FLO'S SPECIAL HOT DOG RELISH
Flo's Hot Dogs, is located on Rte. 1 in the seacoast area of Maine, in Capeneddick. This little shack has "THE BEST" hot dogs in the world, and has been serving these hot dogs for years... Standing room only inside where the line goes out the door from the time they open, till the time they close... People order 5-6 hot dogs a piece, if that says anything!!! They serve their hot dogs with this sweet and slightly hot relish along with mustard, or with mayonnaise, or with "The Works" which is all three plus celery salt over the top. I have had the pleasure of eating a few of these dogs in my time, and all I can say is MMM m mmm MMMMMM M! The secret to these FABULOUS Hot Dogs is the relish or "sauce" as some call it... Here is the recipe...

Steps:
- Put onions, and crushed red peppers in food processor or blender. Chop fine.
- Put all ingredients in a big kettle, and heat until it gets hot, stirring as you go.
- Simmer for 8 hours.
- Put in glass jars, and store in fridge, or process in canning jars, following canning procedures.

- Brown beef and onion in a large skillet over medium-high heat. Drain fat; cool mixture slightly. Place in food processor; pulse until mixture is finely crumbled, about 5 or 6 pulses. Return meat to skillet; stir in garlic. Cook for 3 minutes.
- Pour the ketchup and barbeque sauce into the skillet. Stir in the chili powder, mustard, pepper, salt, cumin, Worcestershire sauce, red pepper flakes, and water. Cook, uncovered, until most of the liquid has evaporated, about 10 minutes. Season sauce with additional salt, if necessary.

This is my family's favorite hotdog sauce. It originates from West Virginia. We like it with a bite, but you can adjust it to your taste. We top the hotdogs with ketchup, mustard, the hotdog sauce, and finally some chopped onions...YUM! This recipe makes enough for freezing and using later.

- In a large saucepan, bring water to a boil. Carefully crumble beef into water. Add onion. Boil until meat is no longer pink; drain. Add the tomato sauce, brown sugar, chili powder, salt and pepper. Simmer, uncovered, for 15 minutes or until heated through. Serve over hot dogs in buns.

- Combine all of the sauce ingredients together in a small pan. Stir over medium-high heat just until the sauce starts to bubble. Remove from heat and allow sauce to cool to room temperature.
- To prepare the hot dogs, make diagonal cuts in a "W" pattern down the length of each hot dog, slicing about half-way through. This will create more surface area for the sauce. Grill hot dogs on a preheated grill until they are heated through and have nice char marks. The buns can be buttered and toasted on the grill alongside the hot dogs, if you like (which we like!).
- Assemble grilled hot dogs and buns and then top with whatever toppings you desire (I like sauerkraut and white onions but J Dawgs also has pickles and banana peppers that are popular options) and drizzle with a generous amount of the sticky sweet sauce. Wrap the hot dogs in foil to keep them warm and to make it more like the real J Dawgs experience!
