- There are many versions of this recipe, this one we like the best for our family! Beat margarine,oil and sugar well.
- Beat in eggs, vanilla and sour milk.
- Sift dry ingredients and beat into mixture. Stir in zucchini.
- Pour batter into a greased and floured tube or Bundt pan.
- Sprinkle top of batter with chips ( Or could stir into batter if you wish ) Bake in a 325F oven 40 to 45 minutes or tested done. Cool in pan 15 minutes and carefully remove to finish cooling.Sprinkle with powder sugar if desired.
- Freezes well and tastes wonderful!

- Preheat an oven to 350 degrees F (175 degrees C). Stir the flour, cocoa powder, baking soda, cinnamon, cloves, and salt together in a bowl.
- Beat the sugar and margarine with an electric mixer in a large bowl until smooth. Beat the first egg into the butter until completely blended; beat the vanilla into the mixture with the last egg. Stir the zucchini through the mixture until evenly distributed. Mix the flour mixture into the zucchini mixture until just incorporated. Fold in the chocolate chips, mixing just enough to evenly combine. Roll the dough into walnut-sized balls and place 2 inches apart onto ungreased baking sheets.
- Bake in batches in the preheated oven until the edges are golden, about 10 minutes. Allow the cookies to cool on the baking sheet for 1 minute before removing to a wire rack to cool completely.

MOM'S FAVOURITE CHOCOLATE ZUCCHINI CAKE
Some years back I grew too many zucchini's, so I was looking for a zucchini cake; found this one and have made it for many years. It's still my favourite. I usually check with a light finger pressure for bounce back or I use a toothpick for doneness as I find 45 minutes in the oven is not enough for my oven.

- Sift dry ingredients and add to creamed mixture.

MOM'S ZUCCHINI CHOCOLATE CAKE
This is quite similar to all the other zucchini chocolate cakes posted here, but I know this combination works best for me! This makes a rich, dense cake that is fabulous with cream cheese icing or even without icing at all. The prep time may be shorter for others - I'm a very slow cook.

- Preheat oven to 350 degrees Fahrenheit.
- Grease a 25 cm tube or Bundt pan.
- Combine flour, cocoa, baking powder, baking soda, salt and cinnamon in medium bowl. Set aside.
- In a separate bowl, beat butter and sugar to blend. Add eggs and vanilla, beating well. Stir in zucchini.
- Alternately stir in dry ingredients and milk, including the nuts with the last addition.
- Spoon into prepared pan and bake 60-70 minutes or until cake spring back when lightly touched. Cool in pan 15 minutes, then turn out onto a rack and cool thoroughly.

- Grate the zucchinis and place on several layers of paper towels to absorb excess moisture. Use a towel and gently press the zucchini to release the moisture. You don't want it completely dry, just slightly less wet. I ended up with a couple of cups of grated zucchini but it honestly doesn't affect the recipe if you have more or less. I would say between 2 and 3 cups is perfect.
- Whisk granulated sugar, eggs, applesauce, butter, and vanilla extract together in a large mixing bowl.
- Whisk the flour, baking soda, salt, cinnamon and cocoa powder together. Reserve a couple tablespoons of the mixture, set aside.
