Microwave Pecan Fudge Recipes

Steps:

• Microwave 12 ounces semisweet chocolate chips and a 14-ounce can sweetened condensed milk, 5 minutes. Stir vigorously, then add 1 1/2 cups chopped nuts and 1 teaspoon vanilla extract. Spread in an 8-inch-square pan lined with buttered parchment paper. Refrigerate, then cut into squares.

• Line an 8-in. square pan with foil and butter the foil; set aside. Place pecans in a microwave-safe pie plate. Microwave, uncovered, on high for 3 minutes, stirring after each minute; set aside. , In a 2-qt. microwave-safe bowl, combine chocolate chips and milk. Microwave, uncovered, on high for 1 minute. Stir until smooth. Stir in vanilla and 3/4 cup pecans. Immediately spread into the prepared pan. Sprinkle with remaining pecans, pressing to adhere., Cover and refrigerate until firm, about 2 hours. Remove from pan; cut into 1-in. squares. Cover and store at room temperature.

• Microwave butter in a 2 quart microwave safe bowl on high for 1 to 1 1/2 minutes until melted.
• Add cocoa and stir until smooth.
• Stir in confectioner's sugar and vanilla and blend well, it will be dry and crumbly.
• Put the bowl back in the microwave for 30 to 60 seconds, until the mixture is hot.
• Stir it until it is smooth and add in the pecan pieces.
• Pour into foil lined pan, and spread evenly, cover and refrigerate until firm.
• Cut into 1 inch by 1 inch squares.

• 1. Blend confectioners' sugar and cocoa in a microwaveable medium bowl. Pour in milk. Place butter on top. Heat in microwave oven at full power for 2 minutes or until butter melts. Stir well to mix. Add vanilla and pecans. Stir until blended. Put in refrigerator and chill 1 hour until firm. Cut into 1-inch squares. Store in airtight container.
