MARZIPAN

Make your own marzipan instead of buying it. Marzipan is used to frost Christmas cakes and for candies, and all sorts of other goodies.

Steps:

  • Blend the confectioner's sugar, finely ground almonds, egg whites, salt, and almond extract in a blender until perfectly blended. Cover and chill until firm, 24 hours.

2 egg whites
½ teaspoon salt
½ teaspoon almond extract

Great for halloween, decorating cakes or ghoulish treats. Inspired by Lily Vanilli's Zombie Ate My Cupcake! book, these are our slightly simpler version (if such a thing as making bugs out of marzipan is possible to be simpler).

Steps:

  • Mix black food colouring into the marzipan, this will take some time and turn everything your touch black.
  • Cut or break marzipan into beetle sized lumps.
  • Roll each lump into a elongated ball, about an inch long.
  • Flatten slightly until roughly bug shape.
  • Make groove in the bug to make it look like an egyptian scarab beetle.
  • Dab a small brush into the Edible Luster and then wipe most of it off on a kitchen tissue, then brush the wings/shell of the beetle.
  • Add a second colour if you want a shimmering beetle effect.
  • Optional; roll some marzipan into tiny sausage, which are going to be the legs.
  • Cut the tiny sausages into 3 shorter sausages, enough to sit under the beetle and poke out each side.
  • Layout legs, stick beetle on-top, carefully wait to harder a bit before moving.

Steps:

  • In a bowl, cream butter and brown sugar. Add egg yolk and vanilla; mix well. Combine flour, baking soda and salt; add to creamed mixture alternately with milk. Press into a greased 15x10x1-in. baking pan. Spread with jelly. , For filling, combine almond paste, butter, sugar, egg white and vanilla in a bowl. Beat in eggs. Add food coloring; mix well. Pour over jelly layer. Bake at 350° for 35 minutes or until set. Cool on a wire rack. , For icing, heat chocolate and butter in a small saucepan on low until melted. Add confectioners' sugar and enough milk to make a smooth icing. Stir in vanilla. Immediately spread over bars. Cover and store overnight at room temperature before cutting.

6 drops green food coloring
ICING:
2 ounces unsweetened chocolate
1 tablespoon butter
2 cups confectioners' sugar
4 to 5 tablespoons milk
1 teaspoon vanilla extract

  • To make the marzipan, put the ground almonds, icing sugar and egg yolks in a bowl. Mix with a spatula, gradually adding the lemon juice, until the marzipan is smooth with a doughy consistency. Form a ball or a long sausage shape on a surface liberally dusted with icing sugar, wrap in cling film and refrigerate.
  • For the dough, mix all the ingredients for the starter in a large bowl. Cover with cling film and leave for an hour in a warm place. In the meantime grind the cardamom seeds in a pestle and mortar and mix with the other spices.
  • Add the spice mix to the starter dough together with the ingredients for the main dough apart from the butter. Add a pinch of salt, then mix with your hands or in a standing mixer with the dough hook attachment for about 2 minutes. Add half the butter, then knead in the bowl for a couple of minutes before adding the rest of the butter. Knead until all the butter is mixed in and the dough is beginning to look silky smooth, stops sticking to your hands or bounces off the sides of the standing mixer bowl. Cover the bowl with a clean sheet of cling film and set aside to rise for 1 hour, punching it once to degas halfway through the time.
  • Turn the dough out onto a floured surface and divide into 16 pieces, about 50g each. Shape them into small balls and flatten on the surface. Place a chunk of marzipan on each round, brush the edges of the dough with beaten egg and roll tightly around the marzipan, making sure it’s well sealed (you can brush with more egg to be sure).
