MY MOM'S LASAGNA

Steps:
- Preheat the oven to 375 degrees F.
- Place a large saute pan over medium-high heat and add the beef and sausage. Cook, stirring occasionally, until it begins to brown, about 2 minutes. Add the onions, garlic and dried oregano and cook until they are softened and the meat is cooked through, 3 to 4 minutes. Stir in the tomato paste and toast for 30 seconds, then add the tomatoes and cook until the sauce has thickened slightly, about 5 minutes. Remove from the heat and set aside.
- Beat the eggs in a large bowl. Add the ricotta, 1 cup mozzarella, 1/3 cup Parmesan, fresh basil and oregano, salt and pepper and stir to combine.
- Spread a thin layer of sauce on the bottom of a 9-by-13-inch baking dish. Arrange a layer of noodles over the sauce and top with a third of the ricotta filling. Spoon over a layer of sauce and top with another layer of noodles. Continue with 2 more layers of ricotta, sauce and noodles, ending with a top layer of noodles. Spoon a thin layer of the remaining sauce over the top, sprinkle the remaining mozzarella and Parmesan over the noodles and cover with aluminum foil.
- Bake for 45 minutes, then uncover and cook until the cheese is golden and the lasagna is bubbling, another 15 to 20 minutes. Let stand for 10 to 15 minutes before serving.
LAZY MOM'S FAUX LASAGNA
Cooks like a casserole, tastes like a lasagna! This simple recipe takes out the complication of gourmet lasagnas and serves your family in less than an hour with the same great taste.

Steps:
- Prepare water to boil and pre-grease a deep casserole dish.
- Brown beef, onions and garlic in a medium sized sauce pan (if you don't like your onions a tad crisp, saute your onions and garlic until soft, prior to adding the beef).
- Add spaghetti sauce AND spinach to the beef, onion and garlic; cover and simmer for 15 minutes.
- Pre-heat oven to 350, and add noodles to boiling water and cook until al dante.
- Drain noodles and return to pot.
- Pour the sauce mixture into the noodles, RESERVING two or so cups, and mix thoroughly. Set remaining sauce aside.
- Pour half of the pasta mixture into the pre-greased casserole dish, layer with 6 slices of provolone cheese, pour in the remaining pasta, break the remaining provolone into pieces, layer, and sprinkle mozzarella cheese on top. Finally, pour on the reserved sauce.
- Bake, covered, on 350 for 35 minutes.
- Uncover, sprinkle parmesan cheese on top, and bake for an additional 5 minutes.
LAZY MAN'S (OR LAZY MOM'S LASAGNA)
Steps:
- Preheat the oven to 350 degrees F.
- Brown the beef with the optional onion, optional garlic, herbs, and salt and pepper in a large, ovenproof skillet (I use one that's made of castiron). When the meat is thoroughly cooked -- it will take 8 to 10 minutes -- drain off any fat and take everything out of the pan. Now put the still-frozen ravioli into the pan, breaking them up if they are clumped. Spread the ground beef mixture evenly over the ravioli, and ladle the spaghetti sauce evenly over the ground beef mixture. Over medium heat, without stirring, cook until the ravioli is heated through and beginning to brown on the bottom -- about 10 minutes.
- Take the skillet off the heat, lay the provolone slices over the ground beef mixture, and sprinkle the whole thing with the Parmesan. Bake for 10 minutes, or until the cheese is melted. Serve hot.
LAZY NO-BAKE LASAGNA

- Heat the olive oil in a Dutch oven or large, wide pot over medium-high heat. Add the sausage and cook, breaking up clumps with a wooden spoon, until brown, about 6 minutes. Add the Marinara and 3 1/2 cups water and bring to a boil. Add the pasta, then partially cover and cook, stirring occasionally, until the pasta is al dente and the sauce is coating it nicely, about 16 minutes. Stir in the mozzarella and ricotta, then sprinkle with the Parmesan and basil, and serve.
- Heat the olive oil in a large saucepan over medium heat. Add the garlic and cook, stirring frequently, until it just turns golden, 3 to 4 minutes. Add the tomatoes, Italian seasoning, basil, 1 teaspoon salt and a few grinds of fresh pepper. Bring to a simmer and cook, stirring occasionally, for 7 minutes. Take off the heat and stir in the butter until melted. Add salt and pepper to taste.
EASY LAZY LASAGNA
This incorporates all the flavors of lasagna, but it's easier because the ingredients are simply mixed together and baked.

- Preheat the oven to 350 degrees F (175 degrees C).
- Fill a large pot with lightly salted water and bring to a rapid boil. Cook egg noodles at a boil until tender yet firm to the bite, 7 to 9 minutes. Drain.
- Heat a large skillet over medium-high heat. Cook and stir ground beef and sausage in the hot skillet until browned and crumbly, 5 to 7 minutes. Drain and discard grease. Pour marinara sauce into the meat. Stir in drained egg noodles, 2 tablespoons Parmesan cheese, onion powder, garlic salt, and Italian seasoning; mix until incorporated. Pour mixture into an 8-inch square casserole dish and top with mozzarella cheese and remaining Parmesan.

LAZY MARINARA LASAGNA
I found this recipe on the back of the label on a package of ground beef! Of all the different ways I've used the same old pasta and sauce combinations, I'd never tried this one - it was a big hit! I'm sure this will adapt itself to using vegetables, different meats, no meat - whatever you like best. I'm including the ingredients for a "lazy" marinara sauce in case you don't have any jars of storebought in the pantry.

- preheat oven to 375.
- brown ground beef with garlic and onion in large nonstick skillet. Drain off fat if necessary.
- Mix with prepared marinara and set aside.
- You can use a jar of storebought marinara or make your own with the ingredients listed above. The ingredients are flexible - I use whatever combination of canned tomatoes I happen to have at the time - crushed, diced, puree, with herbs or garlic already added - whatever. No need to cook before you add to the mix - it will bake along with everything else.
- Bring 4 qts water to a boil. Cook ravioli just till it floats, about 3-5 minutes. Drain.
- Place a bit of sauce/beef mixture in bottom of 9x13 pan. Add a layer of half the ravioli, topped by half the sauce, followed by half the shredded cheese.
- Repeat layers.
- Bake uncovered for about 30 minutes, till sauce is bubbly and cheese is browned.
- Let stand 5-10 minutes before serving.

- In a large saucepan brown ground beef, onion and garlic.
- Stir in juice, mushroom, tomato paste, and seasonings.
- Simmer 30 min, stirring occasionally (I put a splatter shield over my pan so that it will not make as big of a mess).
- Pre-heat oven to 350.
- In a 9x13 pan, layer half of each uncooked noodles, meatsauce, cheeses. Repeat layers.
- Cover with foil.
- Bake 30 minute
- Remove foil, bake for 15 more minute
- Let stand 15 min before serving.
LAZY LASAGNA
Because it's too much trouble messing with lasagna noodles and making those careful layers. The quality of the chosen sauce is key. A friend of mine couldn't figure out how she could make the same recipe I did but mine was better until we realized that she was buying a cheap, minimally seasoned spaghetti sauce. Use more or less sauce according to how wet your family prefers lasagna. Lazy Lasagna is easy to halve or double, just adjust the cooking time for the smaller or larger pan.

- Cook pasta a bit less than fully done.
- Grease a 9x13 pan with olive oil.
- Layer 1/2 the amount each of pasta, ground beef, ricotta, parmesan, spaghetti sauce, and mozzarella in that order.
- Repeat except for the mozzarella.
- Draw a wooden spoon through the layers in an S-shaped pattern to mesh the layers without actually stirring them together.
- Top with the remaining mozzarella.
- Bake at 350F for 30-45 minutes or until the cheese is as brown as you like it and everything is bubbling hot.
- Note -- steamed and drained zucchini or very well-drained, frozen spinach is a good addition.
- Note -- Can substitute ground turkey or chunks of cooked chicken/turkey for the ground beef if desired.

- In a large pot of boiling water, cook pasta until tender but firm; drain.

- Preheat oven to 375 degrees F and prep a 9x13 inch pan, rubbing with a little bit of olive oil to coat it. Meanwhile boil water and cook pasta just 1-2 minutes short of package directions until al dente (firm, but cooked through). At the same time, brown ground beef in a large saute pan until cooked through, about 5-6 minutes, and drain if there is a lot of excess moisture. Add marinara sauce.
