These are delicious cornish game hens, They take awhile to prepare ,but, are worth it. I have tripled the recipe. these are a family favorite. I found the recipe some time ago on the web.

Cornish Game Hens With Peach Glaze image

Steps:

  • Cut the hens down the backbone (split).
  • Brine the hens: dissolve the salt in water,put hens& salted water into large bowl.
  • (I usually put them into a large plactic bag) refrigerate 2 to 3 hours.
  • Remove hens, Rinse thoroughly, pat dry, prick the skin allover the breast and legs with point of paring knife.
  • Melt the butter in small pan& mix with preserves.
  • Add salt, pepper& basil.
  • Preheat oven to 400 degrees.
  • Place hens in shallow pan (I usually line pan with foil for easy clean-up).
  • Rub hens with butter.
  • Spoon butter& preserve mixture over hens.
  • Bake 35 to 45 minutes.

2 Cornish hens
1/3 cup salt
2 tablespoons butter
salt and pepper
basil
1/2 cup peach preserves (can use Apricot)
1/2 cup butter

Peach Glazed Cornish Hens with Ginger image

Steps:

  • 1. Place hens, skin side up, in a 13 x 9 x 2 inch baking dish. Sprinkle with salt; broil 6 inches from the heat 3 to 5 minutes or until the skin is lightly browned. Remove from the oven.
  • 2. Combine peaches and remaining ingredients in a small saucepan. Cook over medium heat 5 minutes, stirring occasionally.
  • 3. Pour sauce over the hens. Bake uncovered, at 375° for 30 minutes or until done.

2 cornish hens, split (1 1/2 pounds to 2 pounds each)
1/2 tsp salt
1 c dried peaches, chopped
1/4 c fresh orange juice
1 green onion, sliced
2 Tbsp fresh ginger, grated
2 Tbsp brown sugar
2 Tbsp fresh lime juice
1 Tbsp soy sauce
1 Tbsp vegetable oil

Steps:

  • Wash the hens and dry.
  • Salt and pepper the hens.
  • Stuff the birds with the vegetable dressing.
  • Cover the birds loosely with foil and bake in 375°F oven for 45 minutes.
  • Uncover and continue baking for 15 minutes.
  • Mean while mix the marmalade and garlic in a small pot to melt the marmalade.
  • Paint the birds with the glaze, decorate with the orange slices and continue baking for 15 minutes or until golden and the birds are done (watch you don't burn the birds).

Pan Roasted Chicken With Bourbon Peach Glaze image

Steps:

  • Pound chicken breasts lightly between two sheets of plastic wrap to achieve even thickness. Season with salt and pepper.
  • Heat oil in a cast iron or heavy nonstick skillet. Add chicken and cook through, browning on both sides, turning occasionally. Remove breasts and cover with foil to keep warm.
  • Add onion to skillet and cook until caramelized, scraping the skillet gently to loosen crusted meat particles. Add remaining ingredients and cook to reduce to a saucy consistency. Return chicken to the pan along with any juices and stir sauce to combine, spooning sauce over chicken.
  • Great served over rice, mashed potatoes or noodles.

Steps:

  • 1. take 4 peaches set aside to use later... peel,pit and slice the rest into lg pan[peel and slice over this pan so juices go into pan] now use potato masher and mash fruit...put on low heat on stove...bring to a boil...watch close stir often [so it does not burn
  • 2. while peaches are cookin...mix all dry spices and splenda in small bowl add liquids in another small bowl
  • 3. after peaches have cooked bout 20 min add spices mix well then add liquids stir well........turn pan very low and let simmer several hrs stirrin oftenafter bout 4 hrs cookin peel ,pit and slice,then dice last 4 peaches add to pan cook 10 min more let sit on store bout 90 min stir several times so ni film forms...then put in fridge til cold....
  • 4. divid into small zipper bags[i used snack size] then put then all in gallon zipper bag...but use what yur family needs....this is great on ham,ribs,chicken,even burgers i hope ya give it a try!!!!

  • Preheat oven to 350°. Place hens, breast side up, on a rack in a shallow roasting pan. Sprinkle with salt and pepper. This is a recipe I found in a magazine a few years back and it never disappoints! I usually use this for dinner parties because it can be prepared ahead of time and takes very little effort. This calls for Cornish Game Hens but I always use mixed pieces of chicken with the skin on! Just watch because the chicken breasts cook faster than the dark meat. I never alter the ingredients but I do marinate it for at least 4 hours or longer. I serve this with garlic-mashed potatoes and broccoli!! Oh- don't forget the last step with the reserve marinade! Steps:

  • Whisk first 5 ingredients in a medium bowl. Transfer half of marinade to small saucepan; reserve. Pour remaining marinade into 15x10x2-inch glass pyrex dish. Add hens; turn to coat. Marinate 30 minutes to 4 hours in the refrigerator, turning occasionally.

Gingery Grilled Chicken Thighs With Charred Peaches image

Steps:

  • Marinate the chicken: In a small bowl, mix together balsamic vinegar, grated ginger and a pinch of salt.
  • Season chicken all over with salt, and put it in a larger bowl or resealable bag. Add 2 tablespoons of the balsamic mixture. (Give it a stir before measuring in case any of the ginger has fallen to the bottom. Save remaining balsamic for serving.) Add the thyme, garlic, soy sauce, and 1 teaspoon lime juice. Cover bowl or close bag, and let chicken marinate in the refrigerator for at least 2 hours and up to overnight.
  • Light the grill or heat the broiler, arranging the rack about 4 inches from the heat source.
  • Prepare the peaches: In a bowl, combine butter, thyme and honey. Brush peaches lightly with butter mixture and place in a grilling basket, if you have one, or directly on the grill. Grill over direct heat until just charred, 2 to 4 minutes per side. You'll know they are done when the skin curls back and the flesh starts to melt. Transfer to a serving platter or plates, and, if you like, drizzle with a little more of the butter mixture and sprinkle with flaky sea salt.
  • If there's room on the grill, cook the chicken at the same time (or wait until peaches are done). Brush off any clinging pieces of marinade from chicken, pat it dry, and coat lightly with oil. Grill or broil until charred and browned, 4 to 6 minutes per side.
  • Transfer chicken to a platter or serving plates, along with the peaches. Serve with dollops of yogurt on the side if you like, and a drizzle with some of the remaining gingery balsamic and a little more olive oil. Scatter with scallions and basil, if using, for garnish.

  • Mix olive oil, 1 tablespoon Dijon mustard, lemon zest and juice, orange zest and juice, garlic, salt, and black pepper together in a large resealable bag. Add hens, seal bag, and coat hens with marinade. Refrigerate for at least 1 hour, flipping the bag 1 or 2 times to redistribute marinade.
