EASY DUTCH APPLE PIE

The first apple pie I ever made; easy and simple directions. And real apples, no canned apple pie filling! I made this for dessert when company was over and I figured if I screwed up, I could always pass it off as apple cobbler with ice cream served over it, but it came out great, looked and tasted like a real apple pie!

DUTCH APPLE PIE (OMA'S APPELTAART)

This recipe is for the traditional dutch apple pie, found on a Belgian website. It can be served both warm or cold, usually with whipped cream (but ice cream tastes great as well :D ). You will need a *springform* cake pan, or a lot of patience, or you will not be able to get the pie out! Because Dutch recipes generally use grams instead of cups for dry ingredients, I have included the measurements in grams as well. The dough is shortbread-like and may take a lot of time to get right. It took me ages to get it to form a ball, but it worked out fine in the end. If you're getting tired of it, add a little milk, but don't despair for with or without the milk, it *will* from a ball in the end. If you want, you can prepare the apple mixture the previous day and keep it in the fridge, the flavors will blend wonderfully. If you want to prepare the dough in advance, take it out of the fridge in time, because it's really hard to work with when it's just been in the fridge for a whole night. The preparation time is a rough estimate and assumes that you peel the apples while the dough is in the fridge. I'm quite slow at preparing so it could be anywhere between 1 and 2 hours for you. Last but not least, *do* make sure you have a bit of dough left over for the third to last step - you deserve a little something for all that hard work! :D

Steps:

  • For the dough:.
  • Sieve the flour, brown sugar, vanilla and the salt into a bowl.
  • Cut the butter or margarine into small cubes and add these to the flour mixture.
  • Beat the egg and add 3/4 of it to the flour mixture (you will need the rest for the top).
  • Using two knives, mix the butter/margarine and the flour mixture.
  • Using one hand, kneed it to form the dough - you should be able to form it into a ball (this may take quite long).
  • Put the ball of dough in the fridge for about an hour, in the meantime, make the filling.
  • For the filling:.
  • Peel the apples and cut them in cubes (allow the sizes to vary--it'll taste better).
  • In a (large) bowl, combine apple, raisins, (granulated) sugar, cinnamon, the lemon juice and half of the semolina.
  • Mix well and allow the flavors to blend, stirring occasionally.
  • Then:.
  • Butter a 9-inch round springform cake pan, or spray it with a non-stick spray.
  • Line the pan (bottom and sides) with about 3/4 of the dough - as long as the pan is covered, the layer need not be very thick.
  • Cover the bottom with the remaining semolina.
  • Add the filling, but try to leave the juices out.
  • On a lightly floured surface, roll out the remaining dough until it's less than 1/4 inch (1/2 cm) thick.
  • Cut the dough into strips and layer them over the apple pie to form a raster, covering no more than one third of the surface--you should be able to see quite a bit of the apple pieces (see picture).
  • If necessary, use (some of) the remaining dough to make the edges a bit higher.
  • Use the remaining egg to coat the dough strips.
  • Bake the pie at 175°C / 340°F, just below the middle of your oven, for about 75 minutes.
  • If you have any dough left, roll it out, sprinkle with sugar and cinnamon (or left-over apple mixture) and bake it on baking paper for a few minutes.
  • Remove the springform only *after* the pie has cooled.
  • Serve warm (reheat in oven or microwave) or cold, with whipped or ice cream, or freeze.

Steps:

  • Beat one egg and brush into the bottom and sides of the graham cracker pie crust. Cook the pie crust for 5 minutes in the oven at 375 degrees.
  • After removing the pie crust from the oven, combine all filling ingredients and spoon into the crust.
  • Mix all topping ingredients with a pastry cutter until blended well and crumbly. Top filled pie with topping and bake for 50 minutes at 375 degrees.
  • You can use either a regular pastry pie crust, or a graham cracker crust. I use a graham cracker crust because it gives the pie a sweeter, more flavorful taste. I always use a store bought graham cracker crust only because it's faster than making one, however, if you have a great homemade graham cracker crust recipe, the pie will present prettier in a nice pie dish. I usually buy the 9 ounce graham cracker crust. It's a little larger (and will usually be labeled with "2 extra servings" on the package) because by the time you get your topping on the pie it's pretty full.
  • If you would prefer to make this recipe gluten free, use a gluten free flour mixture in the filling and the topping mixes. For the crust substitute with either a gluten free pastry, or a gluten free graham cracker crust, or simply bake without the crust in a pan and top with some vanilla ice cream (Edy's Grand French Vanilla is gluten free).
  • Yum! Enjoy.

DUTCH APPLE PIE

In the 1950's, great diners offered this all-American favorite chock-full of raisins, apples and covered with a lemony sugar glaze. The crust is amazing and the glaze is simply delicious!!! Tip: I use allspice or pumpkin spice since mace is hard to find.

GRANDMA MARGE'S DUTCH APPLE PIE

This is the only fruit filled pie that I will eat. I always request it when going home for the holidays. Good when it is still warm from the oven. And still yummy the next day. Just place a strip of waxed paper over the cut edge of your pie, if you cover the whole thing the topping will get soggy. My mother enjoys her pie with real whipped cream, my husband like his with a scoop of vanilla ice cream, but I love mine just the way it is! Yum

Steps:

  • Preheat oven to 400 degrees. Have your pastry crust in a 9 inch pie plate chilling in the fridge.
  • To make the topping mix flour and brown sugar, cut in butter with a pastry cutter (I believe that is what it is called) or using 2 knives in a criss-cross motion until crumbly. Place in fridge until ready to use.
  • Peel, core and slice the apples. Sprinkle apples with lemon juice. Mix flour, sugar, salt and cinnamon and stir into apples. Pour apple mixture into chilled pie crust and top with crumb topping.
  • Bake for 40-45 minutes or until apples are done. Keep an eye on it while baking as you may have to cover pie crust edges with foil to prevent them from getting too brown. I also place an empty pizza pan on the rack just below my pie to catch any juice dripping.
  • Prep time will vary depending on the way you peel, core & slice the apples, by hand, food processor or machine.
