MAPLE-GLAZED SALMON

Delicious maple-glazed salmon is a little on the sweet side, but not too much. The whole house smells wonderful when this is cooking; it's a great warm winter meal! I have a hard time finding good recipes my family likes with fish, since my husband is not fond of lemon. This is a perfect compromise!

Steps:

  • Preheat the oven to 400 degrees F (200 degrees C).
  • Mix maple syrup, soy sauce, garlic, dill, garlic salt, and pepper together in a small bowl.
  • Place salmon in a shallow baking dish and coat with the maple syrup mixture. Cover dish and marinate salmon in the refrigerator, turning once, about 30 minutes.
  • Bake salmon, uncovered, in the preheated oven until fish flakes easily with a fork, about 25 minutes.

Steps:

  • For the salmon, heat vegetable oil on medium-high in a cast-iron skillet.
  • For the broccoli, fill a medium pot halfway with water. Add a dash of salt and start boiling water.
  • In the meantime, whisk together maple syrup, orange juice, soy sauce, garlic, salt, and pepper in a medium bowl.
  • Set aside 2 tablespoons for topping later.
  • Place salmon fillets inside the bowl and make sure each side is covered with sauce.
  • Sear the salmon 2-3 minutes on each side.
  • Brush the tops with the sauce set aside.
  • With the pot of water boiling, add the broccoli and cover lid. Blanch for 2 minutes.
  • Drain under cold water to stop the cooking.
  • In the drained pot of broccoli, stir in butter, soy sauce, red pepper flakes, some lemon zest, and garlic on low heat. Mix until broccoli is well-coated.
  • On each plate, serve a filet of salmon and scoop of broccoli.
  • Top with reserved marinade and sprinkle parsley for garnish.
  • Enjoy!

Steps:

  • If you use dry rind instead of fresh you will need to rehydrate it with orange just for the best results.
  • Wash salmon and pat dry.
  • Combine ginger, basil, pepper, rind and shallots.
  • Lightly brush salmon with Grand Marnier. Coat salmon on both sides with herb mixture and refrigerate overnight (at least 4 hours).
  • Preheat oven to 350°F.
  • Dissolve cornstarch in enough hot water to make a smooth paste. Slowly whisk in liquid glaze ingredient. Whisk until smooth.
  • Place salmon in shallow baking dishes. Spoon glaze over fish.
  • Cook until done (about 20 minutes for 1 inch fillets or 25 for 2 inch fillets. )Baste the fish once or twice during cooking It should flake easily.
  • Decorate with orange slices. Shown in the picture here with a lemon pig.
  • To make a lemon pig - choose the snout end of the pig and decide which will be the bottom. Cut the bottom off so the pig will sit flat. At the snout end cut two flaps for the ears. Pull them out a little so the will stand out but not too much or it will break. Use cloves for the eyes.

Salmon is my version of fast food. It's already so wonderfully flavorful on its own that I don't have to put much effort into it. A brush of oil and a sprinkle of salt and pepper, plus a few minutes in a hot oven or skillet and dinner is ready. In this recipe I whisk together marmalade, soy sauce and some freshly grated ginger, then I add a squeeze of fresh orange juice, pour it over the salmon, and then into the oven it goes. Steps:

  • Preheat the oven to 400 degrees F. Line a rimmed baking sheet or baking pan with foil. Sprinkle the salmon generously with salt and pepper and place on the foil.
  • Whisk the marmalade, ginger, soy sauce, oil and orange juice together in a small bowl. Pour over the salmon. Drop the peel form the orange onto the baking sheet along with the salmon. Bake until the salmon is cooked through, 10 to 15 minutes. If you like, turn the oven to broil for the last 3 or so minutes of cooking to brown the top of the fillets.
  • Serve the salmon immediately or cool and refrigerate to use in salads or sandwiches.

Steps:

  • Remove salmon from the refrigerator. Heat oven to 325 degrees.
  • Bundle the cilantro sprigs by their stems and hold them tightly, then slice the stems crosswise until you get to the leaves. Reserve leaves for garnish. Transfer sliced stems to a small bowl and stir in the maple syrup, mustard and mayonnaise until well mixed.
  • Season the salmon all over with salt and pepper and place in a baking dish, skin-side down if there is skin. Slather the maple sauce all over the top.
  • Bake until a paring knife slides into the center with only a little resistance, 15 to 20 minutes. When you remove the knife and touch the blade to your upper lip, it should feel very warm but not hot. The salmon will continue to heat through out of the oven while in the baking dish. Top with the reserved cilantro leaves, and squeeze lemon wedges all over just before serving.
