HERBY FLAVOURED BUTTERS

Herby flavoured butters image

Steps:

  • Take100g/4oz softened butter and beat until creamy, then for...
  • Herby butter: stir in 2-3 tbsp chopped fresh mixed herbs (parsley, chervil, dill, marjoram, basil) and salt and freshly ground black pepper to taste.
  • Tarragon and wholegrain mustard butter: stir in 1 tsp chopped fresh tarragon (remember this is very strong) and 1-2 tbsp wholegrain mustard, plus salt and freshly ground black pepper to taste.
  • Mint and cider butter: gradually beat in 1 tbsp cider vinegar, then 2 tbsp chopped fresh mint and salt and freshly ground black pepper to taste.
  • Chive and shallot butter: stir in 1 tbsp finely chopped shallots and 2 tbsp chopped fresh chives, plus salt and freshly ground black pepper to taste.
  • Parsley, lemon and chilli butter: stir in 3 tbsp chopped fresh parsley, 2 tsp finely grated lemon zest, salt to taste and ½ tsp crushed, dried chilli flakes.
  • Dill butter: stir in 2 tbsp finely chopped pickled dill cucumber or gherkins and 3 tbsp chopped fresh dill, plus salt and freshly ground black pepper to taste.
  • After mixing, have the flavoured butters handy in the fridge or freezer ready for slicing. Roll them into logs in wet greaseproof paper and chill until firm. Rewrap in cling film and twist each end to seal. Will keep in the fridge for 4-5 days or in the freezer for up to 3 months.

100g softened butter

Chicken Breasts with Chive and Mustard Sauce image

Steps:

  • 1. Heat the butter in a wide, heavy-bottomed sauté pan until it begins to melt and foam. Season the chicken with salt and pepper. Add the breasts to the pan and brown them on one side, 6 to 8 minutes. Turn them over and cook them until well browned on the other side, about 6 more minutes. The chicken is done when it is firm to the touch and the juices run clear. Transfer the chicken to a plate and cover with foil to keep warm.
  • 2. Add the shallots to the same pan and sauté until softened but not browned, about 2 minutes. Lower the heat, move the pan away from the flame, lean away from it, and carefully pour in the brandy, taking care not to let it flame. (If it does flame, cover with a pot lid until the brandy cooks out.) Continuing to be mindful of potential flare-ups, return the pan to the stove and let the brandy evaporate over low heat.
  • 3. Add the wine to the pan, raise the heat to high, and bring it to a boil. Whisk in the mustard and let reduce for 1 minute. Pour in the broth and cook for 2 to 3 minutes more.
  • 4. Stir in the cream and bring just to a boil. Stir in the chives. Return the chicken breasts to the pan and simmer gently until the stock has reduced and thickened slightly, 4 to 5 minutes.
  • 5. To serve, put 1 chicken breast in the center of each of 4 plates and spoon some sauce over the top.
  • Your Nightly Specials Instead of chicken, use small beefsteaks or pork loin chops. Cooking time will vary based on thickness and desired doneness, but will be about 2 minutes more per side than the chicken.
  • For a spicier sauce, add 1 teaspoon hot, dry, English mustard to the sauce along with the Dijon.

Broccoli and Cauliflower with Lemon, Mustard and Chive Butter image

Steps:

  • Using fork, blend butter, mustard and lemon peel in small bowl. Mix in ­ cup chives. Season with salt and pepper.
  • Cook cauliflower in large pot of boiling salted water 2 minutes. Add broccoli and cook until vegetables are crisp-tender, about 3 minutes longer. Drain. Transfer vegetables to bowl of ice water. Drain. (Butter mixture and vegetables can be made 1 day ahead. Cover separately and chill.)
  • Combine butter mixture and vegetables in large pot. Toss gently over medium heat until vegetables are heated through and coated with butter mixture, about 5 minutes. Transfer to bowl. Sprinkle with remaining 1 tablespoon chives.

Salmon With Chive Mustard Butter image

Steps:

  • In a medium size bowl, combine the mustard, orange zest, 1 1/2 tablespoons lemon juice, salt, pepper, butter, and 3 tablespoons of chives; mix well to blend.
  • Preheat oven to 425.
  • In a lightly buttered baking dish, place the fillets skin side down. Brush each fillet with the remaining lemon juice and season with salt and pepper. Spread about 2-2 1/2 tablespoons of butter mixture over each fillet to coat evenly.
  • Bake for about 12 minutes or until done. To check for doneness, insert a thin-bladed knife into the thickest part of the fillet. The flesh should flake and separate easily and there should be no trace of translucence. The fish should be opaque and flaky. Transfer the fish to a warm platter and brush any remaining mustard chive butter over the fish while it is hot. Sprinkle with the remaining chives to garnish. Cut each fillet in half to serve.
  • Cooking Times For Fish: As a rule of thumb, you can expect fish to take about 12 minutes per inch to cook through in a preheated 425 oven.

Steps:

  • Melt the butter in a small pan and stir in the flour.
  • Remove from the heat and stir in the mustard.
  • Return the pan to the heat and gradually incorporate the milk, beating with a spoon as it comes up to a boil.

Mustard And Chive Butter Garnish With Asparagus image

Steps:

  • Fill a medium bowl with ice water, and set aside. Bring 5 cups water to boil in medium saucepan. Add 2 teaspoons kosher salt and asparagus. Cook until tender, 30 to 45 seconds. Using slotted spoon, transfer asparagus to ice water very briefly, remove, and dry on paper towels. Set aside.
  • Combine butter, mustard, chives, pepper and a pinch of kosher salt in small bowl, and mix with fork until light and fluffy. Scrape butter onto 6-inch square of plastic wrap, roll tightly into log about 1 inch in diameter, and refrigerate until firm.   • Adjust the oven rack to the middle position and preheat to 225°. Cut the steak in half lengthwise and each half in half again to create 4 (almost) equal-sized steaks. Pat the steaks dry with paper towels. Combine the 2 teaspoons kosher salt, sugar and 1/2 teaspoon pepper together in a small bowl and sprinkle all over the steaks, pressing gently to adhere. Place the steaks on a wire rack set inside a rimmed baking sheet and transfer to the oven. Cook for 30 to 40 minutes, until an instant-read thermometer reads 120° in the thickest part of the steak.
  • In the meantime, combine the butter, 1 tablespoon chives, Dijon mustard, lemon zest and lemon juice in a small bowl and stir to thoroughly combine. Set aside.
  • Heat the oil in a 12-inch (preferably cast-iron) skillet over medium-high heat. When smoking, add the steaks, flipping every 1 minute, until a brown crust forms, about 5 to 7 minutes total depending on the thickness of the steak. Remove the steaks to a wire cooling rack and let rest for 10 minutes. While the steaks are resting, sear the halved lemons for about 1 to 2 minutes, until golden brown and juicy.
  • Thinly slice the steaks against the grain. Spread some of the butter mixture on top of each steak and sprinkle with the remaining 2 tablespoons chopped chives. Season with flaky sea salt and pepper before serving, if desired. Serve with the grilled lemon halves.
