SUPER FAST AND EASY MICROWAVE CHOCOLATE PUDDING

I'm mostly posting this so I don't have to go hunting for it every time I want to make it. My mom gave it to me ages ago, and while it isn't the most life changing pudding in the universe it's rediculously fast to make, can be easily varried a number of ways to suit your mood and is plenty tasty for those nights when you want pudding NOW! I like to use a shallow glass container so that it cooks faster. You can leave out the chocolate for vanilla pudding. I like to make it with Silk Nog Soymilk around the hollidays.

Steps:

  • To make the cake, mix together the flour, caster sugar, salt and 30g cocoa.
  • Add melted margarine, egg, milk and vanilla to above mix. Stir well to combine and place in a medium sized microwavable bowl - the sides should be about 5cm high as cake will rise.
  • Make the sauce by mixing the brown sugar with the remaining cocoa. Sprinkle on top of the batter.
  • Warm water for 30 secs and tip on top of cake gently. Use a fork to gently prick a few holes in batter to allow some water to seep into it.
  • Cook on high in microwave (800 watt) for 5 minutes.
  • Serve with ice-cream or custard.

HOT FUDGE PUDDING CAKE (MICROWAVE)

I grew up with a dessert called Hot Fudge Pudding Cake. It was a package mix. This is the closest to the original recipe I've had. Similar to other brownie cakes listed but less ingredients and microwave cooked. One of my all time favorites.

Steps:

  • Grease a 22cm silicone microwaveable cake pan with a little oil and place a circle of baking parchment in the bottom.
  • Mix the sugar, flour, cocoa and baking powder in a bowl. In a jug, whisk the oil, eggs, vanilla and 100ml hot water until combined.
  • Add the liquid ingredients to the dry ingredients and mix thoroughly until you have a lump-free batter. Pour the mixture into the cake pan and gently tap to pop any air bubbles. Cover with cling film.
  • Microwave on Full power (800 watts) for 7 mins. Remove and check if the cake is cooked by poking a skewer into the middle: if it comes out clean, the cake is ready. Allow the cake to stand for 5 mins, then remove the cling film and turn out onto a cooling rack.
  • For the ganache, melt the chocolate on Half power (600 watts) for approximately 2 mins, stirring every 30 secs until melted. Add the cream and mix thoroughly until smooth and glossy.
  • Once the cake is cool, spread over the ganache and scatter with the sprinkles. The cake will keep for up to 3 days in an airtight container.
