DUTCH OVEN-PUFFED APPLE PANCAKE

I use my cast-iron skillet when I make this recipe, but an ovenproof, non-stick skillet would work just as well. This is a brunch favorite.

Dutch Oven-Puffed Apple Pancake image

Steps:

  • Preheat oven to 450 degrees Fahrenheit.
  • In a medium bowl, beat the 3 eggs and milk until well blended. Add the flour and salt; stir until batter is barely blended (the batter should be slightly lumpy).
  • In another bowl, toss apple slices with sugar, 2 tablespoons of lemon juice, and cinnamon.
  • Melt unsalted butter in a heavy, ovenproof 12-inch cast-iron or non-stick skillet over medium-high heat. Add apple mixture and saute 4 minutes, or until slightly softened. Spread out apples into an even layer; pour batter over apples.
  • Bake in preheated oven for 20 minutes, or until pancake is golden brown and puffed.
  • Sprinkle with the juice of half a lemon and dust with confectioner's sugar. Serve immediately.

Pancakes vary in thickness from the ultra-thin French crepe to the robust American breakfast pancake. In this recipe, which calls for sliced cinnamon apples, the oven transforms a rather thin batter into a sweet, giant pouf dusted with confectioners' sugar.

Steps:

  • Preheat oven to 400 degrees. In a 10-inch cast-iron skillet, melt butter and 3 tablespoons sugar. Add apple slices, and cook for 5 minutes, stirring occasionally.
  • In a medium bowl, whisk together eggs, flour, milk, cinnamon, salt, and remaining tablespoon sugar. Pour batter slowly over cooked apple mixture. Transfer skillet to oven. Bake until dark golden brown, set in the center, and puffed around the edges, about 15 minutes. Dust with confectioners' sugar; serve immediately.

4 tablespoons (1/2 stick) unsalted butter
1/4 cup dark-brown sugar
1 large McIntosh apple (about 8 ounces), cored and sliced 1/8 inch thick
5 large eggs

Baked Apple Pancake image

Steps:

  • Preheat oven to 425 degrees. Beat eggs until light and fluffy in a medium size bowl.
  • Add milk, vanilla and a few dashes of cinnamon.
  • Add flour and beat for 30 seconds into a light batter.
  • Set aside.
  • Mix together the sugar and cinnamon.
  • Melt butter in skillet then add sugar mixture.
  • Immediately add sliced apples stirring to coat evenly.
  • Cook apples 3 minutes on medium heat, stirring to coat.
  • Remove from heat and pour in egg batter, arranging the apples evenly on top.
  • Sprinkle with a little more cinnamon.
  • Bake in a 425 degree oven for 13-15 minutes (it will puff up).
  • Remove from oven and sprinkle with powdered sugar.
  • Cut into 4 wedges and serve hot with lemon wedges and butter, or with maple syrup (or both).

GIANT CINNAMON APPLE PANCAKE

This pancake will serve about 4 people and it is so yummy. It's a nice change from your traditional pancakes and everyone will love it so much more. The cinnamon and sugar make it unbeatable. I always make this for a brunch when I have special guests. It's a winner EVERY time! Note: You can make this the night before and just heat it up in the morning. Put it in the oven on 250°F for about 15 minutes.

Giant Cinnamon Apple Pancake image

Steps:

  • Peel and slice apple about 1/8 inch thick.
  • Over low heat in a 10 inch skillet heat up butter 1/4 cup sugar and cinnamon.
  • Remove from heat and place apple slices in a circle overlapping them slightly until you have one large circle and one small circle in the middle.
  • Cook over LOW heat until tender-crisp. (About 10 minutes)
  • Meanwhile, preheat oven to 400°F and beat together flour, milk, baking powder, salt and egg yokes with a fork in a separate bowl.
  • Beat egg whites and 1/3 cup of sugar on high speed until soft peaks form.
  • Fold egg white mixture into egg yoke mixture and pour over cooked apples, spreading it evenly. (Be sure not to move the apples around).
  • Bake pancake for 10 minutes (or until golden brown).
  • Carefully invert pancake onto a plate so that the apples are on top.
  • Enjoy!

Cooking in a cast iron skillet is the true cowboy way and no one knows about cowboy cooking more than the famous outlaw, 'Johnny Jalapeno'! Legend tells that Johnny went all out with this pie. Eyeing a delicious looking patch of wild blueberries, he crept up to it injun style (real low and quiet) and got the best berries he could gather up. But soon the chase was on as Johnny Jalapeno heard the crows coming! Quick as lightning, and running like the wind, poor Johnny was being chased and pecked all the way to back to the campsite. The McDaniel gang had a hootin-hollerin' time shootin them birds away as Johnny made this dessert for the clan. "We gotta look after the best cook in the west boys!" Johnny Jalapeno's Cast-Iron Blueberry Pie image

Steps:

  • Preheat oven to 400 degrees F. Place one of the pie crusts in bottom of 10" cast-iron skillet, spreading it gently to cover the bottom and up the sides of the pan.
  • In a large bowl or pan, blend sugar, flour, lemon peel, mace, and salt together in a bowl. Add blueberries and blend well to incorporate, mashing some of the blueberries. Add the blueberry mixture into the bottom crust, spreading evenly. Dot with butter.
  • Place top crust over top of blueberries. Carefully lift away a portion of the bottom crust away from the pan and tuck top crust between pan and bottom crust. Repeat until you've gone all way around the pan to seal the crust. Cut 3-6 small slits to vent (We cut as many slices as we want from the pie, sort of like pre-slicing it that way). Bake approximately 30 minutes.
  • Remove pie from oven and sprinkle the top with sugar and if neccesary, line the outside edge of the pie crust with aluminum foil to avoid burning the crust.
  • Place back into oven and bake for an additional 15 minutes or until berry juice is bubbling from the slits and crust is golden brown. Remove from oven and let pie cool completely before serving.

1/2 cup sugar (depending on how sweet you like it)
2 tablespoons all-purpose flour
1 tablespoon grated lemon peel
1/2 teaspoon mace (or cinnamon or nutmeg)
1 pinch kosher salt
4 cups fresh blueberries
2 tablespoons butter, cut up in small pieces
1 tablespoon sugar
