FARMER'S CHEESE WITH HONEY, RAISINS, CINNAMON AND TOASTED WALNUTS

Farmer's Cheese with Honey, Raisins, Cinnamon and Toasted Walnuts image

Steps:

  • Preheat oven 400 degrees F.
  • Lay walnuts on baking sheet. Roast and shake once or twice to insure even toasting. Roast until a shade darker and aromatic, about 15 minutes.
  • Remove walnuts and set aside to cool.
  • Turn the oven to broil.
  • Place farmer's cheese in large mixing bowl. Add the remaining ingredients and the toasted walnuts. Mix thoroughly. Transfer mixture to a small baking dish (aluminum disposable is fine).
  • Place under broiler until brown and bubbly on top, about 2 to 3 minutes.
  • Serve hot or at room temperature with crackers of any kind or slices of crusty bread.

Noodle Pudding With Farmer Cheese and Lingonberries image

Steps:

  • Cook and drain noodles according to package directions(make sure they're not mushy). Set noodles aside.
  • Heat the oven to 350 degrees F, and butter an 8 inch square baking dish.
  • In a large bowl, whisk the eggs until frothy.
  • Whisk in the cheese, brown sugar, sour cream, milk, salt, vanilla, cinnamon, nutmeg, and apple juice concentrate.
  • Then stir in the noodles, lingonberry preserves, and butter pieces.
  • Pour mixture into prepared pan, sprinkle with the cinnamon sugar mixture, and bake until pudding is set and butter is bubbling around the edges, about 30-40 minutes.
  • Let cool 10 minutes before serving.
  • Serve warm or at room temperature, cut into squares and topped with a dollop of sour cream if desired.

8 ounces medium wide egg noodles

Aunt Sylvia's Noodle Pudding image

Steps:

  • Preheat the oven to 350 degrees F. In a small bowl, mix together the corn flakes, 1/4 cup of the sugar, cinnamon, and nutmeg.
  • Bring a large pot of water to a boil, salt, and boil the noodles according to package instructions. Drain, and transfer to a large bowl, and toss with the 1/3 cup butter.
  • Meanwhile, in large bowl, combine the cream cheese and remaining 1/2 cup sugar and mix, using a hand held mixer, until light and airy. Add the eggs, milk, and nectar and continue mixing until fully incorporated. Stir the cheese mixture evenly into the noodles. Transfer the noodle mixture into a buttered 9- x 13- x 2-inch baking dish. (Scrap the bowl with a rubber spatula to get all the custard.) Scatter the top of the pudding with the corn flake mixture. Bake until set and golden brown, about 1 hour. Set aside to cool slightly before serving.

Steps:

  • Preheat oven to 350 degrees F. Grease a 13 by 9 by 2 inch pan. In a large bowl whisk the eggs, sour cream, melted butter/margarine, vanilla, lemon juice, and sugar until blended. Gently fold in the raisins, sliced apples, and cooked noodles. Pour the mixture into the greased pan, using a rubber spatula to even out the surface. Sprinkle with cinnamon.   • Boil noodles in salted water until just barely tender. Strain the noodles and rinse with cold water; place in bowl.
  • Melt the butter and put half in a large casserole or baking dish, coating the sides and bottom.
  • Preheat oven to 350° and place the empty dish in the oven.

  • Heat oven to 350 degrees. In a small saucepan over low heat, warm the milk, butter, 1 teaspoon cinnamon, 1/2 cup sugar and the salt.   • Preheat oven to 350 degrees F (175 degrees C). Grease a large casserole dish.
  • Bring a large pot of lightly salted water to a boil. Add egg noodles and cook for 8 to 10 minutes or until al dente; drain.
