PEACH SORBET

Use very ripe peaches for this sorbet; one way of knowing they are ripe is when the skins come off effortlessly.

Peach Sorbet image

Steps:

  • Add peaches to a blender; blend until smooth. Measure out 1 1/2 cups peach puree into a bowl. Immediately stir in lemon juice and refrigerate.
  • Combine water and sugar in a small saucepan and bring to a boil. Stir until sugar is dissolved, about 1 minute. Remove from stove and cool to room temperature. Refrigerate simple syrup until chilled, about 1 hour.
  • Pour chilled peach puree and simple syrup into an ice cream maker and freeze according to manufacturer's instructions, about 20 minutes. Transfer to an airtight container and freeze until firm, about 4 hours.

Steps:

  • In food processor or blender, pulse/chop peaches. Add remaining ingredients; blend until creamy. May be served immediately or stored in freezer until serving time. (Other frozen fruits may be substituted for peaches.)

White Peach Sherbet image

Steps:

  • Coarsely chop peaches, and place them in a large bowl. Crush with your hands or a potato masher until only very small pieces remain. Stir in lemon juice, sugar, and herbs if desired. Cover, and refrigerate, stirring occasionally, 1 hour. Stir in vodka, then the cream. Discard herbs.
  • Freeze peach mixture in an ice cream maker according to manufacturer's instructions until thick but not frozen solid. Transfer to a chilled airtight container; freeze at least 2 hours (up to 2 weeks). Let stand at room temperature 10 minutes before serving.

2 1/2 pounds ripe white peaches, peeled
Juice of 1 lemon (2 to 3 tablespoons)
1/2 to 1 cup sugar
2 sprigs fresh lavender, peppermint, or bush basil (optional)
1 tablespoon vodka

  • When firm, place in a food processor and process until fluffy.
  • Refreeze until firm.
