FLATBREAD TACOS
I just love those frozen dinner roll dough balls you can get in the frozen food section of your grocery store. They make excellent dinner rolls, but they also make super slider buns, hot dog buns, sandwich buns, cinnamon rolls and monkey bread just to name a few! We use them to make our own individual custom made...

Steps:
- 1. Remove the dinner roll dough balls from the freezer. Place on a lightly greased baking sheet and cover loosely with plastic wrap. Let them rise all day long.
- 2. Cook your ground beef until it is completely done. Drain well and add your favorite taco seasoning. Cover and place in fridge until dinner time.
- 3. Prep all the toppings. Place in bowls, cover and place in fridge until dinner time.
- 4. When you are ready to begin eating set out all of your toppings. Re-heat the ground beef. Preheat a skillet or grillpan on medium.
- 5. Flour your cutting board or your countertop. Take a dough ball and flip in onto the flour. Roll out to desired size - somewhere between 6" and 8". Once you have the desired shape place it in the hot skillet or grillpan. Cook for a minute or so on each side. Place on a towel lined plate and cover to keep warm. Finish cooking the remainder.
- 6. Set out the place of flatbread taco shells and let everyone create their own.
- 7. I like this because I can prep everything the day before and it's ready to go. The bread dough balls do their thing all day long while I'm doing my thing! At go time it's super quick and easy and everyone will have great fun creating their own taco.
GRILLED STEAK NAAN TACOS

- For the steak: Heat a grill pan over medium heat. Drizzle the steak with the olive oil and season with the ancho chile powder, 2 teaspoons salt and 1 teaspoon pepper. Grill the steak to the desired temperature, 3 to 4 minutes per side for medium rare. Set aside to rest while you make the salsa.
- For the grilled avocado-corn salsa: Brush the corn, jalapeño and red onion with the olive oil and sprinkle with 1 teaspoon salt and 1/2 teaspoon pepper. Grill until the vegetables are lightly charred, about 6 minutes. Slice the corn off the cob and chop the jalapeño and onion. Toss the vegetables with the cilantro, avocado and lime zest and juice in a bowl. Taste and adjust the seasoning as needed.
- For the assembly: Slice the steak thinly against the grain. Build a taco by grabbing a warm naan and adding a tablespoon of the chipotle mayo, if using. Top with some of the steak and a spoonful of the salsa. Top with some crumbled queso fresco and serve with a lime wedge.

- In a small bowl, combine the flour, baking powder and salt; stir in hot water to form a soft dough. Cover and let stand for 1 hour., In a small skillet, cook beef over medium heat until no longer pink; drain. Stir in taco seasoning and water; simmer, uncovered, for 10 minutes. Keep warm., Divide dough in half. On a lightly floured surface, roll each portion into a 4-in. circle. , In an electric skillet, heat 1 in. of oil to 350°. Was looking for a quick and easy dinner for me and the man. Had leftover pizza dough that I like to use for flatbreads. It is simple to add veggies to meat mixture and play with the flavors! Feel free to add your favorite hot sauce for a spicier kick. Serve with a side salad to complete the meal. You can switch out ingredients as you like; turkey or chicken for beef or experiment with different cheeses. Fold flatbread like a taco and enjoy!

- Heat a large skillet over medium-high heat. Cook and stir beef in the hot skillet until browned and crumbly, 5 to 7 minutes; drain and discard grease. Add yellow onion, garlic, taco seasoning, and red pepper flakes; cook and stir until onion is tender, about 10 minutes.
- Heat oil in a separate skillet over medium heat.

FRY BREAD TACOS II
A yummy twist to an old favorite. The fry bread makes the difference. It's a popular request at my house. I do up everything but the fry bread in advance, and just heat up before serving. You can also top with other of your favorite taco toppings, such as onion, sour cream, or guacamole. Leftover fry bread can be used as dessert - coat it with cinnamon and sugar, and drizzle with honey.

- Combine beans and 2 tablespoons of picante sauce in a small saucepan over low heat. Cook until heated through, about 5 minutes.
- Combine ground beef and taco seasoning mix in a large skillet over medium-high heat; cook until browned, 5 to 8 minutes. Cover, and keep warm while you prepare the fry bread.
- In a medium bowl, stir together the flour, baking powder, and salt. Stir in milk and mix until the dough comes together. Add more flour if necessary to be able to handle the dough.
- On a floured surface, knead the dough until smooth, at least 5 minutes. Let the dough rest for 5 minutes. Break off 3/4 cup sized pieces of dough, and shape into round discs 1/4 inch in thickness, making a thinner depressed area in the center.
- Heat 1 1/2 inches oil in a large, deep heavy skillet to 365 degrees F (180 degrees C). Fry dough in the hot oil until golden on both sides, about 3 minutes per side. Drain on paper towels.
- Top fry bread with beans, ground beef, lettuce, and Cheddar cheese. Spoon picante sauce on top.

- Place the ground beef in a skillet and bring over medium heat. Cook, using a wooden spoon to break up the beef into small pieces, until the meat is browned and cooked through. Add the corn kernels and stir together. Cook for another minute. Add the water and taco seasoning and stir together until well combined. Remove from heat and set aside.
- When the oven is pre-heated, place the flatbread directly onto the middle rack and bake for about 4 minutes until it stands firm when lifted.
