HEALTHY SPINACH DIP

I needed something healthy and low in fat to take to a get-together, so I experimented and came up with this dip. It's packed full of flavor and color. Served with assorted veggies, bread or crackers, it's always a hit. People ask for the recipe every time. -Noelle Myers, Grand Forks, North Dakota

Steps:

  • In a small bowl, combine the first 7 ingredients; stir in spinach. Cover and refrigerate at least 1 hour before serving. Serve with vegetables.

1 cup frozen leaf spinach, thawed and squeezed dry

Steps:

  • In a microwave-safe bowl, combine spinach and water. Cover and microwave on high for 45-60 seconds or until wilted; drain. Cool slightly and squeeze dry. , In a small bowl, combine the water chestnuts, sour cream, mayonnaise, soup mix, onion and spinach. Chill for at least 1 hour. Serve with crackers.

Steps:

  • In a medium bowl, mix together mayonnaise, sour cream, dry leek soup mix, water chestnuts and chopped spinach. Chill in the refrigerator 6 hours, or overnight.
  • Remove top and interior of sourdough bread. Fill with mayonnaise mixture. Tear removed bread chunks into pieces for dipping.

Spinach Dip image

Steps:

  • Thaw and drain the spinach.
  • Squeeze the spinach with paper towels to remove excess water.
  • Mix all ingredients together in a bowl.
  • Let set in the fridge for a couple hours before serving.
  • I like to serve it inside a hollowed out round loaf of bread.
  • Scoop out the loaf and place dip inside.
  • I use what I scoop out for making croutons.
  • Serve with fresh vegetables.

1 cup mayonnaise (not Miracle Whip)
1 (1 ounce) package Knorr vegetable soup mix (or onion soup mix)

  • In food processor combine Greek yogurt and cottage cheese. Blend until smooth.
  • Add water chestnuts and pulse a few times to chop them up.
  • Pour into mixing bowl. Add chopped green onions and Knorr soup mix.

  • Drain artichokes, reserve marinade. In a small saucepan, cook and stir beans, spinach, artichokes and Italian seasoning over medium heat until aromatic and heated through, 4-5 minutes. Remove from heat; cool slightly. Transfer to a food processor, add reserved artichoke marinade; pulse until mixture reaches a texture of thick hummus.   • Squeeze the water out of the spinach, and place the spinach into a mixing bowl. Stir in the onion, garlic, vegetables, sour cream, mayonnaise, and cumin. Season with salt and pepper. Super Healthy Spinach Dip image

Steps:

  • Preheat oven to 375 degrees Fahrenheit. Add log of goat cheese to oven safe dish with measurements at least 7" x 5" x 1.5". Put the dish with goat cheese into preheated oven to soften.
  • Cook down fresh spinach on medium to high heat, no water or oil necessary. The goal being to dry out the spinach more than you typically would in the pan. Add cooked spinach to the now softened goat cheese. Mix uniformly. Put back into the oven.
  • Add a generous amount of olive oil to pan on medium high heat along with onions and fennel. Sauté until caramelized.
  • Add caramelized onion and fennel to the goat cheese and spinach. Mix uniformly. Salt to taste, and put back into the oven for at least 30 minutes.
  • I like to broil it for 5 minutes or so following for a nice browned top. Let sit for 5 minutes then enjoy with any type of healthy crackers or bread!
