MOM'S ROAST CHICKEN

This is the best way to cook a whole chicken that roasts up super juicy with crisp, golden skin. It's simply seasoned, but packs in so much flavor. -James Schend, Taste of Home Food Editor

Steps:

  • Rub outside of chicken with salt and pepper. Transfer chicken to a rack on a rimmed baking sheet. Refrigerate, uncovered, overnight., Preheat oven to 450°. Remove chicken from refrigerator while oven heats. Heat a 12-in. cast-iron or ovenproof skillet in the oven for 15 minutes., Place chicken on a work surface, neck side down. Cut through skin where legs connect to body. Press thighs down so joints pop and legs lie flat., Carefully place chicken, breast side up, into hot skillet; press legs down so they lie flat on bottom of pan. Brush with oil. Roast until a thermometer inserted in thickest part of thigh reads 170°-175°, 35-40 minutes. Remove chicken from oven; let stand 10 minutes before carving. If desired, top with herbs before serving.

Growing up my mom would make fried chicken but it was always greasy - and always dry so we did this the other day and it came out so very very good.....so my daughters called this Mom's Best.

Mom's Moist Roasted Chicken image

Steps:

  • Place chicken pieces into buttermilk, hot sauce, salt, pepper and smashed garlic. Make sure you work the buttermilk into the chicken pieces. Cover with plastic wrap and place in the fridge for anywhere from one hour to 24 hours. (I took the skin off of the chicken breasts, left the skin on the smaller pieces.).
  • Remove the chicken from the marinade, do not dry, just let the buttermilk drip off. Combine flour with cayenne salt and pepper, dredge each piece through the flour - in a separate plate add your panko place each piece of chicken into the panko and press into the chicken.
  • Heat the oil to 300°-325°F place the chicken into the oil and allow to cook without turning for the first 8 minutes, turn and when you have completed the turn check the internal temp of the chicken it should be between 140°-145°F.
  • Place onto paper towel to drain any excess oils - place into the oven for 15 minutes at 325°F Your internal temp should be 160°F -- enjoy!

Steps:

  • In a mixing bowl, whisk together the lemon juice, olive oil, oregano, rosemary, chile flakes, nutmeg, salt, pepper and garlic. Place the chicken pieces in a resealable bag and pour the marinade in, coating all of the meat. Allow the chicken to marinate, refrigerated, 1 to 4 hours or up to overnight.
  • Set up a grill for cooking with indirect heat. If using a charcoal grill, build the coals on one side only. If using a gas grill, heat one side only. Allow the temperature to come up to 375 degrees F.
  • Remove the chicken from the marinade. Place the chicken pieces skin-side up on the indirect-heat side of the grill and close the lid. Cook the chicken until almost cooked through, about 10 minutes. Move the chicken pieces over to the direct heat side of the grill and cook until nicely charred and cooked through, 2 to 3 minutes per side. Remove from the grill and allow to rest for 5 minutes before serving.

1/4 cup extra-virgin olive oil

1 tablespoon finely chopped fresh rosemary
2 teaspoons chile flakes

MOM'S FOOLPROOF BUTTER-ROAST CHICKEN

This was the method my mom used to roast chicken: relatively high temperature, a little butter, no basting. It turned out wonderfully each and every time; I'm glad to be able to share her technique with everyone.

Mom's Foolproof Butter-roast Chicken image

Steps:

  • Preheat oven to 450 degrees F.
  • Pat dry the chicken and rub the inside with half of the lemon; squeeze the juice inside also and place in chicken cavity.
  • Season cavity with salt and pepper.
  • Rub outside of chicken with butter, season to taste with salt and pepper, and truss chicken.
  • Place chicken breast up on a rack in a roasting pan in the center of the oven.
  • Roast about one hour or until chicken juices run clear, or until thickest part of the thigh registers 185 degrees F on a meat thermometer.
  • Remove chicken from oven and let stand 10 minutes before carving (for juicier meat).
  • Note: At no time during roasting is basting required.
  • Leave the oven door closed.
