Steps:
- Drain herring of wine, do not rinse off any left over spices.
- Place cream cheese and drained herring in food processor.
- Process until smooth and spreadable.
- Finely chop scallions.
- Remove spread from processor and place in to a medium sized bowl.
- Fold in finely chopped scallions while tasting for salt and pepper.
- Keep cool until it is ready to be served.
- Garnish with sprig of parsley.

- Cut the fish into chunks and place them in a food processor, discarding any tiny, thin bones. Add the cream cheese, scallions, yogurt, lemon juice and horseradish and process for 2-3 minutes, or until well blended. Spoon the mixture into a bowl to use as a spread.

PICKLED HERRING THREE WAYS
Steps:
- Soak whole salt herrings for 12 hours in several changes of cold water. Remove herrings from water and bone and skin them, producing 6 or 8 fillets.
- Bring first 6 ingredients to boil. Remove from heat and cool completely.
- Put fillets in suitable shallow dish, strain pickling liquid over them and marinate overnight in refrigerator. Cut into bite-size pieces before serving
- Bring first 4 ingredients to boil. Remove from heat and cool completely.
- Put herring fillets in suitable dish, pour unstrained pickling liquid over them and marinate overnight in refrigerator. Cut into bite-size pieces before serving.
- Cut herring fillets into bite-size pieces, mix with sour cream, pickling liquid and onion. Refrigerate for at least several hours before serving.
CHUNKY HERRING SPREAD
A traditional item on the Norwegian smorgasbord-type meal we always have on the 25th of December, which here, is called "First Day of Christmas", because the really big day here is Christmas Eve. Of course, you may prepare this wonderful (if you like herring) spread anytime at all!

I tried this recipe as an appetizer, but like it as sandwich spread too! I wanted a unique appetizer for my parents 60th Wedding Anniversary Party. It was a BIG HIT!! :)Enjoy!

- Drain Herring and dice into bite-size pieces. Minced Onion, chopped Celery, Water Chestnuts, and Apples into bite-size pieces. Whip Sour Cream until it stands in soft peaks. Blend Sour Cream with Herring and ingredients. Blend well. Chill before serving. Serve on Lettuce Leaves and/or with crackers, bread.
- Makes 6 to 8 servings. COOING TIP: I like to use 1 each of Granny Smith Apple and Roma Apple. This adds color and flavor to the appetizer. Sometimes, I substitute Green Onions for the White Onion.

- Heat grill to its highest setting. Rinse the fish under running cold water to dislodge any loose scales. Brush with a little of the oil and season lightly. Grill for 6-8 mins, or until cooked; the eye should be white, the skin well browned and the flesh firm and opaque.

- Rinse herring under cold water and pat dry with paper towels. Cut fillets crosswise into 3/4-inch pieces.
- In a 1-quart glass or ceramic crock or bowl arrange some herring in one layer. Top herring with a layer of some onions and sprinkle with some dill. Layer remaining herring, onions, and dill in same manner.
- In a small bowl whisk together vinegar, pepper, and salt to taste and add oil in a stream, whisking until emulsified. Pour dressing over herring mixture. Chill herring mixture, covered, stirring occasionally, at least 8 hours and up to 2 days.
- Serve herring with potatoes.
