Honey-Glazed Scallops image

Steps:

  • 1. In a small bowl, whisk together the first 5 ingredients; set aside.
  • 2. Pat scallops dry with paper towels then heat 1 Tablespoon oil in a large skillet over medium-high heat. Cook scallops in a single layer, flipping once, until golden brown and just cooked through, about 2 minutes per side. (work in batches, if necessary, adding the remaining 1 Tablespoon oil when needed).
  • 3. Transfer scallops to a large plate as done. Reduce heat to medium-low and allow skillet to cool off a bit, then carefully add tamari honey mixture to skillet and simmer briefly until reduced to a glaze. Return scallops to skillet and toss well to cost evenly. Sprinkle with sesame seeds and serve.

1 1/2 Tbsp gluten-free tamari-a rich japanese soy sauce
1 1/2 Tbsp honey
1 Tbsp dijon mustard
1/2 Tbsp rice wine vinegar

Pecan Sandies® Encrusted Scallops with Balsamic Honey Agave Glaze image

Steps:

  • Heat the oil in a pot to 350 degrees F.
  • In a small saucepan, reduce the balsamic vinegar until 1/3 is left. Add the agave syrup and cook for 2 minutes on medium heat. Stir in the honey and finish with the butter. Sprinkle with chives and set aside.
  • In a food processor, combine the breadcrumbs and Pecan Sandies and pulse to make a breading. Dredge the scallops in the flour, then the eggs and roll in the breading mixture. Drop into the oil and fry until golden brown, about 2 minutes. Drizzle the scallops with the glaze and serve.

3 cups vegetable oil
1/4 cup balsamic vinegar
1/4 cup blue agave syrup
1/4 cup honey
1 tablespoon unsalted butter
Small bunch fresh chives, chopped
1 cup Japanese breadcrumbs (panko)

Sea scallops are amazingly tender, succulent, and mildly flavored, but when you style them up with a flavorful balsamic glaze, they can be a showstopper. They're sophisticated enough for dinner guests, but easy enough for a weeknight dinner.

Balsamic-Glazed Sea Scallops image

Steps:

  • Pat scallops thoroughly with a paper towel to remove excess moisture and ensure a good sear. Combine seafood seasoning, salt, and pepper and use to lightly season both sides of the scallops.
  • Heat butter and olive oil in a large skillet over medium-high heat. Add scallops to the skillet, being careful not to crowd. Cook until golden brown and a crust starts to form, about 3 minutes per side. Cook in batches if necessary to avoid steaming the scallops and be careful not to overcook. Remove from the skillet and cover to keep warm.
  • Add white wine, balsamic vinegar, and Dijon mustard to the skillet and cook over medium heat, stirring constantly to scrape up the browned bits from the bottom. Cook until glaze is slightly thick and syrupy, 3 to 4 minutes.
  • Move scallops to a serving plate, drizzle glaze on top, and garnish with chopped tarragon.

Seared Scallops with Spicy Honey-Citrus Glaze on Celery Salad image

Steps:

  • For glaze:
  • Stir all ingredients in small saucepan over medium heat until heated through. Set aside. DO AHEAD: Can be made 1 day ahead. Cover and chill. Rewarm before continuing.
  • For salad:
  • Mix all ingredients in large bowl. DO AHEAD: Can be made 2 hours ahead. Cover and chill.
  • For scallops:
  • Preheat broiler. Melt butter with oil in heavy large ovenproof skillet over medium-high heat. Stir in garlic. Sprinkle scallops with salt and pepper. Cook scallops until browned on 1 side, about 1 minute. Turn scallops over and cook 1 minute. Spoon 1 teaspoon glaze atop each scallop. Place scallops in broiler until glaze browns, about 1 minute.
  • Divide salad among 4 plates. Top salad on each plate with 3 scallops. Drizzle remaining glaze over. Sprinkle with chives and serve.
  • *Sold in the Asian foods section of many supermarkets and at Asian markets.

  • Wash the scallops and remove the small, tough side muscle (see REFERANCE & APPENDIX, _Sage Advice About Grilling Scallops). Place the scallops in a medium bowl. Add the olive oil, thyme, salt, and pepper. Stir to coat. Cut each prosciutto slice lengthwise into two equal-sized strips and wrap a strip around each scallop. Thread the scallops through their sides onto skewers, four scallops per skewer. Place the skewers on a plate. Cover with plastic wrap and refrigerate for 30 minutes to 1 hour. MEANWHILE, MAKE THE GLAZE: In a small bowl whisk together the glaze ingredients. Peel and core the apples, then cut crosswise into 1/2-inch-thick rings. Grill the apple rings over Direct Medium heat until golden and tender, 4 to 6 minutes, turning once halfway through grilling time. Brush both sides of the apple rings with the glaze and grill for 2 minutes more, turning once halfway through grilling time. Grill the scallops over Direct Medium heat until just opaque in the center, 4 to 6 minutes, turning once half way through grilling time. Steps:

  • Cut scallops in half or into quarters, depending on their size.
  • Dry well with paper towels.
  • Melt the butter with the honey and set aside.

Seared Scallops With Pineapple image

Steps:

  • Season scallops with salt, pepper and chili flakes.
  • In a hot pan (I prefer cast iron) add oil. When the oil starts to smoke add scallops and watch closely to make sure its not too hot.
  • Sear the scallops until golden brown on both sides, but only flip once.
  • Remove and set aside on a plate.
  • Next add the chopped garlic and cook for just a minute or two, then add the wine.
  • The garlic and wine should start to simmer, continue this until its reduced.
  • Then add the pineapple and stir around to coat.
  • Pour it all over the scallops and garnish. Serve immediately.
  • For the wine I prefer to use Alice White Lexia, its smooth and has more of a fruity flavor.
