REAL DEAL PRALINES

Even though i grew up eating these I never can seem to make them! I can make gourmet dinners and desserts but i can't make pralines or bread!! But i got this recipe from the justin wilson website and it's as authentic as you can get. Good luck!!

Real Deal Pralines image

Steps:

  • Mix sugar, corn syrup, condensed milk, and water thoroughly. Cook over a low fire until the soft-boil stage, it'll say on your candy thermometer. Remove from heat.
  • Add butter, vanilla, and pecans. Beat until the mixture holds its shape. Spoon onto buttered wax paper, and allow to cool. Enjoy!

Steps:

  • Line a baking sheet with aluminum foil.
  • In large saucepan over medium heat, combine pecans, sugar, butter, brown sugar, milk and vanilla. Heat to between 234 and 240 degrees F (112 to 116 degrees C), or until a small amount of syrup dropped into cold water forms a soft ball that flattens when removed from the water and placed on a flat surface.
  • Drop by spoonfuls onto prepared baking sheet. Let cool completely.

PRALINES

This deeply Southern and unapologetically sweet candy recipe came to the Times by way of Julia Reed in an article about making edible holiday gifts. Her friend, Mary Cooper "can do anything: she canes chairs, she's an excellent gardener, she even makes her own cheese. And at Christmas she always makes me the best pecan pralines I have ever tasted." Ms. Cooper was kind enough to share her recipe with Ms. Reed who, in turn, shared it with us. As you spoon the warm praline mixture onto the parchment paper, work quickly. It dries in a snap. Some have been known to sprinkle the tops of the wet pralines with flaky sea salt before they harden.

Steps:

  • In a deep, 2-quart heavy saucepan, combine the brown sugar, granulated sugar and milk and cook over medium heat, stirring constantly until the sugars melt. Cook, stirring frequently, to keep mixture from bubbling over, until a candy thermometer reads 228 degrees. Add the pecans and butter and stir until butter melts. Continue cooking until thermometer reaches 232 degrees. Remove from heat and stir in the vanilla. Allow to cool, stirring occasionally, until the mixture loses some of its gloss.
  • Spoon the praline mixture onto parchment paper, forming 24 thin patties, each about 2 inches in diameter. Let cool at least a half hour. Wrap individually in wax-paper squares.

Megan's Pecan Pralines image

Steps:

  • Line 2 large baking sheets with wax paper.
  • In a large heavy pot, stir together the sugar and 1 cup evaporated milk. Attach a candy thermometer to the pot and place it over moderately low heat. Cook, stirring occasionally-use a pastry brush dipped in cold water to wash down any sugar crystals clinging to the side of the pot-until the sugar is dissolved, 2 to 3 minutes. Raise the heat to moderate and cook the mixture, undisturbed, until the thermometer registers 238°F (soft-ball stage), 12 to 15 minutes. Remove the pan from the heat and let the mixture cool, undisturbed, until the thermometer registers 220°F, about 6 minutes.
  • Using a wooden spoon, stir in the vanilla and butter. Continue stirring until the mixture is creamy and thick, 1 to 2 minutes. Stir in the pecan pieces. Working quickly, use a wooden spoon to scoop up heaping tablespoons of the praline mixture and a small metal spoon to scrape the mixture onto the prepared baking sheets, leaving about 1 inch between pralines. If the mixture starts to crystallize and harden, add 1 to 2 tablespoons evaporated milk and place over low heat, stirring, until the mixture softens then continue dropping on prepared baking sheets. Let the pralines harden at room temperature. DO AHEAD: Pralines can be made ahead, wrapped individually in waxed paper, and stored in an airtight container in a cool place, up to 1 week.

The South's Finest Pralines image

Steps:

  • 1. In a 2 quart sauce pan, put the sugars, salt, corn syrup, milk, and butter in. Over medium heat, stir mixture constantly with a wooden spoon until sugars have dissolved and mixture comes to a boil.
  • 2. Continue to cook to a soft ball stage, approximately 236 degrees F on a candy thermometer.
  • 3. Remove from heat and allow it to cool for 8 minutes.
  • 4. Add the vanilla and nuts, and beat with a spoon by hand for approximately 2 minutes or until candy is slightly thick and begins to lose its gloss.
  • 5. Quickly drop heaping tablespoons onto parchment paper. If the candy becomes stiff, add a few drops of hot water.
