BUTTERY PECAN ROUNDS
Pecan halves hint at the rich flavor of these cookies. Butter brings out the nut's unique flavor.

Steps:
- Preheat oven to 325 degrees. Sift together flour and salt into a small bowl; set aside. Put butter and sugar in the bowl of an electric mixer fitted with the paddle attachment; mix on medium speed until smooth, about 3 minutes. Mix in egg yolk until combined. Reduce speed to low. Add flour mixture;mix until combined. Mix in chopped pecans.
- Using a 1 1/4-inch ice cream scoop, drop batter onto baking sheets lined with parchment paper, spacing about 3 inches apart. Press 1 pecan half into the center of each. Bake cookies, rotating sheets halfway through, until golden brown, 12 to 15 minutes. Let cool completely on sheets on wire racks.

Steps:
- Preheat oven to 325 degrees F (170 degrees C).
- Cream butter or margarine, gradually adding confectioners' sugar and salt. Cream until light and fluffy.
- Stir in pecans and vanilla. Add flour gradually. Mix well. Shape dough into crescents using a teaspoon full for each crescent. Place on ungreased cookie sheet and bake 15-30 minutes. Do not brown. Let cool slightly, then roll cookies in additional confectioners' sugar.

BROWN SUGAR PECAN ROUNDS ALA TALL OAKS INN
The secret is out on the cookies baked at Tall Oaks Inn. The owner (my sister-in-law) had to sign a non-disclosure agreement on the recipes for Chocolate Chip, Peanut Butter, Cracked Sugar and Brown Sugar Pecan Rounds. These cookies were kept in cookie jars in the dining room for all the guests to enjoy whenever they needed a sweet fix. Now that the Inn has closed, the recipes were released. - Preheat oven to 375 degrees F (190 degrees C). Line baking sheets with parchment paper.
- In a skillet over medium heat toast the pecans with 2 tablespoons of the butter, cooking for about 5 minutes. Sprinkle 1 1/2 tablespoons of the white sugar over the top.
- Cream 1/2 cup of the butter with the white and brown sugar. Beat in the egg and vanilla. Mix in the flour, baking soda and salt. Stir in the pecan mixture.
- Drop tablespoonfuls of dough onto the prepared baking sheets. Bake at 375 degrees F (190 degrees C) for 10 to 12 minutes until golden brown. Let cool and devour.

PECAN ROUNDS - COOKIES
These unique cookies use pecan paste, which you make by pureeing toasted pecans, as the base. Much less flour than regular cookies, and only one egg! They make fabulous gifts when stacked 4-5 high and tied with ribbon.

- To toast pecan pieces: Spread nuts in single layer in shallow baking pan. Bake at 350°F for 5 to 10 minutes or until light golden brown; watch carefully and stir once or twice. Cool.
- Place nuts in food processor; cover. Process by pulsing with on/off action until paste forms (will appear grainy).
- Add butter, sugars, baking soda and baking powder; process just until combined.
- Add egg and vanilla; process just until combined.
- Add flour. Process by pulsing with on/off action just until combined.
- Transfer to large bowl. Cover; refrigerate for a minimum of 1 hour until firm.
- Heat oven to 375 Degrees F.
- Shape dough into 1-inch balls and roll in additional granulated sugar to coat. If you choose to use a cookie scooper, you must then hand-roll each ball for best, optimal results. It's worth the extra step; I've tried both ways!
- Place, 2 inches apart, on ungreased or Silpat-lined cookie sheets. Flatten slightly with bottom of glass, dipping in sugar to prevent sticking.
- Bake 7 to 9 minutes or until lightly browned. Remove from oven and immediately sprinkle additional granulated sugar over warm cookies for extra sparkle. Cool for 2 minutes; remove from cookie sheets. Cool on wire racks.

- In a large bowl, cream butter and cheese until light and fluffy. In another bowl, whisk flour, salt, garlic powder and cayenne; gradually beat into creamed mixture. Stir in pecans., Shape into eight 10-in. long logs. Wrap in plastic. Refrigerate 2 hours or until firm., Preheat oven to 350°. Unwrap and cut dough crosswise into 1/4-in. slices. Place 1 in. apart on ungreased baking sheets. Bake until edges are crisp and lightly browned, 12-14 minutes. Cool on pans 1 minute. Remove to wire racks to cool. Refrigerate in airtight containers. Freeze option: Place wrapped logs in resealable plastic freezer bags; place in freezer. To use, unwrap frozen logs and cut into slices. If necessary, let dough stand 15 minutes at room temperature before cutting. Bake as directed, increasing time by 1-2 minutes.

CHEDDAR PECAN ROUNDS

Steps:
- 1. Melt butter and put into large bowl. Add seasoning and pecans and mix well. Add the 16oz of freshly shredded Cheddar Cheese to the butter mixture and mix well; add flour and baking powder together and gradually add to cheese mixture. You might have to use your hands to mix all together. Make 4 balls out of the mixture and roll each ball on wax paper making 4 rolls about the sized of a quarter. wrap in the wax paper and freeze. Defrost each roll as needed and cut into 1/8 inch and put on a cookie sheet with quick release foil lined pans. Bake at 350 for 12 minutes.
- 2. This recipe makes alot of cheese rounds but the good part is that you can keep them in the freezer and take out as needed. Enjoy!

Bake in preheated oven until golden around the edges, about 12 to 15 minutes. Let cool 10 minutes on baking sheet before removing to cooling rack to cool completely. Store in an airtight container up to 3 days.
