GRILLED SWEET POTATOES

Steps:
- Preheat a grill to medium high. Microwave the sweet potatoes until just starting to soften, 8 to 10 minutes. Let cool, then slice into 1/2-inch-thick rounds.
- Whisk 2 tablespoons vegetable oil, the cumin, chili powder, 1 teaspoon salt and a few grinds of pepper in a large bowl. Add the potato slices and gently toss to coat. Transfer to the grill and cook until charred, 2 to 3 minutes per side. Transfer to a platter.
- Mix the cilantro, remaining 1/4 cup vegetable oil, lime zest and juice and chipotle in a bowl; season with salt. Thin with more lime juice if needed. Spoon the dressing over the sweet potatoes.
GRILLED SWEET POTATO SLICES
This is fast and easy... and so good! We do this with other veggies too, potatoes, carrots, turnips, etc. The caramelization of the veggies mingled with the smokey flavor from grilling makes this just wonderful! .

- 1. Oil or butter both sides of the sweet potatoe slices. Set on the grill to get grill marks on both sides. Poke holes in aluminum foil. Oil the foil. Place foil on grill. Oil or butter the slices of sweet potato and place on the foil. Cook over medium heat for 10 minutes. Turn over. Cook 10 - 15 minutes longer, they should be tender. (If using salt, add it after you flip potatoes over).
- 2. I likt to cut the potatoes on an angle to give them a pleasing shape. *** If you don't want the grill marks you can skip that part... but it is pleasing to look at.
GRILLED SWEET POTATOES
I don't really like the traditional sweet potato casserole, but my son loves sweet potatoes, so I try to come up with different ways to cook them. This spring I tried grilling them. These are now a favorite of mine and my sons.

- Preheat an outdoor grill for medium-high heat, and lightly oil the grate.
- Divide the sweet potato cubes in half, and place each half in the center of a rectangle of aluminum foil. Top each portion with about half of the butter. Sprinkle about half of the brown sugar, cumin, and cayenne pepper over each portion. Season with salt and pepper. Fold the corners of the aluminum foil together and seal to form a pouch around each portion.
- Cook on the preheated grill, turning pouches every 10 minutes, until the potatoes are tender and cooked through, 20 to 30 minutes.

GRILLED SWEET POTATO WEDGES
Steps:
- Brush the potato wedges with oil and season with rub, salt and pepper. Grill, turning once, until nicely marked.
- Whisk the syrup with the mustard. Brush the potatoes with the glaze and turn a few times to caramelize.
GRILLED SWEET POTATOES WITH LIME AND CILANTRO
Steps:
- Parcook the potatoes: Place in a pot of water and boil until fork-tender; let cool. Slice each potato lengthwise into eighths.
- Preheat a grill to medium or place a cast-iron grill pan over medium heat. Mix 1 tablespoon salt, the lime zest and cayenne in a small bowl.
- Brush the potato wedges with the oil and season with salt and pepper. Grill until golden brown on all sides (including the skin) and just cooked through, about 1 1/2 minutes per side. Transfer to a platter; immediately season with the salt mixture and sprinkle with cilantro.

- Heat coals or gas grill for direct heat.
- Peel sweet potatoes; cut into 1/2-inch diagonal slices. Heat 1 inch water (salted if desired) to boiling in 3-quart saucepan. Add sweet potatoes. Cover and heat to boiling; reduce heat. Simmer about 12 minutes or until almost tender; drain. Mix butter and salt.
- Grill sweet potato slices uncovered 4 inches from medium heat about 20 minutes, brushing frequently with butter mixture and turning once, until tender.
- To serve, sprinkle coconut over sweet potatoes.

- Prepare grill for indirect heat. Peel onions, leaving root ends intact. Cut a thin slice from the top of each, then carefully cut a 1-in. hole in the center. - Preheat an outdoor grill for medium heat and lightly oil the grate.
- Cut a small slice off the bottom of each potato to prevent them from rolling back and forth on the cutting board. Slice potatoes into 1/4-inch slices on the widest side.
