 minutes more. Transfer to a large bowl. Squeeze in juice from 2 orange halves over. Add sesame oil, red pepper flakes, 1 tsp. sesame seeds, and remaining 1/4 tsp. kosher salt and toss to coat.
  • Transfer steak to a platter. Arrange broccolini mixture alongside. Top with scallions, sea salt, and remaining sesame seeds. Serve with charred orange halves to squeeze over, rice, and hot sauce alongside, if desired.

3 small oranges (about 1 lb.)
1 1/2 tsp. Chinese five-spice powder
1 tsp. light brown sugar
2 1/4 tsp. kosher salt, divided
1 hanger steak (about 1 1/4 lb.), cut in half lengthwise, center gristle removed
2 Tbsp. vegetable oil
3 bunches broccolini (about 1 1/2 lb.), trimmed, halved lengthwise if large
2 Tbsp. toasted sesame oil
1/2 tsp. crushed red pepper flakes
1 tsp. toasted sesame seeds, plus more for serving
3 scallions, thinly sliced
Flaky sea salt
Steamed rice and hot sauce (for serving; optional)

Steps:

  • Preheat oven to 350°F. Butter a 10- by 2-inch round cake pan. Line bottom with a round of parchment paper and butter the paper.
  • Put chocolates in a large shallow bowl. Bring water, 1/2 cup sugar, and spice to a boil, stirring until sugar is dissolved, then pour through a fine sieve set over chocolates. Stir until smooth, then stir in butter until smooth.
  • Beat eggs with remaining 3/4 cup sugar until increased in volume and pale and beaters leave a distinct trail (4 to 5 minutes in a standing mixer or 15 to 20 with a hand-held). Stir 1/4 of eggs into chocolate to lighten and fold in remainder gently but thoroughly (fold 1 to 2 minutes).
  • Pour batter into pan and smooth top. Put pan in a water bath and bake in middle of oven 40 to 45 minutes, or until a tester inserted in center comes out with moist crumbs adhering. Remove from water bath and cool 2 hours in pan on a rack.
  • Unmold cake by running a thin knife around edge, then heating pan 5 to 10 seconds on burner set at moderately low. Invert cake plate over pan and flip cake onto plate. (If cake sticks, tap bottom of pan with a knife handle. If that doesn't work, heat pan again.) Peel off paper.
  • Serve cake in thin slices.

7 ounces fine-quality unsweetened chocolate, finely chopped
6 ounces fine-quality bittersweet chocolate, finely chopped
1/2 cup water
1 1/4 cups sugar
