Steps:

  • Preheat oven to 400°. Place cod in an 8-in. square baking dish coated with cooking spray. Mix remaining ingredients; spread over fillets., Bake, uncovered, until fish just begins to flake easily with a fork, 15-20 minutes.

Steps:

  • 1. Preheat oven to 350 degrees.
  • 2. Spray rack over jelly roll pan with cooking spray.
  • 3. In a small shallow dish, mix bread crumbs, parmesan cheese, dry basil, salt, pepper and paprika.
  • 4. In another dish, mix melted butter and parsley.
  • 5. Brush butter mixture on both sides of fish and dip into crumb mixture.
  • 6. Place fish on rack.
  • 7. Bake uncovered at 350 for about 25 minutes or until fish flakes easily with a fork. .
  • 8. Sprinkle with more fresh parsley if desired.

4 (approx. 6 oz.) cod or other white fish fillets (4 servings)
1/4 tsp salt
1 c dry italian style bread cumbs
1/3 c grated parmesan cheese (kraft green jar type)
1 tsp dry basil
1/2 tsp paprika
1/4 c butter, melted
2 Tbsp chopped, fresh parsley

Steps:

  • In a nonstick skillet, saute garlic in oil until tender. Stir in flour, salt and pepper until blended (mixture will be thick). Gradually add milk, stirring constantly. Bring to a boil; cook and stir for 2 minutes or until thickened. Remove from the heat; gradually stir in Parmesan cheese and basil until cheese is melted. Serve over pasta.
