NACHO CHEESE CASSEROLE

Steps:
- For the sauce: In a saucepan over medium heat, combine the vegetable oil and flour. Cook, whisking, until it begins to bubble; let it bubble for 1 minute. Pour in the enchilada sauce, chicken broth, cumin and some salt and pepper. Raise the heat and bring to a boil. Reduce to a simmer while you prepare the meat.
- For the meat: Brown the ground beef with the garlic and onions in a large skillet over medium-high heat, 5 to 8 minutes. Drain the fat and stir in the cumin and salt to combine. Stir the meat into the simmering sauce and shut off the heat.
- For the casserole: Preheat the oven to 350 degrees F. Lightly grease one 9-by-13-inch aluminum foil baking dish and one 9-by-13-inch glass baking dish with cooking spray.
- Break up the chips by crushing the bag slightly with your hands. Make sure not to over crush the chips; you're looking for pieces, not crumbs. Mix together the cheeses in a medium bowl.
- Divide a third of the broken chips between the prepared baking dishes. Top each with a quarter of the beef mixture and 2/3 cup of the cheese. Repeat, adding another layer of chips, beef mix and cheese to each. Finish by dividing the remaining chips between the baking dishes. Top each with 2/3 cup cheese.
- Cover the glass baking dish with foil and bake for 25 minutes. Remove the foil and continue to bake until bubbly, another 15 to 20 minutes.
- For the toppings: Top the cooked casserole with the shredded romaine, diced Roma tomatoes, sour cream and sliced black olives and green onions before serving.
- Allow the aluminum foil baking dish to cool completely while the other is baking. Once cool, wrap tightly in plastic wrap and foil. Transfer to the freezer.
- To bake from frozen, preheat the oven to 350 degrees F.
- Unwrap the baking dish and re-cover with foil. Bake, covered, for 35 to 40 minutes. Uncover and bake until bubbly, 15 to 20 minutes. Top with another batch of the toppings.
NACHO GRANDE CASSEROLE

- 1. Brown ground beef and onion in large skillet. Cook until beef is no longer pink. Drain
- 2. Add beans, corn, tomato sauce and seasoning mix. Stir until blended. Simmer over medium heat for 10 minutes
- 3. Place half of beef mixture into a lightly greased 13x9" baking dish. Top with 1 1/2 cups of crushed chips and 1 1/2 cup of cheese Add remaining beef mixture, remaining crushed chips and reamining cheese. Bake at 350 degrees for 25-30 minutes or until bubbly and golden. Sprinkle with chopped tomatoes and green onions
NACHO GRANDE CASSEROLE
This can also be turned into a hearty appetized by adding tortilla chips for dipping! Sometimes we add a spoonful of sour cream to the top of this when we serve it!

- Cook beef and onion in large pan until cooked. Drain. Add beans, corn, tomato sauce and taco seasoning. Stir well. Simmer over medium heat 10 minutes. Pour half of meat mixture into lightly greased 13"x9" baking dish. Top with 1 1/2 cups cheese and half of crushed chips. Top with remaining beef mixture and top with remaining chips and cheese. BEEF NACHO CASSEROLE
A simple meal to whip up in less than an hour that even the kids are sure to love. Layers of seasoned ground beef, corn, tortilla chips and cheese are baked under a layer of Colby cheese. Monterey Jack is also good in place of the Colby cheese.

- Preheat the oven to 350 degrees F (175 degrees C).
- Place ground beef in a large skillet over medium-high heat. Cook, stirring to crumble, until evenly browned. Drain grease. Remove from the heat, and stir the salsa, corn, mayonnaise and chili powder into the beef. In a 2 quart casserole dish, layer the ground beef mixture, tortilla chips and cheese twice, ending with cheese on top.
- Bake for 20 minutes uncovered in the preheated oven, until cheese is melted and dish is thoroughly heated.

- In 1-quart saucepan, combine soup and salsa; set aside.
- In 10-inch skillet over medium-high heat, cook beef and onion until beef is browned and onion is tender, stirring to separate meat.
- Spoon off fat.
- Add 1/2 cup soup mixture.
- Reduce heat to medium.
- Heat through, stirring occasionally.
- Over medium heat, heat remaining soup mixture, stirring occasionally.

- 1. Brown ground beef and onion in a Dutch oven and drain. add tomato sauce, beans, seasoning mix and corn and stir until blended. Simmer over medium heat for 10 minutes.
- 2. Pour half of beef mixture into a greased 13" x 9" baking dish. Top with half each of the cheese and crushed chips; repeat layers.
- 3. Bake at 350 degrees for 25-30 minutes, until bubbly and golden.
- 4. Top portions with a dollop of sour cream and a sprinkling of tomato and green onions, if desired. Serve with avocados, warm tortilla, rice and/or beans.

- Brown the beef in large skillet and drain (in colander rinsing with hot water if possible to reduce fat intake).
- Return to skillet with water, beans, taco seasoning, onion and green chilies.
- Cook until everything is mixed well under medium-low heat stirring often until a low boil is achieved.
- Reduce heat cover and simmer 10 minutes stirring every couple minutes.
- The construction.
- On a large plate cover with tortilla chips and dollop generous portions of the meat mixture on chips.
- Now pour over WARMED cheese sauce.
- Top with the lettuce next, then what ever order you want of the other veggies except the JP's.
- Then add the JP's AS MUCH AS YOU CAN MUSTER YEA!
- A couple dollops of sour cream and you are ready for a very filling, spicy treat that you will not forget--EVER.
