Sauerkraut-Beef Bake image

Steps:

  • In a skillet, cook beef over medium heat until no longer pink; drain. , In a greased 2-qt. baking dish, combine the beef, sauerkraut, rice, soup, water and soup mix. Add mushrooms if desired. Cover and bake at 350° for 1 hour or until heated through.

1/2 cup uncooked instant rice

Beef and Sauerkraut Dinner image

Steps:

  • In a bowl, combine beef, egg, crumbs, milk, onion, vinegar, caraway and salt; mix well. Shape into 1-1/2-in. balls. , In a Dutch oven over medium heat, brown meatballs in oil; drain. Add the potatoes and sauerkraut and mix well. Bring to a boil. Reduce heat; cover and simmer for 15-20 minutes or until heated through. Sprinkle with parsley. , If sauce is desired, combine mayonnaise and horseradish; serve on the side.

  • In a large bowl, mix ingredients in order given.
  • Lightly grease 3- 1 1/2 quart casserole dishes or 1-9x13 pan.
  • Divide bean and sauerkraut mixture evenly between the baking dishes and cover with foil or lids.
  • Bake for 2 hours at 350°F Adding a little water when beans seem a little dry.
  • Serve as a side for meat patties or along side of baked macaroni and cheese. Might also be good over toast or rice.

Steps:

  • Melt butter and bacon drippings if using in a large frypan.
  • Swirl to mix.
  • Add onion and apples, saute until nearly tender.
  • Combine with sauekraut in a large mixing bowl.

Steps:

  • Cover mushrooms with boiling water and set aside to soften.
  • Cook the salt pork in a large, heavy sauce pan until golden brown. Add onions and saute until soft but not brown. Stir in the apple and saute another minute or two.
  • Rinse the sauerkraut in cold water and squeeze very dry. Add sauerkraut to the saucepan and cook for several minutes. Stir in the tomatoes, the mushrooms and their liquid and simmer for 15 minutes.
  • Preheat oven to 350 degrees. Season the sauerkraut mixture with salt and pepper. Spread one-third of the sauerkraut mixture in a large casserole, about 3-quart capacity. Cover with half the meats, both the sausage and the cooked meat. Cover with half remaining sauerkraut, the rest of the meat and then the last of the sauerkraut. Arrange the apple wedges in a pattern on top, place a bay leaf in center and pour the wine over it. Bake covered for 1 1/2 hours.
  • Serve with boiled potatoes and pickles.

Barbecue Sauerkraut Bake image

Steps:

  • Preheat oven to 350 degrees F.
  • In a saucepan over medium heat, melt the butter and olive oil together, then add the onion and sauté until lightly browned, about 5 to 7 minutes.
  • Reduce the temperature to low, add the garlic, catsup, brown sugar, lemon juice, Worcestershire, mustard, and Tabasco or hot sauce, and simmer for 10 minutes; add the shredded cooked meat, remove from heat, and set aside.
  • In a colander rinse the sauerkraut well under running water, then set aside to let drain.
  • In a lightly sprayed casserole dish, pour the meat and barbecue sauce mixture, then spread the sauerkraut over the meat.
  • In a bowl, combine the breadcrumbs and Parmesan.
  • Sprinkle crumb mixture over the sauerkraut, lightly spray with olive oil or pan spray, then bake at 350 degrees F for 20 to 25 minutes or until crumb topping is golden brown and crisped to desired texture.
  • Serve as is or over toast (dark rye is good!) or toasted hamburger buns.
  • Note: you can put a layer of barbecued beans under the shredded meat, if desired; also, you can use commercially prepared barbecued sauce instead of making your own as above (about 1 1/4 cup of sauce).
