WHOLE WHEAT PASTA

Fresh, healthy and very delish... I sometimes make this the traditional style, and when in a hurry, I throw all the ingredients into my mixer, with the kneading hook.

Whole Wheat Pasta image

Steps:

  • Stir together the all-purpose flour, whole wheat flour and salt in a medium bowl, or on a clean board. Make a hollow in the center, and pour in the olive oil. Break eggs into it one at a time, while mixing quickly with a fork until the dough is wet enough to come together. Knead on a lightly floured surface until the dough is stiff and elastic. Cover, and let stand for 30 minutes to relax.
  • Roll out dough by hand with a rolling pin, or use a pasta machine to achieve the desired thickness of noodles. Cut into desired width and shapes. Allow the pasta to air dry for at least 15 minutes to avoid having it clump together.

I actually decided to make this pasta pure whole wheat but my husband doesn't care for the texture of whole wheat flour so I decided to ease him into it. This recipe turned out great and he loved it!

Steps:

  • In a large bowl, mix together the flours, salt, and italian seasoning.
  • Make a well.
  • Whisk eggs, water, and olive oil together and pour into well. Mix untl a ball is formed.
  • Turn out pasta dough onto a floured surface and knead for 1 to 2 minutes.
  • Wrap in wax paper and let sit for 20 to 30 minutes.
  • Cut into 6 seperate pieces and roll out to desired thickness or use a manual pasta machine.
  • Cook in boiling salted water for 6 minutes.

Steps:

  • Put it into a mixer with bread hooks or a food processor, and knead until really smooth.
  • I suppose you could also do this by hand, but I haven't tried it!
  • We've also substituted 1/4 of the flour with kamut, buckwheat etc. to add extra flavor, and the recipe suggested that chopped spinach, herbs, or tomato paste could be added.

  • In the bowl of your stand mixer, combine the whole wheat flour, white flour, and kosher salt and stir loosely to combine. Add the olive oil and eggs and stir until a loose dough forms.
  • Attach the dough hook to your stand mixer and knead the dough on low speed for 5-6 minutes until a smooth ball forms. You may need to stop the mixer once or twice to make sure all of the flour gets incorporated into the dough. Note: The dough can also be kneaded by hand for 5 minutes.
  • Turn the dough out onto a floured surface and knead it into a smooth, dense ball. Cover the dough with a towel and let it rest at room temperature for 30 minutes.
  • Roll the dough out using a pasta machine, or by hand with a rolling pin. To roll the dough with a pasta machine, take about 1/4 of the dough (smaller amounts are easier to work with) and flatten it with your hand. Run it through the pasta rollers at the widest setting. Fold the dough in half and run it through again at the same setting. Repeat this until the pasta runs through smoothly (around 4 times). If the pasta becomes sticky at any point, sprinkle a small amount of flour on the sheet of dough and rub it in.
