Steps:
- Preheat oven to 350 degrees.
- In large bowl combine bananas, vanilla and coconut oil.
- In another bowl wisk oats, almond meal, coconut , cinnamon, salt and baking powder.
- Add dry ingredients to wet ones.
- Fold in chocolate chunks.
- Drop small dollops on parchment or silpat lined baking sheet.
- Bake 14-18 minutes, as long as possible without burning.

No chilling time required with this easy recipe. I have been making this for many years. I usually have to double the recipe. You can reroll many times. Decorate with sugar or frosting whichever you prefer.

Steps:
- Thoroughly cream butter and sugar; add egg and beat well.
- Add sifted dry ingredients alternately with milk and vanilla; mix thoroughly.
- Roll 1/8 inch thick on lightly floured surface.
- Cut with floured cookie cutters; sprinkle with sugar, if desired.
- Bake 375° oven about 15 minutes or until pale-golden.
- These maybe decorated before or after baking.

Add the dry ingredients to the wet ingredients and stir until combined. Fold in the chocolate chunks/chips.The dough is a bit looser than a standard cookie dough, don't worry about it. Drop dollops of the dough, each about 1 - 2 tablespoons in size, an inch apart, onto a parchment (or Silpat) lined baking sheet. Bake for 13 - 15 minutes. Until golden on the bottoms.
