CREAMY TUNA NOODLE CASSEROLE

Steps:
- Heat oven to 350ºF.
- Mix cream cheese, 2 Tbsp. milk and garlic powder until blended. Combine noodles, tuna, peas, mushrooms and remaining milk in large bowl. Add cream cheese mixture; mix lightly. Spoon into 1-1/2-qt. casserole sprayed with cooking spray; cover.
- Bake 20 min. Meanwhile, mix cracker crumbs, Parmesan and butter until blended.
- Stir noodle mixture; top with crumbs. Bake, uncovered, 5 min. or until crumb topping is golden brown.

MY SWISS CHEESE TUNA CASSEROLE
Wow, this is not your ordinary tuna casserole recipe. The traditional casserole is brought to a whole new level in this recipe (almost a little fancy). From the albacore tuna to the Swiss cheese, the flavor is a bit richer in this casserole. We loved the texture from big chunks of mushrooms. Sweet peas balance out the savoriness...

Steps:
- 1. Slice the mushrooms and dice the onions. Sauté in butter over medium heat.
- 2. Add Worcestershire sauce. I use quite a bit.
- 3. Sauté stirring frequently until done.
- 4. While the mushrooms and onions are cooking, boil the eggs and prepare the noodles as directed. Cook only to al dente firmness so they don't become mushy in the oven.
- 5. When mushrooms and onions are done, add tuna and favorite seasonings. Cook on low for a couple of minutes stirring frequently. In the same pan that you sauteed the mushrooms and onions in, add the soup and milk. Stir over low heat until smooth.
- 6. Drain noodles and return to pot. Add tuna mixture and coat the noodles well. Put eggs into an egg slicer. Cut lengthwise. Then turn again and cut. Add to noodles.
- 7. After the eggs are stirred in, add peas. Now is a good time to add more seasoning. Stir to blend ingredients.
- 8. Transfer mixture to a 9x13 baking dish.
- 9. Top with Swiss cheese slices.
- 10. Tightly cover with foil and bake at 350 for 30 to 45 minutes, or until bubbly and cheese is melted.
- 11. Remove foil and cover with French fried onions. Return to oven for a few minutes until the onions are browned (about 10 minutes).
- 12. Make sure you let it cool for a while. It will be lava hot!! I used to make this with Colby jack cheese and it's really good that way too!
TUNA BAKE WITH CHEESE SWIRLS
My family thinks this dish is a tasty alternative to regular tuna casserole. The proof is that there are never any leftovers.

- In a saucepan, saute onion and green pepper in butter. Blend in flour until smooth. Gradually stir in milk; bring to a boil over medium heat. Cook and stir 2 minutes. Remove from heat; stir in soup, tuna, lemon juice and salt. Pour into an ungreased 13x9-in. baking dish. , Preheat oven to 400°. For dough, combine biscuit mix and milk until blended. On a lightly floured surface, roll dough into a 12x9-in. rectangle. Sprinkle with cheese, pimientos and parsley. Roll up, jelly-roll style, starting with a long side. Steps:
- Cook spaghetti according to package directions, drain well.
- Melt 4 Tbs margarine, pour into large bowl.
- Mix spaghetti & parmesan cheese w/ melted margarine.
- Spread into greased 9-inch baking dish, set aside.
- Melt remaining margarine in large frying pan over medium heat.
- Add onion, cook until soft, not browned.
- Stir in dill weed, garlic salt & mustard.
- Remove from heat.
- Mix in peas, tuna, cottage cheese and 1 cup of Swiss Cheese.
- Pour eggs over set aside spaghetti.
- Spread tuna mixture over spaghetti.
- Bake, loosely covered, at 350°F about 45 minutes.
- Uncover, sprinkle with remaining Swiss cheese. Bake for another 5 minutes, until cheese is melted.

EASY CHEESY TUNA CASSEROLE

- Bring a large pot of lightly salted water to a boil. Add 1 tablespoon oil to the water to prevent sticking. Add pasta and cook for 8 to 10 minutes or until al dente; drain. Preheat oven to 350 degrees F (175 degrees C).
- In a 2 quart saucepan over medium heat, combine the cream of mushroom soup, mixed vegetables, canned tuna, and 1 cup of the cheddar cheese. Gently fold pasta into the soup mixture and mix thoroughly. Pour pasta and soup mixture into a 11x7 inch baking dish. Sprinkle remaining cup of cheese on top.

- Preheat oven to 425 degrees. In a large pot of boiling salted water, cook pasta 2 minutes less than package instructions (it will be undercooked). Drain. In a small bowl, toss together panko, Parmesan, and 2 teaspoons oil.
- In pot, heat 2 tablespoons oil over medium-high. Add onion, season with salt and pepper, and cook until softened, 8 minutes. Add flour and whisk to coat onion with flour. Slowly whisk in broth, then milk.
- Cook, stirring constantly, until sauce comes to a boil. Reduce heat and simmer, stirring frequently, until sauce is thickened, about 8 minutes. Stir in pasta, tuna, and peas and season to taste with salt and pepper.

CHEESY TUNA NOODLE CASSEROLE
This was a favorite in my home growing up and now it's a favorite of my family as well. I double the recipe these days for my husband and three children. For a change of pace I add canned chopped green chilies and 1/8 teaspoon cayenne, use pasta shells or spirals, or top the casserole with sliced American or cheddar cheese instead of breadcrumbs.

- Preheat oven to 350 degrees F (175 degrees C).
- Bring a large pot of salted water to boil; place noodles in water and bring to boil again. Cook until al dente; drain well.
- While noodles are cooking saute in a medium size saucepan vegetable oil, onion, green and red bell peppers. Saute until tender.
- Pour soup, tuna, milk, salt and black pepper into the saucepan. Mix well over medium-low heat.
- Fold the noodles into the saucepan.
- Pour entire mixture into a 2 quart casserole. Sprinkle bread crumbs over the mixture. Bake 20 to 30 minutes or until the top is crisp and golden brown.

- Preheat the oven to 400°F (200°C). Lightly grease a 9 x 13-inch (22 x 33cm) baking dish with nonstick spray.
- Melt the butter in a large saucepan over medium heat. Add the onion and sauté until softened and very fragrant, about 5 minutes. Stir in the garlic, flour, Italian seasoning, and salt and cook for another minute, until thickened.
- Slowly pour in the chicken broth and milk and stir to combine. Bring to a simmer, stirring constantly. Once the mixture has thickened, 10-12 minutes, stir in the peas, carrots, and tuna.
- Spread the cooked egg noodles in the prepared baking dish.

- 1. Preheat Oven to 350 degrees. Boil noodles in medium pot for 12 mins.(or until tender but not overcooked)
- 2. Dice and chop onion and celery and saute in skillet with Pam or a few drops of oil and a few drops of water. Until translucent.(3-4) mins.
- 3. Then remove tuna from cans(strain off liquid first)and add to celery and onions in skillet. Add cream of celery soup and milk. Stir on low heat.
- 4. Drain noodles and put in round or square 9x9 size casserole dish. Add skillet ingredients. Add salt and pepper. Toss until thoroughly mixed. Top with shredded Swiss or Mozzarella. You can mix the cheese in a little bit into the casserole.
- 5. Bake for 15 mins to melt cheese. Serve warm.
