OLD-FASHIONED STACK CAKES

My grandmother has always fixed these at Christmas and they are the first thing everyone asks about. "Where is the stack cake?" The super thin layers are what make this recipe stand out...delicious! -Stephanie Gilbert, Whitesburg, Kentucky

Old-Fashioned Stack Cakes image

Steps:

  • Preheat oven to 450°. In a large bowl, cream butter and sugar until light and fluffy. Beat in eggs and vanilla. In another bowl, whisk flour, baking powder, ginger, baking soda and salt; add to creamed mixture alternately with molasses and buttermilk, beating well after each addition., Drop 2 scant 1/4 cupfuls of batter, at least 7 in. apart, onto a parchment-lined baking sheet. With well-floured fingers, pat each into a 5- to 6-in. circle. Bake 2-3 minutes or until golden brown. Remove from pans to wire racks to cool completely. Repeat with remaining batter., To assemble, place 1 cake layer on a serving plate; spread with 2 tablespoons apple butter. Repeat layers 4 times; top with a sixth layer. Repeat to make 2 more stack cakes. Refrigerate, covered, until serving. If desired, serve with additional apple butter.

2 teaspoons vanilla extract
4 cups all-purpose flour
4 teaspoons baking powder
1-1/2 teaspoons ground ginger
1/2 teaspoon baking soda

1/2 cup buttermilk
2 cups apple butter
Additional apple butter, optional

Steps:

  • 1. Put the flour in a large bowl. Make a well in the center of the flour; put butter in well.
  • 2. Add brown sugar, baking soda, salt and 1 teaspoon of pumpkin pie spice; work into butter with fingers. Add egg and work into butter-sugar mixture.
  • 3. Gradually add buttermilk, working in flour as you go, until all buttermilk is used, and a soft dough is made.
  • 4. Divide dough into 7 equal portions. Press one portion into a greased and floured 9" round cake pan. Bake at 350* for 10-12 minutes. Turn layer onto a wire rack to cool. Repeat with remaining 6 portions of dough.
  • 5. Combine applesauce with remaining 1 teaspoon of pumpkin pie spice. Sweeten with granulated sugar. Spread applesauce between slightly warm cake layers. Do not put filling on top layer.
  • 6. Cover with plastic wrap and allow cake to age for several days for best flavor...Enjoy!

Kentucky Dried Apple Stack Cake image

Steps:

  • 1. Preheat oven to 350 degrees.
  • 2. Cream shortening and sugar; add beaten egg, molasses, buttermilk, and mix well. Sift flour, soda, salt, and ginger into a mixing bowl. Make a well in the center of dry ingredients and pour in creamed shortening mixture, stirring until well blended. Add vanilla, stir well, batter will be stiff. Roll out dough like you would for a piecrust.
  • 3. Cut to fit 9-inch pan or cast-iron skillet you should have enough to amke 7 layers. Bake 10-12 minutes. Cool layers completely.
  • 4. While the layers bake/cool. Put 1 pound apples in heavy pan and cover with cold water. You may need to add water several times to keep apples from sticking to pan. Cook until soft enough to mash. While still hot, mash apples and add 1 cup brown sugar, 1 cup white sugar, 1 teaspoon cinnamon, 1/4 teaspoon cloves, and 1 teaspoon allspice.
  • 5. Alternate layers of cake with a thin layer of cooked apples. Spread remaining apples in a thin layer over top and sides of cake.
  • 6. Store covered in a cool dry place or in the fridge at least overnight. The longer it sits, the better it gets

  • Preheat the oven to 400°F and set a rack to the middle position. Butter and flour the cake pans. In the bowl of a standing mixer (or a hand-held mixer), cream the sugar, brown sugar and butter together at medium speed until quite fluffy, 3 to 5 minutes.
  • Add a third of the flour mixture to the butter-sugar mixture and mix just to combine, at medium-low speed. Add half of the buttermilk mixture and mix just to combine.
  • Turn the dough out onto a lightly floured surface, knead four times to bring it all together, then roll into an even cylinder about 18 inches long. Cut the cylinder into six equal parts (each 3 inches long), then press each part into a disk, wrap in plastic wrap, and refrigerate for at least 30 minutes and up to a day.
  • On a lightly floured surface, roll out one disk of dough to a 10-inch circle (use a light sprinkling of flour if it begins to stick). Using a cake pan as your guide, trim the dough into a perfect 9-inch circle, then lay it in a pan to bake.
  • Remove from the oven and cool the pans on wire racks for 10 minutes. Remove the layers and set aside. When the pans are cool, butter and flour them once more and repeat the rolling, cutting and baking with the other dough rounds.
