FRIED SWEET BANANAS
A very traditional breakfast or dessert in northeast Brazil, bananas or plantains are fried in butter and coated with cinnamon-sugar. Delicious with vanilla ice cream too.

Steps:
- Preheat your oil in a heavy-based pot for deep frying to 365 degrees F. In a large mixing bowl combine flour, cornstarch, baking powder, sugar, salt, and cinnamon. Make a well in the center and add the yolks and club soda. Using a whisk, stir from the inside working your way out, slowly incorporating the dry ingredients without forming any lumps. Peel the bananas and dip in the batter and coat well. Fry in hot oil until batter is puffy and golden brown. Drain on paper towels when done. We served this with ice cream, chocolate sauce, and chocolate cake. It suggests serving it with ice cream, banana chips, and caramel sauce. Honestly, you could serve it with cough syrup and it would be delicious.

Steps:
- For the chocolate sauce: Combine the chocolate and 1/4 cup water in a heavy small saucepan. Stir over medium-low heat until the sauce is melted and smooth. Remove from the heat. Stir in small pinch cayenne pepper. Set aside.
- For the bananas: Place the brown sugar in a pie dish or on a plate. Toss the bananas in the brown sugar until nicely coated. Melt the butter in a heavy large skillet over medium-high heat until the butter becomes golden brown. Add the bananas to the hot pan cut-side down. Turn the bananas over as soon as they are golden brown and the sugar forms a crunchy coat on the bananas, about 30 seconds per side (do not allow bananas to become soft and mushy). Divide the bananas between 2 shallow bowls or plates. Spoon the chocolate sauce over the bananas. Sprinkle with the toasted almonds, and serve immediately.
- Cook's Notes: To toast the almonds, arrange them in a single layer on a baking sheet. Bake in a preheated 350 degrees F oven for 6 to 8 minutes until lightly toasted. Cool completely before using.
- An alternate way to melt the chocolate is to combine the chocolate and water in a small metal bowl over a small saucepan of simmering water, and stir the chocolate mixture until melted and smooth. Remove the bowl from over the water and set aside.

FRIED CARAMELIZED BANANAS WITH ICE CREAM
Steps:
- Make the Caramel
- Place a nonstick skillet over medium-high heat and add the brown sugar and butter. Allow both to melt and mix well using a heatproof silicone spatula.
- Fry the Bananas
- When the caramel is hot and bubbly, add the bananas, cut side down, along with the pecans. Allow the bananas to cook for about 3 minutes before turning them over. The cut side should have a deep golden brown color and a slightly crispy texture. (Depending on the ripeness of the banana, they may break. Don't worry about this; they will still be delicious.)
- Cook for another 2 minutes, using a spoon to drizzle the caramel sauce over the bananas to keep infusing them with caramel flavor.
- Serve
- Place the bananas on a serving dish or platter, top with scoops of ice cream, and drizzle the caramel sauce and nuts all over it.
- COOKING NOTES
- ADVANCE PREPARATION
- The bananas are best served just after they are made. They will lose their crispy caramelized texture as they sit but will still retain their flavor so long as they are not refrigerated.
- If you must make them in advance, the bananas can be held in a warm oven for a few hours.

- Coarsely chop the chocolate and place it in a bowl. Heat the cream in a small saucepan just to a boil, then let it sit for a minute or two. Pour it over the chocolate. Add the cocoa, sugar and salt and stir until the chocolate has melted and the mixture is smooth. Let the chocolate sauce cool slightly.
- Split the bananas in half lengthwise. Place the sugar on a shallow plate, then dip the cut side of the bananas into the sugar so that the surface of the banana is completely covered in sugar.
- Place the butter in a frying pan over medium-high heat. Place the bananas, sugar side down, into the hot pan. Fry them without turning, 1-2 minutes each, or until they start to turn golden brown.
- Spread the chopped nuts on a shallow plate or cutting board. Carefully remove the bananas from the pan and place them on the nuts, fried side down, so that the nuts stick to the surface.
