Steps:
- Heat the olive oil in a saute pan large enough to hold all the tomatoes in one layer. Add the garlic to the oil and cook over medium heat for 30 seconds. Add the tomatoes, basil, parsley, thyme, salt, and pepper. Reduce the heat to low and cook for 5 to 7 minutes, tossing occasionally, until the tomatoes begin to loose their firm round shape. Sprinkle with a little fresh chopped basil and parsley and serve hot or at room temperature.
ROASTED TOMATOES WITH GARLIC, GORGONZOLA AND HERBS

Steps:
- Preheat the oven to 375 degrees F.
- Using a teaspoon or grapefruit spoon, remove the seeds from the tomatoes. Place the tomato halves, cut side down, on paper towels to drain, about 5 minutes.
- In a large bowl, mix together 2 tablespoons of the olive oil, garlic, salt, and pepper. Using clean hands, gently toss the drained tomato halves in the oil mixture until coated. Marinate the tomatoes for 10 minutes.
- In a small bowl mix together the bread crumbs and Gorgonzola cheese.
- Place the marinated tomato halves, cut side up, on a parchment paper-lined baking sheet. Fill each tomato half with the bread crumb filling. Drizzle with the remaining olive oil. Bake for 20 to 25 minutes until slightly softened and the underside of the tomatoes are brown.
- Arrange the cooked tomatoes on a serving platter. Sprinkle with the chopped parsley and serve immediately.

- Preheat an oven to 450 degrees F (230 degrees C). Place a piece of aluminum foil over a baking sheet.
- Place the tomatoes and garlic into a mixing bowl. Drizzle with olive oil, and toss until evenly coated. Season to taste with salt and pepper, then spread evenly onto the prepared baking sheet.
- Bake the grape tomatoes in the preheated oven until the skins pop and start to brown, 15 to 20 minutes.

Steps:
- Preheat broiler to medium high.
- Cut plum tomatoes in half lengthwise. Squeeze or scoop out most of the pulp and seeds. Place the tomatoes flesh side up in a heat safe dish and season them with salt and pepper.
- In a bowl combine the bread crumbs, cheese, thyme, garlic and olive oil. Season mixture with pepper
- and sprinkle over the tomatoes.
- Place tomatoes under the broiler for 5 minutes or until golden brown.

Steps:
- Place an oven rack 6 inches from the top of the oven, preheat the broiler, and and arrange tomato slices on a foil-lined baking sheet.
- Combine olive oil, basil, oregano, garlic, salt, and pepper in a bowl and brush onto the tops of the tomatoes.
- Combine bread crumbs, mozzarella cheese, and Parmesan cheese in a small bowl and sprinkle the mixture over the tomatoes.
- Place under the broiler until topping starts to brown, 3 to 4 minutes, checking frequently to avoid burning.
- Transfer tomatoes to a plate, drizzle with balsamic vinegar, and serve.

- Preheat oven to 400° F.
- Halve tomatoes lengthwise and scoop out seeds with a small spoon. Arrange tomatoes in one layer, cut sides up, on a non-stick or lightly oiled jelly-roll pan.
- In a small food processor blend basil, garlic, oil, salt, and pepper until mixture forms a paste and spread about 1/2 teaspoon in each tomato half.
- Bake tomatoes 30 to 40 minutes, or until tender and juicy but intact, and cool slightly before serving.
HERB BROILED TOMATOES
This is a Rachel Ray recipe I saw her make on the Food Network. I since, have added other ingrediants to create a lovely and simple side dish of herbed broiled tomatoes. It is a wonderful side dish with any grilled meats.

Steps:
- With spoon, scoop out seeds from tomatoes. Then clean out all but 1 inch of pulp, from around tomato, to form shell.
- Set tomatoes open side up, in single layer, in a baking dish.
- In bowl combine, breadcrumbs, garlic, basil, oregano, parsley, pecorino, salt and pepper. Mix well.
- Add oil to breadcrumbs and stir well until mixture resembles meal.
- Stuff tomatoes with breadcrumb mixture.
- Broil tomatoes for 4-5 minutes, until golden brown on top.
- Serve.
